Delicous and moist cranberry walnut banana bread is a sweet and simple loaf bread.

1 ½ cups mashed ripe bananas ((about 3 bananas))
⅓ cup plain fat-free greek yogurt
¼ cup melted butter ((half a stick))
2 large eggs
½ cup brown sugar, packed
⅓ cup sugar
1 ½ cups all purpose flour
¼ cup ground flaxseed
1 teaspoon cinnamon
¾ teaspoon baking soda
½ teaspoon salt
½ cup dried cranberries
½ cup chopped walnuts
½ cup powdered sugar
1 tablespoon milk
½ teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees. Spray a loaf pan with cooking spray and set aside.
  • In a large bowl, cream together the mashed bananas, yogurt, butter, eggs, and sugars until well combined. In the same bowl, beat in the flour, flaxseed, cinnamon, baking soda, and salt. Fold in the dried cranberries and walnuts.
  • Pour battter into prepared loaf pan. Bake for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean. Remove from oven and let cool in pan for 10 minutes before removing from pan and letting cool completely on a wire rack.
  • To make the glaze, whisk together the powdered sugar, milk, and vanilla. Pour glaze over cooled loaf.

2 ½ cups white sugar
1 cup shortening
3 eggs
3 mashed bananas
1 cup cranberry sauce
½ cup milk
1 teaspoon vanilla extract
4 cups all-purpose flour
1 ½ teaspoons baking soda
1 ½ teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
  • In a large bowl, cream together the sugar and shortening until light and fluffy. Beat in eggs, and mix in bananas, cranberry sauce, milk, and vanilla. In a separate bowl, mix together flour, baking soda, baking powder, cinnamon, and nutmeg. Gradually blend flour mixture into the banana mixture. Fold in walnuts. Pour into the prepared loaf pans.
  • Bake for 50 to 60 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack, and cool completely.

1 cup sugar
1/4-1/2 cup butter or 1/4-1/2 cup margarine, softened
1 cup mashed banana
1/4 cup milk
2 eggs
2 cups flour
2 teaspoons baking powder
1/2 cup chopped walnuts
1 1/2 cups coarsely chopped fresh cranberries or 1 1/2 cups coarsely chopped frozen cranberries

Steps:

  • Preheat the oven to 350F degrees.
  • Grease an 8 1/2 by 4 1/2 inch loaf pan.
  • Mix sugar and butter in a medium mixing bowl until completely blended.
  • Add banana, milk and eggs, mixing well.
  • Add dry ingredients, mixing just until moist.
  • Stir in nuts and cranberries.
  • Spread batter evenly in the loaf pan.
  • Bake for 1 hour and 10 minutes, or until a toothpick inserted in the centre of the bread comes out clean.
  • Remove from pan, cool on rack.

2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sweet butter (softened)
1 cup sugar
2 eggs, rt
1 teaspoon vanilla extract
1 cup ripened banana (approx.2/3 Bananas depending on size)
1/2 cup sour cream
1/2 cup chopped walnuts
1/2 cup cranberries

Steps:

  • Preheat Oven to 325°F.
  • Grease 10x5 Loaf Pan. (smaller may cause spillage in oven by batter overflowing).
  • Sift Flour Baking Powder, Baking Soda, and Salt in Bowl (set aside).
  • Mash Bananas, add sour cream then stir to blend (set aside).
  • Cream butter with mixer (I use my Kitchenaid Mixer), add Sugar, then add eggs one at a time, beating well, stir in Vanilla Extract.
  • Add Banana/sour cream mixture~ continue to beat 3 minutes.
  • Add Flour Mixture into mixture, continue to beat 3 minutes, then stir in cranberries and walnuts.
  • Pour mixture into Loaf Pan and Bake at 325 F (yes this low OT is correct) between 60-75 minutes ~ test with toothpick in center.
  • Cool 15 minutes; remove from pan. Slice ~ Serve ~ Enjoy! Can wrap tightly and store in refrigerator for immediate use or freeze.

