Very Quick, very simple dessert for those last minute need a dessert times. Choose firm bananas. These can be dressed and plated up to look very impressive. Serve with fruit of choice and ice cream.

6 bananas, cut in 1/2 lengthways
1 cup plain flour
1/2 cup cornflour
1 tablespoon baking powder
1 cup milk, approx
extra flour, to coat banana
oil (for frying)

Steps:

  • Coat bananas lightly with flour.
  • Sift the flour, cornflour and baking powder into a bowl.
  • Make a well in centre and gradually add milk. Mix to a smooth consistency similar to thickened cream.
  • Dip bananas into batter and fry in hot oil until golden brown.
  • Coat thinly with sugar. (Optional).

2 ripe bananas
2 tablespoons milk
2 eggs
1 tablespoon margarine, melted
1 cup all-purpose flour
3 tablespoons white sugar
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon ground cinnamon
1 pinch ground nutmeg
1 quart oil for frying
1 cup confectioners' sugar for dusting

Steps:

  • In a large bowl, mash the bananas. Mix in milk, eggs and margarine until smooth. In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into banana mixture.
  • Heat oil in a deep fryer or heavy bottomed pan to 375 degrees F (190 degrees C). Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes. Drain on paper towels and dust with confectioners' sugar.

1/2 cup milk
1 teaspoon canola oil
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
4 large firm bananas
Additonal oil for deep-fat frying
Confectioners' sugar, optional

Steps:

  • In a bowl, beat eggs, milk and oil. Combine flour, baking powder and salt; stir into egg mixture until smooth. Cut bananas into quarters (about 2 in. long). Dip each banana piece into batter to coat. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry banana pieces, two to three at a time, until golden brown. , Drain on paper towels. 1/2 cup flour
2 large eggs
1 tablespoon milk
1/2 cup panko bread crumbs
1 tablespoon cinnamon (nutmeg or pumpkin pie spice will work too)
1 tablespoon sugar

Steps:

  • Get out and measure all of your ingredients.
  • Slice each banana into approximately 5 or 6 chunks.
  • Beat together egg and milk until well combined, set aside.
  • On a large plate, combine crumbs, sugar and cinnamon.
  • Spread the mixture around until full blended. Set aside.
  • Cover each banana chunk with flour. Dip each chunk into the egg mixture. Bananas should be fully covered but not dripping.
  • Coat in crumb mixture until fully covered.
  • Pile on platter to cook.
  • Place each fritter in an air fryer. Make sure they do not touch. Cook at 250 degrees for 10 minutes, flipping at midway point. I usually carefully shake the basket until adjusted.
  • When cooking time is complete, remove from the air fryer and serve immediately.
  • Serve warm with chocolate sauce, caramel, honey, cool whip or whipped cream.
  • Enjoy every bite!

3/4 Cup plus 2 Tablespoons or 100g All Purpose Flour
2 teaspoons baking powder
pinch of salt
1/4 Pint or 150 ml water
1 Tablespoon vegetable oil
1 Banana
Sugar and or shredded coconut for coating

Steps:

  • In a bowl, add the flour, baking powder and salt.
  • Add the water and oil and combine with a hand whisk. The consistency should be thick, like heavy cream and be able to coat a spoon. If it is too thick, add a drop more water, too thin, add a little more flour. Set aside.
  • Heat a pan with vegetable oil until it reaches 180 C or 350 F. Make sure you do not over fill the pan with oil. I use a small saucepan and cook in batches, filling the pan 1/3rd deep with cooking oil.
  • Whilst the oil is heating up. peel the banana, cut in half and then slice length ways in half so you have 4 pieces. Dip each piece in the batter so it is fully coated and carefully place in the pan, cooking both sides until golden brown. ** To tell if the oil is hot enough, drop a tiny bit of batter, the size of a pea in to the oil. If it sizzles and floats to the top immediately, the oil is hot enough.
  • Place the fritters on some kitchen paper then dip into a bowl with sugar to coat.
  • Serve immediately as they are or with some syrup drizzled over the top or a blob of ice cream!

3 bananas
1 ½ cup all-purpose flour
3 ½ teaspoon baking powder

1 ¼ cup 2% milk
1 large egg

2 tablespoons melted butter
¼ cup powdered sugar ((confectioners sugar))

Steps:

  • Heat canola oil in a sauce pan to 375ºF. Adjust the amount of canola oil based on the size of the saucepan. You will want at least 3 inches of oil.
  • Meanwhile, peel and cut bananas. Cut each banana into 3 sections
  • In a medium bowl, add flour, baking powder, salt, and sugar and mix to combine.
