Why compromise the banana flavor? This banana bread is moist and delicious with loads of banana flavor! Friends and family love my recipe and say it's by far the best! It's wonderful toasted!! Enjoy!

2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
½ cup butter
¾ cup brown sugar
2 eggs, beaten
2 ⅓ cups mashed overripe bananas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
  • Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

1/2 cup butter, softened
1-1/2 cups sugar
2 large eggs
1 cup mashed ripe bananas (about 2 medium)
1/4 cup eggnog
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground nutmeg, divided
1/4 teaspoon salt
1/8 teaspoon baking soda

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas, eggnog and vanilla. In another bowl, whisk flour, baking powder, 1/4 teaspoon nutmeg, salt and baking soda; gradually beat into banana mixture., Transfer to a greased 9x5-in. loaf pan; sprinkle with remaining nutmeg. Bake 50-60 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool.

1 loaf good-quality white bread or 1 loaf raisin bread, cut into cubes (1 pound)
2 medium ripe bananas, sliced
3 1/2 cups prepared eggnog (not in a can)
4 eggs
1/4 cup sugar
1/4 teaspoon nutmeg
1 cup packed light brown sugar or 1 cup dark brown sugar
1/2 cup heavy cream
1/4 cup dark corn syrup
2 tablespoons butter
1/2 teaspoon rum extract
powdered sugar, for serving
vanilla ice cream, for serving

Steps:

  • MAKE THE PUDDING: Prheat oven to 375*F; grease a 13x9" baking pan (3 quarts).
  • Place 1/2 the bread cubes in the baking pan; top with the banana slices and remaining bread cubes.
  • In a large bowl, combine the eggnog, eggs, sugar, and nutmeg; blend well.
  • Pour over the bread cubes; let stand 5 minutes.
  • Bake for 40-50 minutes, or until a knife inserted in the center comes out clean.
  • Meanwhile, make the SAUCE: In a small saucepan, combine all the sauce ingredients except the rum extract.
  • Cook over medium heat, stirring constantly, until the mixture boils and thickens.
  • Reduce heat to low; simmer for 5 minutes, stirring constantly.
  • Stir in the rum extract; serve sauce warm.
  • Dust individual servings with powdered sugar and top with a scoop of vanilla ice cream, if desired.

I love this bread. I usually serve it with sweetened cream cheese. (Cooking time is approximate, and is meant to represent the time of a bread machine's full cycle.)

1 1/4 teaspoons yeast
3 cups flour (preferably bread flour, but all-purpose flour will work too)
2 tablespoons sugar
3/4 teaspoon salt
1/2 cup eggnog
1/4 cup milk
1 egg
2 tablespoons butter, cut up
1/2 teaspoon nutmeg
1/2 cup glace cherries, halved

Steps:

  • Place all ingredients except cherries in bread machine pan in order listed.
  • Use normal white 1 1/2 lb cycle.
  • Add the cherries at the beep (or at the time in the cycle when you would normally add fruit or nuts- see your bread machine's manual for details).

3 cups all-purpose flour
1 ½ teaspoons baking soda
¼ teaspoon salt
¾ cup margarine
2 ¼ cups white sugar
3 eggs
2 teaspoons vanilla extract
1 ½ cups eggnog
1 ½ cups mashed bananas
½ cup butter, softened
1 (8 ounce) package cream cheese, softened
1 teaspoon vanilla extract
3 cups confectioners' sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13-inch pan.
  • Mix flour, baking soda, and salt together in a large bowl. Beat margarine and white sugar together in a separate bowl until light and fluffy. Beat in eggs, one at a time, until fully incorporated; stir in 2 teaspoons vanilla extract. Stir butter mixture into flour mixture, alternating with eggnog, until well combined. Fold in bananas. Pour batter into prepared pan.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 1 hour. Remove from oven and cool on a wire rack, about 1 hour.
  • Beat butter and cream cheese together in a bowl until creamy and smooth; beat in 1 teaspoon vanilla extract. Add confectioners' sugar; beat on medium-low speed with an electric hand mixer until combined. Spread frosting onto cooled cake.

1 x 1 lb loaf raisin bread, cut into 1" cubes
2 med bananas, sliced
3 1/2 c. eggnog
4 x Large eggs
1/4 c. sugar
1/4 tsp nutmeg SAUCE
1 c. firmly packed brown sugar
1/2 c. whipping cream
1/4 c. dark corn syrup
2 Tbsp. butter
1/2 tsp rum extract

Steps:

  • Heat oven to 350F. Butter 13 x 9-inch (3 qt) baking dish. Place half of bread cubes in buttered baking dish. Top with banana slices and remaining bread cubes. In large bowl, combine eggnog, Large eggs, sugar, and nutmeg; blend well. Pour over bread cubes. Let stand 5 min. Bake at 350F for 40 to 50 min or possibly till knife inserted in center comes out clean. Meanwhile, in small saucepan, combine all sauce ingredients except rum extract. Cook over medium heat, stirring constantly, till mix boils and thickens. Reduce heat to low; simmer 5 min, stirring constantly. Stir in rum extract. Serve hot sauce over pudding.

  • Mash your bananas well with a fork and place them into a 2-cup liquid measuring bowl. Add egg, melted (cooled) butter, vanilla and enough eggnog to make a total of two cups. The addition of eggnog will only be enough to make a total of two cups of all the wet ingredients mentioned. Do not add more eggnog.
  • In a large bowl combine flour, sugar, salt, baking soda, baking powder, cinnamon, nutmeg. Add the wet ingredients to the dry ingredients and fold them very carefully into each other. Do not over-mix, about 10 strokes is about enough. (Over-mixing is the death of baked goods. There might even be some dry spots of batter left and it will be lumpy. That is fine! If you mix until the batter is runny, your muffins will be average, and a little tough.) Fold in chopped nuts and chocolate just until incorporated.
  • Spoon the batter lightly into the muffin pan (do not pack it in). If you want your muffins to look like the pictures, place extra nuts and chocolate onto the top of each muffin.

  • Over the years, I’ve made this bread with two different machines. For the Zojirushi Virtuoso breadmaker, I used the medium crust setting. For the Zojirushi BBCCX20 Bread Machine, I used the light crust setting.
  • Make sure you check on the dough after five or ten minutes of kneading. Pop open the top of the bread machine and look at the dough. It should be a round ball.
