A nice change of pace from the usual strawberry daiquiri.

½ large banana, sliced
1 ½ fluid ounces light rum
1 fluid ounce fresh lime juice
½ fluid ounce triple sec
1 teaspoon white sugar, or to taste
1 cup ice cubes

Steps:

  • Combine banana, light rum, lime juice, triple sec, and sugar in a blender; puree until smooth. Add ice cubes and blend on highest setting until slushy, 15 to 20 seconds. Pour into a glass and serve.

1/4 cup all-purpose flour
1 (3 1/2 ounce) package banana pudding mix
1 teaspoon baking powder
1/2 cup milk
3 tablespoons butter, softened
1 egg
2 medium bananas
24 ounces cream cheese, softened
1/2 cup sugar
2 tablespoons milk
1 tablespoon lime juice
1/2 teaspoon rum extract
sliced banana (optional)
lime peel, strips (optional)

Steps:

  • Grease bottom and sides of an 8-inch springform pan; place on a baking sheet. In a large mixing bowl stir together flour, pudding mix, and baking powder; add the 1/2 cup milk, butter and egg. Beat with an electric mixer on medium speed for 2 minutes. Pour batter into prepared pan. Slice the 2 bananas; arrange slices atop batter. Set aside.
  • In a medium mixing bowl beat cream cheese, sugar, the 2 tablespoons milk, lime juice, and rum extract on medium speed till smooth. Spoon cream cheese mixture over bananas, carefully spreading mixture to cover.
  • Bake in a 350F oven for 30 to 35 minutes or till center is set. Cool in pan for 15 minutes on a wire rack. Loosen crust from sides of pan. Cool for 30 minutes more. Cover and chill at least 2 hours before serving. To serve, remove sides of springform pan; garnish cake with additional banana slices and lime peel strips.

BANANA-COCONUT DAIQUIRI

1 large banana, sliced
1/2 cup white rum (or coconut water)
1/3 cup canned cream of coconut (such as Coco López)
1/4 cup fresh lime juice (from 2 limes)
Maraschino cherries, for garnish

Steps:

  • Freeze the banana slices on a plate until firm, at least 3 hours or overnight.
  • Transfer the banana slices to a blender. Add the rum, cream of coconut, lime juice and 3 cups ice. Blend until smooth and thick, adding more ice if needed. Pour into large glasses; garnish each with a cherry.

2 cups ripe mangoes, chopped (about 2 mangoes peeled and seeded)
1 ripe banana
1/2 cup freshly squeezed lime juice (about 4 limes)
1/4 cup sugar syrup (see notes)
1 1/4 cups dark rum
mango, slices for serving
1 cup sugar
1 cup water

Steps:

  • Place the mango, banana, lime juice, sugar syrup (see note) and rum in a blender and process until smooth.
  • Add 2 cups of ice and process again until smooth and thick.
  • Serve ice-cold in highball glasses with mango slices.
  • Note: To make sugar syrup, heat 1 cup sugar and 1 cup water in a small saucepan until the sugar dissolves. Chill.

This dense moist and delicious cake was a favorite at my restaurant, Sprouts. In scaling down the recipe (which made lots of cakes), I got down to these measurements. You'll have a little batter left over for cupcakes. It's great to freeze them for when the cake is all gone.

Yield serves 18 (makes 1 layer cake and 6 cupcakes)

Number Of Ingredients 13

1 cup amber agave nectar
3/4 cup canola oil
4 large eggs
6 ripe bananas, mashed
2 teaspoons vanilla extract
2 cups barley flour
1 3/4 cups oat flour
2 teaspoons baking soda
Pinch of sea salt
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
Rum Cream Cheese Frosting (see page 110)
Toasted coconut or chopped walnuts, for garnish (optional)

Steps:

  • Preheat the oven to 325°F. Lightly oil two 9-inch cake pans with canola oil spray and lightly dust with flour. Line a cupcake pan with 6 paper liners and fill any empty cups half full of water to prevent scorching.
  • In a large bowl, using an electric mixer on medium speed, cream the agave nectar, canola oil, eggs, bananas, and vanilla extract.
  • In a separate bowl, combine the barley flour, oat flour, baking soda, salt, cinnamon, and nutmeg. Add the flour mixture to the banana mixture and blend on low speed until just combined. Pour the batter into the prepared pans and bake the cake layers for 35 to 40 minutes, and the cupcakes for 20 to 25 minutes, until a toothpick inserted into the center of a cupcake comes out clean. Remove from the oven. Let cool in the pans for 5 to 10 minutes, then cool completely on cooling racks. Frost with the cream cheese frosting. Sprinkle some toasted coconut or walnuts over the cream cheese frosting for extra nutty flavor and texture if desired.
