BANANA ORANGE BARS
I have been making these treats for many years. I no longer remember where the recipe came from, but one thing is certain - the bars are always a hit at family get-togethers and parties. The secret to tasty banana desserts is the ripeness of the bananas - the riper, the better.

- In a large bowl, beat the bananas, sugar, oil and eggs until well blended. In a small bowl, combine the flour, cinnamon, baking powder, salt and baking soda; gradually beat into banana mixture until blended., Pour into a greased 15x10x1-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack. , For frosting, cream butter and sugar in a large bowl until light and fluffy. Beat in orange juice and zest until smooth; spread evenly over cake.

THE BEST BANANA COOKIES
Pillow soft banana cookie topped with fluffy sweet buttercream frosting. One of the most delicious ways to use up overripe bananas.

Steps:
- Preheat oven to 350 degrees, prepare two cookie sheets with cooking spray, parchment paper or a silicone mat.
- In your mixer, or with a hand mixer, cream together the shortening (or butter and oil), the sugar and eggs.
- Add in the mashed bananas, buttermilk and vanilla. Mix well.
- Add the flour, baking soda and salt. Mix until well combined.
- Using a cookie scoop or a spoon, put about 2 tbsp of batter down, making sure to place the batter scoops 2 inches apart on a large cookie sheet. You should be able to fit 12 cookies on one cookie sheet.
- Bake at 350 degrees for 10-11 minutes
- Frost while warm if you want them to be glazed or wait until they have cooled if you want them to look like the cookies in my pictures.
- TO MAKE THE FROSTING:
- Using your hand mixer, cream together the butter, powdered sugar, vanilla, salt and 2 tbsp of evaporated milk or heavy cream. Mix until fluffy adding up to two more tablespoons of the evaporated milk or cream if needed.
- Spread a thin layer of frosting on each cookie and ENJOY!

Steps:
- Heat oven to 350°.
- In large mixing bowl, mix 3/4 cup brown sugar & 3/4 cup butter.
- Beat at medium speed, scraping your bowl often until mixture is creamy 1-2 minutes.
- Add in the bananas, egg, orange zest & 1/2 tsp vanilla extract.
- Continue beating batter until well mixed 1-2 minutes.
- Reduce speed to low & add the flour, baking powder, baking soda & salt.
- Beat until well mixed again, 1-2 minutes.
- By round teaspoons, drop the dough 2-inches apart onto ungreased cookie sheets.
- Bake 8-10 minutes or until edges have slightly browned.
- On medium heat, melt 2 Tbsp butter in 1-quart saucepan, adding 3 Tbsp brown sugar & cream.
- Continue to cook, while stirring occasionally until mix comes to a boil 1-2 minutes.
- Remove from heat & add powdered sugar & remaining vanilla, beat until well mixed.
- When cookies have cooled, frost them with icing.

- Preheat oven to 350°F
- In a mixing bowl, cream shortening and sugar.
- Add eggs,and mix in well.
- Add orange juice/peel.
- Combine dry ingredients and gradually add to the creamed mixture.
- Drop by heaping teaspoonfuls onto ungreased baking sheets.
- Bake for 10 to 12 minutes, or until edges begin to brown.
- Remove to wire racks to cool.
- Mix frosting ingredients until smooth and drizzle over cooled cookies.

These cookies were voted an all-time favorite in our family. They can be made any time of the year-bring them to parties, keep them for your family, save one for yourself, save 10 for yourself, whatever you want! I promise everyone will love this delicious balance of sweet but not too sweet. Eat hot, eat cold, eat these whenever. They can be stored in the freezer or in a container.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a cookie sheet.
- Combine flour, baking powder, and salt in a large bowl. Stir mashed banana, sour cream, and vanilla together in another bowl.
- Cream margarine and sugar in a large bowl with an electric mixer. Beat in eggs. Mix in banana-sour cream mixture until incorporated. Add dry ingredients until well combined. Stir in nuts.
- Drop small spoonfuls of batter onto the prepared cookie sheet; cookies do not expand much in the oven.
- Bake in the preheated oven, checking occasionally, until bottoms are light golden brown and cookies are set but still a tad soft, 10 to 12 minutes. Remove cookies to a rack to cool.
- While the cookies are cooling, prepare frosting: Melt butter in a saucepan over medium-low heat. Stir in brown sugar and reduce heat to low. Stir and bring to a boil. Boil, stirring constantly, for 2 minutes. Remove from heat.
- Stir in 1/4 cup milk and bring to a boil again. Remove from heat and let cool, 10 to 15 minutes.
- Gradually stir in powdered sugar until frosting is desired consistency. If frosting hardens while working, stir in a little bit of milk.
- Spread frosting on cooled cookies.

BANANA CAKE WITH ORANGE ICING
Another great banana cake but with a blast of citrus; gives it an added zing! It is lower in fat than some and I quite often make it without the icing so it is not too sweet either. I often add something extra as well...often a handful of dried cranberries really sets it off. I usually bake it in a tube pan but that is my personal preference. This recipe originated in "Lighthearted Everyday Cooking" by Anne Lindsay.

- Heat oven to 350 degrees.
- Cream sugar, butter, shortening, and vanilla until light and fluffy.
- Add bananas and then mix in the eggs.
- Blend in buttermilk. Add the dry ingredients until just combined. Do not over-beat. It will be a sticky batter. Drop by tablespoons onto a greased cookie sheet.
- Bake for 9-10 minutes, until slightly golden.
- Cool completely.
- Mix all ingredients together and spread over cooled cookies.
