BANANA-CREAM PARFAITS

Steps:
- Combine cream, 2 tablespoons sugar, and brown sugar in heavy medium saucepan. Scrape in seeds from vanilla bean; add bean. Simmer until liquid is reduced to 1 1/3 cups, stirring often, about 15 minutes. Pour liquid into bowl; chill until cold, at least 3 hours and up to 1 day.
- Using electric mixer, beat crème fraîche and 1/4 cup sugar in medium bowl until thickened and fluffy (mixture will thin out at first but then will thicken). Discard vanilla bean and whisk vanilla cream until smooth. Divide vanilla cream among 6 glasses; top each with 5 banana slices. Sprinkle 1/4 cup crumbled cookies over each. Divide whipped crème fraîche among glasses. Top with remaining banana slices. (Can be prepared 45 minutes ahead. Cover and chill.) Place 1 whole shortbread cookie in each glass and serve.

- In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes. Whisk in sour cream and vanilla. Fold in three-fourths of the whipped topping. , Set aside eight vanilla wafers. Place one wafer into each of eight parfait glasses; top with a third of the banana slices and pudding mixture. Repeat layers twice. Top with remaining whipped topping. Refrigerate for at least 1 hour. Garnish with reserved vanilla wafers.

- In a small bowl, combine bananas and lemon juice; let stand for 5 minutes. In another bowl, whisk the milk and pudding mix for 2 minutes. Refrigerate for 5 minutes. Yummy banana pudding parfaits. Quick as a whistle and pretty enough to serve to guests. Would serve 4 but DH and I have eaten the entire thing before!

- Crush graham crackers in a baggie with rolling pin until course crumbs. Set aside.
- Using a whisk, whisk cream cheese in a large bowl until smooth.
- Add pudding mix, milk and vanilla; whisking until smooth.
- Fold in 2 ounces of whipped topping. Reserve 2 ounces cool whip to top parfaits.
- To make two parfaits. The layering really doesn't matter - do whatever you think looks the best! Here's how I do the layers for my DH and I: layer each parfait with graham cracker crumbs, 1/4 banana, 1/4 pudding mixture, 1/2 ounce whipped topping, 1/4 banana, 1/4 pudding mixture, 1/2 ounce whipped topping and lastly remaining graham cracker crumbs.
- Sprinkle with cinnamon.
- Can be eaten immediately or set in the fridge for 15-20 minutes to allow crumbs to soften (not too long or they'll turn to mush). Enjoy!

Ordinary ingredients like graham cracker crumbs and sliced bananas really dress up plain pudding. I like to serve these parfaits for casual dinners as well as for formal dining.

- Prepare pudding according to package directions, using the 2 cups cold milk. , Sprinkle 1 tablespoon graham cracker crumbs into each of four parfait or dessert glasses. - In a blender, combine vanilla yogurt, sliced banana, vanilla extract and blend until smooth.
- In tall glasses, arrange half of crushed cookies; add half of the banana mixture, then add with remaining crushed cookies and remaining banana mixture. Top with whipped cream and sift lightly with cocoa powder. Enjoy!
BANANA CREAM PARFAITS
This satisfies my banana cream pie craving, but in smaller portions...not the whole pie! It is based on Dejah's recipe #37006. Can also be gluten free if you use gluten free cookies/biscuits. I like to use gingernut because they are full of toasted coconut. The quantity is only a guide; use as many bananas, crumbs and cream as you like.

- Crush up cookies and place a layer in the bottom of the parfait glasses. Reserve some for the top.
- Then layer banana slices.
- Top with cooled pudding/custard mix.
- Add a dollop of whipped cream.
- Sprinkle over cookie crumbs.
- Repeat layer if using a big glass.
- Pudding/Custard: Mix together cornstarch and sugar in a microwavable bowl. Add milk and whisk to make sure it is mixed well.
- Microwave on HIGH for 10-12 minutes or until thickened slightly. (Be sure to whisk EVERY 3 MINUTES so that no lumps form).
- In another bowl put egg yolks. Whisk to break up. Whisk in about a 1/2 cup of the hot milk mix to the egg yolks. Then pour egg yolk mix back into the milk mix, whisking again.
- Microwave on MEDIUM for 3 minutes, stirring every minute or until bubbly.
- Stir in butter and vanilla. Cover the surface with plastic wrap (to prevent a skin from forming).
- Chill well before assembling parfaits.
- If the pudding tastes too sweet, add a litte unsweetened whipped cream to it after it has cooled.

- Pour milk into medium bowl and add pudding mix granules. Whisk for 2 minutes then gently stir in 1/2 cup of the whipped topping.
- Spoon 3 heaped tablespoons of the pudding mixture into each of 6 dessert dishes and then top each with 1 tablespoon of the chopped cookies and 3 banana slices. Repeat layers and refrigerate for at least 1 hour.
- Top with remaining 1/2 cup whipped topping immediately before serving and store leftover desserts in refrigerator.
