These Chocolate Banana & Oatmeal Muffins taste super naughty, but are good enough to eat for breakfast ,lunch AND Dinner

1 cup banana (mashed (3 small bananas))
½ cup peanut butter
2 eggs
1/3 cup maple syrup
¼ cup plain yogurt
1 tsp vanilla extract
1 cup oat flour
½ cup cacao (or unsweetened cocoa)
¾ tsp baking powder
1/8 tsp salt (just a pinch)

Steps:

  • Preheat oven to 350F. Line a 12 hole muffin tray with muffin liners.
  • In a large mixing bowl: Mix together mashed bananas,peanut butter, eggs, maple syrup, vanilla and yogurt.
  • Add in oat flour, cacoa, baking powder and salt. Whisk until smooth.
  • Spoon into prepped muffin tray, try to get roughly same amount in each hole.
  • Add a couple dark choc chips to the top of each muffin (this step is optional)
  • Bake for 20 - 25 minutes. Transfer to a wire rack to cool.

1 egg
¾ cup milk
⅓ cup vegetable oil

1 cup mashed bananas

Steps:

  • Combine flour, oats, sugar, baking powder, soda, and salt.
  • In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.
  • Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes.

3 ripe bananas, mashed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line 12 muffin cups with papers liners.

¾ cups old fashioned rolled oats
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon cinnamon
½ teaspoon salt
2 large eggs
½ cup sugar
½ cup brown sugar
½ cup canola oil, (or another flavorless oil, or even coconut oil)
2 teaspoons vanilla extract
1 cup mashed bananas, (about 2 large or 3 medium)
1 cup chocolate chips, ((milk, dark, a mix of both, whatever you like!))

Steps:

  • Preheat the oven to 375 degrees F. Line a muffin tin with liners.
  • Whisk together the flour, oats, baking soda, powder, salt and cinnamon in a bowl.
  • In a large bowl, whisk together the eggs and sugars until combined. Whisk in the oil and vanilla extract until combined. Whisk in the mashed bananas.
  • Stir in the dry ingredients with a spoon until just combined - do not overmix. Stir in the chocolate chips.
  • Fill the muffin tins about ¾ of the way full. Bake the muffins for 18 to 20 minutes, or until set in the center. Let cool before serving!

140 g (1 cup and 3 tablespoons) whole wheat flour
100 g (1 cup) rolled oats
1 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
1/4 tsp salt (optional)
3 medium ripe bananas (335 grams peeled)
75 g (1/3 cup) unsalted butter, melted
60 g (1/4 cup) milk
105 g (1/2 cup) granulated sugar
2 large eggs
1 tsp vanilla extract
90 g (1/2 cup) chocolate chips

Steps:

  • Preheat the oven to 350°F(177°C). Line 12 non-stick standard paper liners into regular size 12 cup-cupcake/muffin pan and set aside.
  • Place whole wheat flour, oatmeal, cinnamon, baking powder, baking soda and salt if using in a large bowl and stir. Set aside.
  • Slice the bananas into a medium bowl and mash with a fork.
  • Stir in the melted butter, milk and sugar.
  • Mix in the egg and then the vanilla.
  • Add the wet ingredient mixture into dry ingredient mixture. Stir until combined.
  • Reserve 1 tablespoon of chocolate chips and add the rest to the mixture and stir with a spoon/spatula.

⅛ Cup of Nature's Hollow Honey Substitute

Lily's Dark Chocolate Baking Chips (13 in each muffin cup)

Steps:

  • Spray a muffin tin with cooking spray. Set aside.
  • Preheat oven to 350 degrees.
  • Pulse oats in a blender until finely ground.
  • In a bowl add the oats and all ingredients (except the Lily's Chocolate Chips) and mix well.
  • Divide mixture into 12 muffin wells. Place 13 Lily's Chocolate Chips into each muffin well.
  • Bake for 15 minutes. If after inserting a toothpick into the center of the muffin comes up clean, your muffins are done. If batter is on the toothpick, reduce the temperature to 325 degrees and continue baking at 2 minute intervals.
