BANANA-NUT FRENCH TOAST SANDWICHES

Banana-Nut French Toast Sandwiches image

For a heartier take on banana-nut bread, spread a mixture of bananas, brown sugar, and walnuts between slices of golden brioche before battering and frying. Line up the resulting French toast sandwiches on a large platter, and top with the remaining warm banana mixture before serving for brunch.

Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Number Of Ingredients 13

1 1/2 cups walnut halves
6 large eggs
1 1/2 cups heavy cream, half-and-half, or milk
2 tablespoons pure vanilla extract
1/2 teaspoon ground cinnamon
Pinch of ground nutmeg
Pinch of salt
6 ripe but firm bananas, peeled and cut into 1/4-inch rounds
1 1/2 cups packed dark-brown sugar
12 slices of bread, (1/2 inch thick), such as brioche or challah, preferably day old
8 tablespoons (1 stick) unsalted butter
4 tablespoons vegetable oil
Pure maple syrup, for serving (optional)

Steps:

  • Preheat oven to 350 degrees. Place walnut halves on a rimmed baking sheet, and toast until lightly browned and fragrant, about 10 minutes. Set aside. When cool, chop walnuts coarsely.
  • Whisk together eggs, cream, vanilla extract, cinnamon, nutmeg, and salt in a medium bowl, and set aside. Combine bananas, dark-brown sugar, and toasted walnuts in another bowl. Lay out 6 slices of bread on work surface. Top each slice with 1/3 cup of the banana mixture. Top with remaining bread slices; press gently to seal the sandwiches.
  • Place sandwiches in a shallow baking dish (or two dishes) large enough to hold them in a single layer. Pour egg mixture over bread, and soak 10 minutes. Carefully turn sandwiches over, and soak until bread is soaked through, about 10 minutes more.
  • Reduce oven temperature to 250 degrees. Place a wire rack on a baking sheet; set aside. Heat remaining banana mixture in a small skillet over medium-low heat until sugar is melted and bananas are soft and slightly translucent, about 3 minutes. Add 4 tablespoons butter, and stir to combine; keep warm.
  • Heat 2 tablespoons butter and 2 tablespoons vegetable oil in a large skillet over medium heat. Fry half of the sandwiches until golden brown, 2 to 3 minutes per side. Transfer to wire rack, and place in oven while cooking remaining sandwiches. Wipe out skillet, and repeat with remaining butter, oil, and bread. Keep in oven until ready to serve. Cut into triangles, and serve with warm banana mixture and maple syrup, if desired.

Categories     main-dish

Time 1h10m

Yield 6 servings

Number Of Ingredients 31

1/4 cup heavy cream
1/4 cup milk
1/4 teaspoon grated nutmeg
4 eggs
1 loaf store-bought or homemade banana bread, recipe follows, sliced into 1-inch-thick slices
3 tablespoons butter
3 bananas
1 cup sugar
Peanut Butter Mousse, recipe follows
2 ounces dark chocolate, grated, for garnish
Cinnamon Maple Syrup, recipe follows
Nonstick cooking spray, for the pan
1 cup sugar
7 ounces (14 tablespoons) butter, at room temperature
2 eggs, at room temperature
1 cup mashed banana
1/2 cup buttermilk, at room temperature
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
Pinch ground cloves
2 1/4 cups heavy cream
9 ounces cream cheese, at room temperature
8 ounces peanut butter
1/2 cup sugar
1/2 teaspoon salt
1/2 teaspoon vanilla
3 cinnamon sticks
2 cups maple syrup

Steps:

  • Preheat the oven to 200 degrees F.
  • Whisk together the cream, milk, nutmeg and eggs in a bowl. Working in batches, soak the banana bread slices in the mixture.
  • Heat a skillet or griddle over medium heat with a bit of the butter. Cook a batch of the banana bread slices until browned, 4 to 5 minutes per side. Transfer to the oven to keep warm. Cook the remaining slices, adding more butter as needed.
  • Cut the bananas into oblique slices, place on a baking sheet and coat with the sugar. Brulee them with a kitchen torch or under a broiler (or leave raw if you do not have a torch or broiler).
  • Arrange the French toast on plates, top with a quenelle (oval-shaped scoop) of the Peanut Butter Mousse, spread the bruleed bananas about, grate chocolate over the top of it all and serve with a side of the warm Cinnamon Maple Syrup.
  • Position an oven rack in the center of the oven and preheat to 350 degrees F. Spray an 8-by-4-inch loaf pan with nonstick spray and line the bottom of the pan with parchment paper.
  • In a stand mixer with the paddle attachment, cream the sugar and butter until light and fluffy, about 5 minutes. Add the eggs one at a time, scraping down the sides of the bowl between additions.
  • Combine the banana, buttermilk and vanilla in a bowl. Sift together the flour, baking soda, cinnamon, salt and cloves in a second bowl. Add half of the flour mixture to the butter mixture and paddle just to combine. Scrape down the sides and then add the buttermilk and banana mixture. Scrape down again, and add the remaining flour until just combined uniformly.
  • Pour the batter into the prepared loaf pan and bake on the center rack until a toothpick inserted in the loaf comes out clean, 50 minutes to an hour, depending on your oven. Let cool for about 10 minutes, then remove from the pan to cool completely.
  • Whisk the cream to medium peaks and set aside.
  • In a stand mixer with the paddle attachment, cream together the cream cheese, peanut butter, sugar, salt and vanilla, scraping down the sides of the bowl halfway, until the mixture is uniform, about 5 minutes. Fold the whipped cream into the peanut butter mixture, a third at a time. Refrigerate until ready to use.
  • Blacken the cinnamon a bit on a gas burner.
  • Put the maple syrup in a pan and heat until warm. Remove from the heat, add the blackened cinnamon sticks and let steep in the syrup for 20 minutes.

  • (OPTIONAL) TO KEEP FRENCH TOAST WARM: Heat oven to Warm or 200F/93C if you want to keep your first batch warm while cooking the next batch. I use the microwave instead.
  • MAKE EGG-BANANA MIXTURE: Place eggs, milk, banana and vanilla in a large bowl - big enough to dip your bread into (adding any other optional add-ins you like). Use an immersion blender to blend until frothy, about 30 seconds. Alternatively, blend in a blender, food processor or by hand.
  • PAN FRY BANANA FRENCH TOAST: Heat large non stick skillet to medium high. Add 1 tsp butter (or oil) and spread it around the surface of the pan. When bubbling, dip bread into egg-banana mixture, one piece at a time, to coat well. Place in pan. Continue with as many pieces as will fit in one pan without over crowding. Pan fry for 2-3 minutes per side or until golden brown. Transfer to oven on a pan to keep warm if desired. Skip this and warm up in the microwave for 45 seconds before serving if preferred. Repeat with remaining slices. Serve with your favorite toppings.
