Fried Sweet Bananas image

A very traditional breakfast or dessert in northeast Brazil, bananas or plantains are fried in butter and coated with cinnamon-sugar. Delicious with vanilla ice cream too.

3 firm bananas, halved lengthwise
½ cup white sugar
1 ¼ teaspoons ground cinnamon
3 tablespoons butter

Steps:

  • Cut each banana half into 3 or 4 pieces.
  • Mix sugar and cinnamon together in a shallow bowl.
  • Melt butter in a skillet over medium-low heat; add banana slices and cook until golden brown, 5 to 10 minutes. Transfer banana slices to a paper towel-lined plate. Coat banana slices, 1 at a time, with cinnamon-sugar.

1 large egg, beaten
1 cup fine breadcrumbs
1/2 cup butter (unsalted)
salt, to taste

Steps:

  • In a mixing bowl, gently toss the bananas with egg to moisten, then lightly roll the bananas in the breadcrumbs.
  • In a large skillet, melt the butter over medium heat.
  • When the foam goes away, add the bananas and fry on all sides until golden.
  • Season with salt and serve hot.

  • Heat the oil to 350ºF (180ºC) in a deep-fry machine or heavy-bottom saucepan over medium heat. While oil is heating, peel the bananas, remove the stringy parts that cling to the peeled fruit, and cut crosswise in half.
  • Place the flour, eggs, and bread crumbs each in a separate bowl. Dredge the banana halves in flour to get an even coating. Shake to remove excess flour. Next, soak the banana halves in the beaten eggs mixed with 1 tsp water. Finally, cover the banana halves in bread crumbs.
  • Fry each half until lightly golden (do NOT overcrowd the pan), about 1 to 2 minutes. Remove with a slotted spoon. Place on a plate lined with a double layer of paper towels.
