- Preheat oven to 375°. In a bowl, combine the first 6 ingredients; beat in butter until mixture resembles coarse crumbs. Add egg, bananas and oats; mix well. Stir in chips and nuts. , Drop by tablespoonfuls onto greased baking sheets. Bake until golden brown, 13-15 minutes. Cool on wire racks.

- Preheat the oven to 350 degrees. Lightly oil a loaf pan.
- Place the banana into a blender or food processor. Pulse a few times until you get a banana puree. Add the egg, yogurt, oil, and vanilla extract. Pulse a few times to combine. Alternatively, you can mash the banana with a fork and then combine everything with a whisk or an electric mixer.
- In a large bowl, combine the oat bran, flour, coconut sugar, baking powder, baking soda, and salt. Mix well.
- Combine the wet and dry ingredients, stirring only until everything is moistened. Do not overmix.
- Pour the batter into the loaf pan. Bake for 50 minutes to one hour or until the cake tester comes out clean.
