Categories     Cookies & Sweet Treats

Time 8m

Number Of Ingredients 7

3/4 Cup plus 2 Tablespoons or 100g All Purpose Flour
2 teaspoons baking powder
pinch of salt
1/4 Pint or 150 ml water
1 Tablespoon vegetable oil
1 Banana
Sugar and or shredded coconut for coating

Steps:

  • In a bowl, add the flour, baking powder and salt.
  • Add the water and oil and combine with a hand whisk. The consistency should be thick, like heavy cream and be able to coat a spoon. If it is too thick, add a drop more water, too thin, add a little more flour. Set aside.
  • Heat a pan with vegetable oil until it reaches 180 C or 350 F. Make sure you do not over fill the pan with oil. I use a small saucepan and cook in batches, filling the pan 1/3rd deep with cooking oil.
  • Whilst the oil is heating up. peel the banana, cut in half and then slice length ways in half so you have 4 pieces. Dip each piece in the batter so it is fully coated and carefully place in the pan, cooking both sides until golden brown. ** To tell if the oil is hot enough, drop a tiny bit of batter, the size of a pea in to the oil. If it sizzles and floats to the top immediately, the oil is hot enough.
  • Place the fritters on some kitchen paper then dip into a bowl with sugar to coat.
  • Serve immediately as they are or with some syrup drizzled over the top or a blob of ice cream!

PAN FRIED HONEY BANANAS

Pan Fried Honey Bananas image

These Pan Fried Bananas are caramelized in honey and cinnamon for a simple and delicious treat!

Provided by Joanne Ozug

Categories     Dessert

Time 10m

Number Of Ingredients 9

2 ripe bananas
1 tbsp oil or butter*
2 tbsp honey
1/2 tsp ground cinnamon
1/8 tsp salt
On Whole Wheat Pancakes
With Homemade Vanilla Ice Cream
As a topping for Fruit Pizza
In a sandwich with peanut butter and marshmallow creme

Steps:

  • Remove the peels from the bananas and slice them 1/2" inch thick.
  • Set a nonstick skillet over medium to medium high heat** and add the oil or butter, honey, cinnamon, and salt. Stir to combine.
  • Add the banana slices, and fry for 2-3 minutes on each side, until golden and caramelized. Be sure to watch the heat and turn it down if it browns too quickly. You want enough heat to caramelize and brown the slices, but you don't want them to burn.
  • Once the bananas are cooked you can enjoy them as is, or with marshmallow creme and peanut butter in a sandwich, with Bananas Foster French Toast, in oatmeal or yogurt, over ice cream, and more. Enjoy!

Yield Makes 6 servings

Number Of Ingredients 12

1 cup warm water (105°F to 115°F)
1 large egg
2 tablespoons vegetable oil
1 teaspoon dry yeast
1 cup all purpose flour
1/2 cup sweetened shredded coconut
1 tablespoon sesame seeds
1/4 teaspoon ground nutmeg
4 large bananas
Vegetable oil (for frying)
Honey
Vanilla ice cream

Steps:

  • Whisk 1 cup warm water, egg, and 2 tablespoons oil in large bowl to blend. Add yeast, then flour, whisking until smooth. Cover and let stand at room temperature until batter has almost doubled in volume, about 2 hours. Stir in coconut, sesame seeds, and nutmeg. Cut bananas on deep diagonal into eighteen 1/2-inch-thick slices. (Reserve any remaining bananas for another use.) Add banana slices to batter; stir gently to coat. (Can be prepared up to 1 day ahead. Cover and chill.)
  • Pour vegetable oil into heavy medium saucepan to depth of 1 1/2 inches. Attach deep-fry thermometer and heat oil to 350°F. Insert fork into 1 banana slice and transfer to oil. Repeat with 5 banana slices. Fry until crisp and golden on all sides, about 3 minutes. Using slotted spoon, transfer fritters to paper-towel-lined plate to drain. Repeat with remaining bananas in 2 more batches. Divide fritters among 6 plates. Drizzle with honey and serve warm with ice cream.

  • In a small mixing bowl, mix together all ingredients for the batter (Rice flour, All purpose flour or maida, salt, and turmeric) with approximately half a cup of water. Pour in the water a little at a time and mix it all in using a wire whisk, making sure there are no lumps.
  • Pour oil in a deep frying pan and heat over medium heat on stove top. There should be enough oil to submerge the banana fritters and there should be enough space(in your pan) for the oil to rise when you add the banana pieces.
  • Typically, the whole banana is slit length wise, batter dipped and fried. To make it easy to handle, cut the bananas into half, horizontally. Now, slice each half into three pieces lengthwise. This would give you 6 pieces from each of the banana. You can do this step while you are waiting for the oil to heat up.
  • When the oil is sufficiently hot (see Recipe Notes), dip the banana slice in the batter, and deep fry. You can add as many pieces as your deep frying pan will hold Make sure that you can flip the pieces comfortably.
