Delicious, healthier, grab-and-go snack combines oats, pumpkin, and banana with autumn spices and Greek yogurt.

1 cup oat flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ground ginger
1 teaspoon ground nutmeg
½ teaspoon ground cloves
1 stick butter, softened
½ cup brown sugar
¼ cup white sugar
2 eggs
½ cup vanilla Greek yogurt
1 teaspoon vanilla extract
1 cup pumpkin puree
¾ cup mashed ripe bananas
½ cup semisweet chocolate chips
½ cup chopped toasted pecans
1 cup vanilla-coconut granola
¾ cup semisweet chocolate chips
½ cup chopped toasted pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine flour, oat flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves in a bowl.
  • Combine butter, brown sugar, and white sugar in a separate bowl and mix well using an electric mixer. Add eggs, yogurt, and vanilla extract and mix again on medium speed. Add pumpkin puree and mashed bananas and blend. Fold in chocolate chips and pecans. Stir flour mixture into batter.
  • Combine granola, chocolate chips, and pecans in a bowl and set topping aside.
  • Spoon batter into the prepared muffin cups, filling each 2/3 full. Sprinkle with topping.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 25 to 30 minutes.

2 eggs
⅓ cup maple syrup
¼ teaspoon salt
2 teaspoons baking powder
2 teaspoons vanilla extract
1 tablespoon cinnamon
1 cup greek yogurt
3 cups oats
1 cup whole milk
topping of your choice, as desired

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • In a medium bowl, mash bananas. Mix eggs, maple syrup, salt, baking powder, vanilla extract, cinnamon, and Greek yogurt into mixture.
  • Add oats and milk, and mix. Let the mixture sit for a few minutes, so the oats soak up the liquid and the consistency is like oatmeal.
  • Line muffin tins with muffin liners. Pour the mixture into each muffin cup about ¾ full. Add your preferred toppings and gently push your toppings into each muffin cup.
  • Bake for 30 minutes.
  • Let cool for 5 minutes before eating. Once cool, you can also store in an airtight container or freeze in a storage bag.
  • Enjoy!

3/4 cup whole wheat flour
2/3 cup brown sugar
1 1/2 teaspoons baking powder

2 tablespoons ground flax seeds
1 cup rolled old fashioned oats
1 1/2 cups mashed ripe bananas
4 ounces blueberry Greek yogurt
2 eggs, beaten
1/4 cup canola oil
2 teaspoons vanilla

Steps:

  • Preheat oven to 350 degrees.
  • Combine all dry ingredients and set aside.
  • In a separate bowl, combine all wet ingredients.
  • Slowly mix in the dry mixture until well combined.
  • Spray your muffin pans with nonstick spray.
  • Fill each muffin cup 3/4 full and sprinkle with oats.
  • Bake at 350 for 18-20 minutes, depending on how moist you like your muffins.

  • Place the all ingredients but the mix-ins in a blender or the bowl of a food processor fitted with the steel blade: oats, bananas, eggs, Greek yogurt, honey, baking powder, baking soda, vanilla extract, and salt. Blend or process on high, stopping to scrape down and stir the ingredients once or twice as needed, until the batter is smooth and the oats have broken down almost completely, about 3 minutes. By hand, stir in the mix-ins. If the batter is warm from the appliance’s motor, the chocolate chips may melt and swirl as they are stirred. If this bothers you, let the batter cool for 10 minutes before adding them.
  • Divide the batter among the prepared muffin cups, filling each no more than three-quarters of the way to the top. Sprinkle with additional chocolate chips or nuts as desired.
