Here's what you need: silken tofu, maple syrup, bananas, fresh mint, dark baker's chocolate, cocoa powder, soy milk

1 lb silken tofu
¼ cup maple syrup
2 bananas, sliced
⅓ cup fresh mint, packed
1 oz dark baker's chocolate, roughly chopped
1 teaspoon cocoa powder
1 cup soy milk, or other milk substitute

Steps:

  • Add tofu and maple syrup to a mixing bowl and whisk together until smooth and no large lumps are present.
  • Transfer tofu mixture to ice tray and using a rubber spatula to evenly spread the mixture into each of the cube slots.
  • Freeze completely.
  • Place bananas, mint, chocolate, 4 tofu cubes, cocoa powder, and milk in a blender, making sure that the cubs sit on top of the other ingredients.
  • Blend until smooth.
  • Serve immediately.
  • Enjoy!

An ultra dreamy chocolate chip mint smoothie-- the sweetness and richness of the coconut milk allows the base of this smoothie to be mostly spinach, while still being very indulgent! A healthy green smoothie that tastes like a milkshake.

1/2 cup coconut milk (full fat, canned)
1/2 cup Greek yogurt (or plain greek yogurt)
2 bananas (chopped and frozen)
4 cups spinach (fresh or frozen)
6 ice cubes
20 grams whey protein (unsweetened/unflavored - or use your favorite protein powder)
1 teaspoon vanilla
1/2-1 teaspoon peppermint extract (peppermint extracts vary in intensity - so start small!)
2 tablespoons 85% dark chocolate (chopped, or sub dark chocolate chips)

Steps:

  • Add the liquid ingredients first, followed by the rest of the smoothie ingredients, leaving out the chocolate chips. Process until very smooth and creamy, and the spinach is fully incorporated.
  • Add the chocolate, and pulse 5-6 times until the chocolate is broken up, but still in chunks.
  • Top with more chocolate chips, and enjoy while it's thick.
