BANANA FRITTERS WITH PEANUT CINNAMON SUGAR + MEXICAN CHOCOLATE SAUCE.
Steps:
- Add the peanuts and 1/2 cup sugar to a food processor or blender. Blend until finely ground and the peanut become powder like. Be careful not to blend the peanuts into peanut butter. Stir (meaning do not blend, just use a spoon) in the remaining cup of sugar and the cinnamon. Transfer to a jar. The sugar can be kept at room temperature for up to 1 week.
- Add the coconut milk to a small sauce pan and bring to a low boil. Remove from heat and stir in the chocolate until melted and smooth. Stir in the ancho chili powder, cinnamon and vanilla. To rewarm the sauce before serving, just place over low heat for about minutes. Just be careful not to burn it.
- In shallow, but wide bowl, combine the flour, rice flour and baking powder. Stir in the coconut milk and beer. If the batter seems thick, just add more beer to thin. It should be thick, but pourable.
- Heat a large pot of oil over medium heat. Stick a bamboo skewer through the middle of each banana. Dip the bananas one at a time through the batter until evenly coated, then carefully lower into the hot oil. Fry for 2-3 minutes on each side, until golden crisp. Using a slotted spoon, remove the fritters and drain on to paper towels. Repeat with the remaining bananas and then sprinkle the fritters with lime zest if desired.
- When ready to serve, dust the fritters with peanut sugar and serve with warm chocolate sauce and lime wedges.

- In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
- Heat the oil in a large skillet to 365 degrees F (180 degrees C).

- Get out and measure all of your ingredients.
- Slice each banana into approximately 5 or 6 chunks.
- Beat together egg and milk until well combined, set aside.
- On a large plate, combine crumbs, sugar and cinnamon.
- Spread the mixture around until full blended. Set aside.
- Cover each banana chunk with flour. Dip each chunk into the egg mixture. Bananas should be fully covered but not dripping.
- Coat in crumb mixture until fully covered.
- Pile on platter to cook.
- Place each fritter in an air fryer. Make sure they do not touch. Cook at 250 degrees for 10 minutes, flipping at midway point. I usually carefully shake the basket until adjusted.
- When cooking time is complete, remove from the air fryer and serve immediately.
- Serve warm with chocolate sauce, caramel, honey, cool whip or whipped cream.
- Enjoy every bite!

The description to the recipe states as follows: " The Koran says that the fatal fruit in the Garden of Eden was a banana, not an apple. - Sift together the flour, baking powder, salt and sugar.
- Combine the egg, milk and melted shortening; add the liquids to the dry ingredients and mix until smooth.
- This will make a very stiff batter, but it will remain refreshingly crisp for some time after it's been cooked.
- Cut each of the bananas into 3 chunks, dust with flour and coat with the fritter batter.
- Fry in hot deep oil (375 F) until golden brown, turning often.
- Drain on paper towels.
- To Make Brandy Sauce:.
- Measure the sugar, cornstarch and salt into a saucepan.
- Gradually add the boiling water, stirring constantly.
- Simmer over low heat for about 5 minutes, or until clear and thickened.
- Remove from the heat and stir in butter, brandy and nutmeg.
- Serve warm over banana fritters.

- In a bowl, whisk together the egg yolks, milk, and butter. Add the flour, salt, and the sugar to the egg mixture, combine well, beat until mixture is smooth, and allow to rest in the refrigerator for about 2 hours.
- In a dry clean bowl whip the egg whites until stiff, but not dry. Fold the egg whites into the batter with a rubber spatula.
- In a large heavy-bottom saucepan, pour enough oil to fill the pan about a third of the way, about 3 to 5 inches.
- Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. dredge the banana pieces in the confectioners' sugar then dip the pieces into the batter. Deep-fry the bananas in batches until golden brown, about 3 to 4 minutes.
- Drizzle with chocolate sauce. Garnish with mint leaves.
- In a heavy bottom saucepan, put chocolate and water. Over low heat, melt the chocolate, while stirring. Boil the mixture for 1 minute. Remove from the heat and add the rum.

- In a bowl, add the flour, baking powder and salt.
- Add the water and oil and combine with a hand whisk. The consistency should be thick, like heavy cream and be able to coat a spoon. If it is too thick, add a drop more water, too thin, add a little more flour. Set aside.
- Heat a pan with vegetable oil until it reaches 180 C or 350 F. Make sure you do not over fill the pan with oil. I use a small saucepan and cook in batches, filling the pan 1/3rd deep with cooking oil.
- Whilst the oil is heating up. peel the banana, cut in half and then slice length ways in half so you have 4 pieces. Dip each piece in the batter so it is fully coated and carefully place in the pan, cooking both sides until golden brown. ** To tell if the oil is hot enough, drop a tiny bit of batter, the size of a pea in to the oil. If it sizzles and floats to the top immediately, the oil is hot enough.
- Place the fritters on some kitchen paper then dip into a bowl with sugar to coat.
- Serve immediately as they are or with some syrup drizzled over the top or a blob of ice cream!

- To make the fritters: Combine the flour, sugar, and baking powder in a bowl and mix. Add the bananas, peanut butter, milk, and egg and whisk until the consistency is such that it can be balled up in a spoon. In a medium sauce pan, heat the peanut oil to 375 degrees F. Using a teaspoon, delicately spoon the peanut-butter-banana batter into the oil, a few balls at a time and deep fry until they fluff up and become crispy and golden brown, about 5 minutes. Strain on wire rack.
