BANANA-MAPLE MATZO BREI
Think outside the matzo box and try this tasty banana-maple option, delicious for breakfast or any other time of day.

- Soak matzos in cold water for 5 minutes. Drain in a colander. Mash banana with maple syrup using a fork. Whisk in oil, egg, and salt. Gently stir in matzos. Heat 1 tablespoon oil in a medium skillet over medium heat. Spread matzo mixture evenly in skillet, pressing gently. Cook until underside is golden, about 4 minutes. Flip using a spatula (mixture will break up). Cook until underside is golden, about 5 minutes. Transfer to plates. Top with banana slices, and drizzle with maple syrup.

Matzo brei (pronounced like fry) is one of the few dishes from my childhood that I'll never outgrow. The dampened shards of matzo mixed with beaten eggs and milk and then cooked in butter will never go out of style. - Coarsely crumble matzo crackers into a fine mesh sieve set over a large bowl; reserve crumbs in bowl. Place sieve under cold running water until matzo is softened, about 15 seconds; drain. Stir softened matzo, eggs, milk, crumbs and salt until combined. , Melt 3 tablespoons butter in a large skillet over medium-high heat; add half of the matzo mixture. Cook, without stirring, until bottom is golden brown, 3-4 minutes; flip. Cook until bottom is golden brown and eggs are cooked through, 3-4 minutes. Transfer to platter. Repeat with remaining butter and matzo mixture. Serve hot with maple syrup if desired.

- Start heating a 7- or 8-inch nonstick skillet right away, as it’s best for it to be very hot when the pouring in the matzo mixture.
- Combine the crumbled matzos and quinoa flakes or garbanzo flour and a pinch of salt in a heatproof bowl. Pour 1 cup boiling water over them and stir together. Let stand for 2 to 3 minutes.
- Melt the vegan butter in the skillet. Once it’s sizzling, pour in the matzo mixture and pat in evenly. Cover and cook over medium-high until the bottom is golden brown and crisp, 6 to 8 minutes.
- Slide the matzo brei out onto a plate about the same size as the skillet. Holding the bottom of the plate with one hand, invert the skillet over the plate with the other and then flip right side up quickly. Cook the other side of the matzo brei until golden brown, about 5 to 7 minutes longer.
