Peanut Butter Banana Fritters Drizzled with Chocolate Sauce image

2 cups flour
2 tablespoons confectioners' sugar
2 teaspoons baking powder
Pinch sea salt
Small pinch baking soda
3 ripe bananas, mashed
1/2 cup smooth organic peanut butter
2/3 cup milk
1 egg
Peanut or Canola oil, for deep frying
1/2 cup dark chocolate chunks
1/2 cup whipping cream
1 cup water, for double boiler

Steps:

  • To make the fritters: Combine the flour, sugar, and baking powder in a bowl and mix. Add the bananas, peanut butter, milk, and egg and whisk until the consistency is such that it can be balled up in a spoon. In a medium sauce pan, heat the peanut oil to 375 degrees F. Using a teaspoon, delicately spoon the peanut-butter-banana batter into the oil, a few balls at a time and deep fry until they fluff up and become crispy and golden brown, about 5 minutes. Strain on wire rack.
  • To make the chocolate sauce: In a pot, bring a cup of water to a simmer. Add a large metal bowl over top of the pot. In the metal bowl, add the chocolate chunks and whipping cream, then whisk until it melts together.
  • Generously drizzle the chocolate sauce over the fritters and serve.

1 cup roasted (salted peanuts)
1 1/2 cup granulated sugar
2 teaspoons ground cinnamon
8 ounces semi-sweet chocolate (chopped (use dark or vegan chocolate for vegan version))
1/2 cup full-fat canned coconut milk
1/2 teaspoon ancho chili powder (may leave out if desired)
1/4 teaspoon cinnamon
1 teaspoon vanilla extract
1 cup flour (use your favorite gluten flour if needed)
1/3 cup rice flour (can sub with regular flour)
2 teaspoons baking powder
1/2 cup canned coconut milk
1 cup Mexican beer
6 firm (but ripe bananas)
zest of 2 limes + more for serving (optional)
canola oil (for frying)

Steps:

  • Add the peanuts and 1/2 cup sugar to a food processor or blender. Blend until finely ground and the peanut become powder like. Be careful not to blend the peanuts into peanut butter. Stir (meaning do not blend, just use a spoon) in the remaining cup of sugar and the cinnamon. Transfer to a jar. The sugar can be kept at room temperature for up to 1 week.
  • Add the coconut milk to a small sauce pan and bring to a low boil. Remove from heat and stir in the chocolate until melted and smooth. Stir in the ancho chili powder, cinnamon and vanilla. To rewarm the sauce before serving, just place over low heat for about minutes. Just be careful not to burn it.
  • In shallow, but wide bowl, combine the flour, rice flour and baking powder. Stir in the coconut milk and beer. If the batter seems thick, just add more beer to thin. It should be thick, but pourable.
  • Heat a large pot of oil over medium heat. Stick a bamboo skewer through the middle of each banana. Dip the bananas one at a time through the batter until evenly coated, then carefully lower into the hot oil. Fry for 2-3 minutes on each side, until golden crisp. Using a slotted spoon, remove the fritters and drain on to paper towels. Repeat with the remaining bananas and then sprinkle the fritters with lime zest if desired.
  • When ready to serve, dust the fritters with peanut sugar and serve with warm chocolate sauce and lime wedges.

4 bananas (halved) or 8 nino/baby bananas
2 eggs
1/2 cup milk
2 cups bread crumbs (recommended: Japanese Panko)
Vegetable oil, for frying
Confectioners' sugar for dusting
Chocolate peanut butter dipping sauce, recipe follows
1 cup milk
8 ounces bittersweet chocolate, chopped
1/8 teaspoon vanilla extract
4 tablespoons peanut butter

Steps:

  • Skewer the bananas with popsicle sticks. Whisk the egg and then whisk in the milk. Dip each banana in the egg then toss in the bread crumbs to coat. Repeat the process to create a second coating. Heat oil to 365 degrees and drop in the bananas, moving them around to brown evenly on all sides. Place on paper towels to drain.
  • Dipping Sauce: Scald milk in a medium saucepan and transfer to a bowl containing chopped chocolate, gently stirring until chocolate is completely melted. Add vanilla and whisk in peanut butter until smooth.
  • Dust the banana fritters with confectioners' sugar. Drizzle chocolate peanut butter sauce over bananas or use as a dipping sauce.

1 cup sifted flour
Pinch kosher salt
2 tablespoons sugar
Confectioners' sugar, for dredging
4 bananas, halved and split lengthwise
Peanut or vegetable oil, for deep frying
Chocolate sauce, recipe follows
Mint leaves, for garnish
6 ounces semisweet chocolate, chopped
4 tablespoons water
1 tablespoon spiced rum

Steps:

  • In a bowl, whisk together the egg yolks, milk, and butter. Add the flour, salt, and the sugar to the egg mixture, combine well, beat until mixture is smooth, and allow to rest in the refrigerator for about 2 hours.
  • In a dry clean bowl whip the egg whites until stiff, but not dry. Fold the egg whites into the batter with a rubber spatula.
  • In a large heavy-bottom saucepan, pour enough oil to fill the pan about a third of the way, about 3 to 5 inches.
  • Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. dredge the banana pieces in the confectioners' sugar then dip the pieces into the batter. Deep-fry the bananas in batches until golden brown, about 3 to 4 minutes.
  • Drizzle with chocolate sauce. Garnish with mint leaves.
  • In a heavy bottom saucepan, put chocolate and water. Over low heat, melt the chocolate, while stirring. Boil the mixture for 1 minute. Remove from the heat and add the rum.
