Steps:
- 1. Preheat the oven to 325°F. In a large bowl, whisk together the milk, eggs, sugar, vanilla, and butter until the sugar is dissolved. Add the flour and whisk until smooth. Pour the batter into a cast iron skillet or pie pan.
- 2. Now add your favorite fruit or flavoring (see below). Bake until the clafoutis is beautifully puffed and golden, 35-40 minutes. Serve immediately.
- Clafoutis Variations: Concord Grape Clafoutis: Once the batter is in the skillet, scatter 2 cups slightly crushed Concord or other black or red grapes on top. Cherry Clafoutis: Scatter 2 cups pitted cherries onto the batter once it's poured into pie plates. Pear Clafoutis with Pear Eau de Vie: Core 1 ripe pear and cut into pieces. Pour the batter into the skillet and top with the pear pieces. Bake. Drizzle with 2 tablespoons eau de vie and serve immediately. Milk Chocolate and Hazelnut Clafoutis: Melt 1 cup chopped milk chocolate in a large mixing bowl set above a simmering pot of water. Fold in the clafoutis batter until smooth and fully incorporated. Pour into a skillet or pie plate, sprinkle with 1/4 cup coarsely chopped hazelnuts, and bake.
BANANA CLAFOUTI
A quick and easy dessert. We serve this up with homemade ice cream. This is a custard-like dessert normally made with cherries, but we love bananas and think it is better this way. Not recommended to use overly ripe bananas.

- Heat the oven to 450°F. Set 4 shallow (4 oz.) ramekins on a baking sheet. In a large bowl whisk together the flour and 3 tablespoons of the sugar. Gradually whisk in the milk and the heavy cream until a smooth paste forms. Whisk in the egg, egg yolk, vanilla, and salt.
- Melt the butter in a 10-inch skillet over medium-high heat. Add the remaining sugar and swirl the pan to combine. Cook until the mixture just begins to caramelize, 1 to 2 minutes. Decrease the heat to medium, carefully add the bananas, and stir gently to combine. Cook 1 minute more, until the bananas are warmed and coated in the sauce. Remove from the heat and divide the banana mixture among the ramekins. Pour in the milk mixture, dividing evenly between the ramekins.
- Bake until the edges are puffed, the tops are golden, and the centers are set and no longer runny, about 15 to 18 minutes. Let cool slightly, then sprinkle with confectioners’ sugar. Serve warm.

- Pre heat the oven to 190C (180C fan). Lightly grease the 25 cm round flan/ tart dish or oven-safe dish with some butter and set aside.
- In a medium bowl, mix the cherries and rum/ bourbon and set aside while you prepare the batter.
- In a large bowl, beat the eggs until smooth. Sieve the flour and ground almonds into the eggs, followed by sugar, salt, vanilla. Whisk it all until smooth. Add melted butter and whisk again. Gradually, whisk in the milk and double cream. You should have a smooth, thick batter.
- Pour the batter into prepared baking dish and top it up with cherries. Drizzle the top with any leftover cherry/rum juice. You can also reserve some of the leftover cherry juice for serving. Bake the clafoutis for 30-35 minutes in the middle of the oven until golden brown. It is ready when toothpick inserted in the centre comes out clean. Take it out of the oven and allow to cool slightly. Dust the clafoutis with some icing sugar and serve it with a dollop of creme fraiche on top.
