1 ½ cups unbleached all-purpose flour
1 cup rolled oats
½ cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 egg
¾ cup milk
⅓ cup vegetable oil
½ teaspoon vanilla extract
1 cup mashed bananas

Steps:

  • Combine flour, oats, sugar, baking powder, soda, and salt.
  • In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.
  • Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes.

Nonstick cooking spray
2 cups regular rolled oats
¾ cup whole-wheat flour
⅓ cup sugar (see Tip)
1 teaspoon baking powder
¾ teaspoon apple pie spice or ground cinnamon
½ teaspoon baking soda
¼ teaspoon salt
1 cup buttermilk
½ cup refrigerated or frozen egg product, thawed, or 2 eggs, lightly beaten
1 large ripe banana, mashed
2 tablespoons butter, melted
1 teaspoon vanilla
¼ cup regular rolled oats
½ teaspoon apple pie spice or ground cinnamon
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F. Line twelve 2 1/2-inch muffin cups with paper bake cups; coat inside of cups lightly with cooking spray. Set aside. Place the 2 cups oats in a food processor or blender; cover and process or blend until finely ground. Transfer ground oats to a large bowl. Stir in whole-wheat flour, sugar, baking powder, 3/4 teaspoon apple pie spice, baking soda and salt. Make a well in the center of the flour mixture; set aside.
  • In a medium bowl whisk together buttermilk and eggs; whisk in banana, 2 tablespoons melted butter and vanilla. Add buttermilk mixture all at once to flour mixture; stir just until moistened (batter should be lumpy). Spoon batter into prepared muffin cups, filling each about three-fourths full.
  • For topping, in a small bowl stir together 1/4 cup oats and 1/2 teaspoon apple pie spice. Using a pastry blender, cut in 1 Tablespoon butter until mixture resembles coarse crumbs. Sprinkle the oat mixture on top of muffin batter.
  • Bake for 20 to 22 minutes or until a toothpick inserted in centers comes out clean. Cool in muffin cups on a wire rack for 5 minutes. Remove muffins from muffin cups. Serve warm.

1 cup all-purpose flour
2/3 cup granulated sugar
1 1/2 teaspoons baking powder

2 cups ripe bananas, mashed (4-6 bananas)
1/3 cup butter, melted

Steps:

  • Combine first 6 dry ingredients in large bowl.
  • Mix well.
  • Beat egg, banana and melted butter together in small bowl until smooth.
  • Add banana mixture to dry ingredients.
  • Stir just until moistened.
  • Stir in nuts, if desired.

1/2 teaspoon salt
4 overripe bananas
1 cup brown sugar
3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled
2 eggs
1 teaspoon pure vanilla extract
1/2 cup pecans, chopped

Steps:

  • Preheat oven to 375 degrees F and lightly butter 2 muffin tins.
  • In a large bowl, combine the flour, baking soda, and salt; set aside. Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture. With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together like you mean it, for a good 3 minutes. Add the melted butter, eggs, and vanilla and beat well, scraping down the sides of the bowl once or twice. Mix in the dry ingredients just until incorporated. Fold in the nuts and the mashed bananas with a rubber spatula. Spoon the batter into the muffin tins to fill them about halfway. Give them a rap on the counter to get any air bubbles out.
  • Bake until a toothpick stuck in the muffins comes out clean, 18 to 20 minutes. Let cool for a few minutes before turning the muffins out. Serve warm or at room temperature.

1/3 c light brown sugar
1 & 1/2 c old-fashioned rolled oats
1 Tbsp baking powder
1 egg
1 mashed banana
1 c milk
1 Tbsp vegetable oil
1/2 c chopped walnuts

Steps:

  • 1. Spray muffin pan with canola oil (PAM); and preheat oven to 425 degrees.
  • 2. Place dry ingredients in a medium bowl, stir to blend.
  • 3. Combine egg, oil, milk and mashed banana in a small bowl.
  • 4. Add wet ingredients to dry ingredients and stir until combined, and then add walnuts.
  • 5. Using an ice cream scoop, spoon batter into muffin cups.
  • 6. Makes twelve medium muffins. Bake for 20 minutes. Cool five minutes and remove from muffin pan. Serve warm or cool and freeze. May be warmed in microwave in 20-25 seconds for a quick breakfast.