1 cup sugar
1 cup mashed banana (2 to 3 bananas)
¼ cup milk
2 eggs
2 cups flour
2 teaspoons baking powder
1 ½ cups fresh cranberries (chopped)
½ cup walnuts (chopped)

Steps:

  • Preheat the oven to 350 degrees. Prepare a loaf pan with nonstick cooking spray.
  • Beat the butter at medium speed until creamy, about 3 minutes. Scrape down the sides and add the butter, beating for about 5 minutes or until fluffy. Scrape down the sides again and add the banana, milk, and eggs. Beat until well blended.
  • Stir the baking powder into the flour and then add the flour to the wet ingredients a little at a time, scraping the sides down as needed, until it is just mixed.
  • Stir in the cranberries and nuts.
  • Transfer the batter to the loaf pan.
  • Bake for 1 hour to 1 hour 10 minutes or until a toothpick inserted in the middle returns clean.
  • Allow to cool in the pan for 10 minutes before transferring to cool on a wire rack.

1/4 cup margarine, softened
3/4 cup Splenda sugar substitute
2 large eggs
3/4 cup banana, mashed
1 cup fresh cranberries or 1 cup frozen cranberries
3/4 cup whole wheat flour
3/4 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon

Steps:

  • Beat butter, Splenda and eggs together in a large bowl until smooth.
  • Add banana and cranberries and stir.
  • Sift remaining ingredients in a bowl.
  • Add to banana mixture.
  • Stir until just combined.
  • Spread into a greased loaf pan.
  • Bake at 350°F for about 50 minutes or until a toothpick inserted in the centre comes out clean.
  • Cool in pan for 10 minutes.
  • Remove to wire rack to cool.

2 tablespoons unsalted butter, room temperature, plus more for pan
2 cups all-purpose flour (spooned and leveled), plus more for pan
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1 large egg
1 teaspoon grated orange zest
1 cup fresh orange juice
1 cup fresh cranberries
1 cup toasted walnuts, coarsely chopped

Steps:

  • Preheat oven to 325 degrees. Butter and flour an 8 1/2-by-4 1/2-inch loaf pan; set aside. In a medium bowl, stir together flour, baking powder, baking soda, and salt; set aside.
  • With an electric mixer, cream butter and sugar on medium speed until combined. Add egg, and beat well. Gradually add flour mixture, mixing until combined (dough will appear very dry). Reduce speed to low; beat in orange zest and juice. Fold in cranberries and walnuts.
  • Spread batter in prepared pan, smoothing top. Bake until a toothpick inserted in center comes out clean, 50 minutes to 1 hour (tent with foil if top is browning too quickly). Cool in pan 10 minutes; run a knife around edges of loaf, and invert onto a wire rack. Turn top side up; cool completely before slicing.

In another bowl, whisk flour, baking powder, salt and baking soda; gradually beat into creamed mixture. Stir in cranberry sauce, 1/2 cup pecans and dried cranberries., Transfer to a greased 8x4-in. loaf pan. Sprinkle with remaining pecans. Bake until a toothpick inserted in center comes out clean, 50-60 minutes. 100g softened butter, plus a little extra for greasing
140g caster sugar
1 beaten egg
225g plain flour
2 tsp baking powder
4 very ripe bananas
85g chopped walnuts
50ml milk

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease a 2lb loaf tin with some butter and line the base with baking parchment, then grease this as well.
  • In a large bowl, mix together the butter, sugar and egg, then slowly mix in flour and baking powder. Peel, then mash the bananas. Now mix everything together, including the nuts.
  • Pour your mixture into the tin and bake for 1 hr, or until a skewer comes out clean. Allow the cake to cool on a wire rack before removing from the loaf tin. The loaf can now be wrapped tightly in cling film and kept for up to 2 days, or frozen for up to 1 month. Defrost and warm through before serving. Serve in thick slices topped with vanilla ice cream and drizzled with a little Easy chocolate sauce (see recipe, below).
