BANANA BANANA BREAD
Why compromise the banana flavor? This banana bread is moist and delicious with loads of banana flavor! Friends and family love my recipe and say it's by far the best! It's wonderful toasted!! Enjoy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
- In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
- Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

BANANA MOCHI BREAD
A moist and delicious island style banana bread. It is also gluten-free as we are using mochiko in the recipe. Mochiko is a japanese sweet rice flour.

Steps:
- 1. Combine first six ingredients in a large mixing bowl. Separately mix oil and vanilla and add to dry ingredients.
- 2. Add eggs and mix together until batter is well blended. Stir in bananas and nuts.
- 3. Pour into 4 greased loaf pans (8 1/2 x 4 1/2 inches). Let batter sit for about 5 minutes before putting it in the oven.
- 4. Bake at 350 degrees for 1 hour, do a toothpick test, if it comes out clean, it is done.
- 5. Remove from oven onto a wire rack to cool.

- Preheat the oven to 350˚F (177˚C). Spray the inside and the top of a muffin pan with nonstick spray really well. Set aside.
- In a large mixing bowl, whisk together melted butter, sugar and vanilla extract. Add the beaten eggs and whisk until combined. Pour in the dry ingredients. Using a spatula, stir until incorporated. Pour in the evaporated milk and coconut milk, whisk the mixture until smooth. Smash up half of the banana with a fork into a puree. Add to the batter and whisk until combined.
- Fill each muffin tin half full with batter. Cut the rest of the banana into ¼-inch slices. Place 1½ slices of banana in each tin on top of the batter. Fill the muffin tins with more batter until just below the rim. Make sure the banana is well covered. Hold the muffin tray about 2 inches above the counter and drop a few times to help remove any air bubbles. Sprinkles with desired amount of black sesame seeds.

- Mix the all-purpose flour, sweet rice flour, salt, granulated sugar, baking powder, baking soda, and cinnamon in a medium bowl until fully combined. Set aside.
- In a separate bowl, mash the 2 overripe bananas and then mix in the egg, whole milk, condensed milk, coconut extract, and melted butter until fully combined.
- Slowly pour the wet mixture into the dry mixture while continuously mixing. Mix until the batter is smooth.
- Lightly spray your waffle iron with cooking spray and pour 1/3 cup of batter in each section. (I like to go just under 1/3 cup for my waffle iron so my waffles have a sort of imperfect, organic shape)
