Paleo Banana Coconut Blondies - these rich, moist and delicious blondies will leave you speechless! Chewy, gooey and absolutely delicious!

2 ripe bananas (mashed)
3/4 cup coconut sugar (If using honey, add only 1/4 cup coconut oil instead of 1/3 cup)
2 large eggs
1/3 cup coconut flour
1/4 cup oat flour (I grounded gluten free oats)
1/3 cup melted coconut oil (cooled (use only 1/4 cup, if using honey instead of coconut sugar))
1/2 teaspoon pure vanilla extract
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chocolate chips or chopped dark chocolate chunks
1 Tablespoon chocolate chips or chopped dark chocolate chunks
1/2 Tablespoon melted coconut oil

Steps:

  • Preheat oven to 375 F. In a medium mixing bowl, mix bananas, coconut sugar and eggs with a mixer on medium speed until well combined. It's okay if there are some banana chunks.
  • Add coconut flour, oat flour, coconut oil, vanilla extract, baking powder and salt to the mixing bowl and mix well (on low speed, if using the mixer).
  • Fold in dark chocolate chunks. If you don't like chocolate or want to avoid using chocolate, you can just omit it, or add instead nuts of your choice (like chopped walnuts or pecans). It will turn out great that way too!
  • Spread mixture in a 8 x 8 baking dish and bake in a preheated 375 F oven for 25 minutes.
  • Place the baking dish on a cooling rack and let brownies stand for 5 minutes before cutting.
  • Melt chocolate chips/chunks in a glass bowl over pan with boiling water. Drizzle some melted chocolate on top of already cut brownies and enjoy! It is hard to eat only one brownie. :)

2 1/2 sticks unsalted butter (1 1/4 cups), more for greasing pan
200 grams chocolate wafer cookies (to make about 3 cups crumbs)
55 grams light brown sugar (about 1/4 cup)
3 grams fine sea salt (about 1/2 teaspoon), plus a pinch
2 ripe bananas, mashed
2 large eggs
455 grams dark brown sugar (about 2 1/2 cups)
2 tablespoons dark rum or 1 teaspoon vanilla extract
130 grams all-purpose flour (about 1 cup)
80 grams toasted walnuts, chopped (about 1/2 cup)
Flaky sea salt, for sprinkling (optional)

Steps:

  • Heat oven to 375 degrees. Line a 9-by-13-inch baking pan with parchment, and grease with butter.
  • Melt 1 stick of butter in a saucepan over low heat or in microwave. Put the chocolate wafer cookies in the bowl of a food processor and process to make fine crumbs. Add the light brown sugar, melted butter and a pinch of salt. Process until the mixture is the consistency of damp sand. Dump the mixture into the pan and press it into an even layer. Bake for 7 to 10 minutes, or until the surface is firm. Remove the pan and set aside.
  • Reduce oven heat to 350 degrees.
  • In a large skillet over medium heat, melt 12 tablespoons butter, then let it cook until the foam subsides and butter turns a deep nut brown, about 5 minutes. Cool.
  • In a large bowl, whisk together bananas, eggs, dark brown sugar and rum. Whisk in brown butter. In a separate bowl, whisk together flour and fine salt. Fold into batter along with the toasted walnuts. Pour the mixture over the prepared crust and spread evenly. Sprinkle top with flaky salt if using.
  • Transfer pan to oven and bake until the top is firm and a toothpick inserted in the center emerges with a few crumbs attached (or clean) but not wet, 45 to 55 minutes. Cool completely on a wire rack; cut into 24 bars.

1 cup light brown sugar (dark can also be used)
1 tablespoon vanilla
1 egg
1 cup flour
½ cup mashed banana (1 large banana)
1/2 cup chocolate chips (or chopped nuts)

Steps:

  • Preheat oven to 350° F. Line an 8x8 baking dish with parchment paper or foil and spray with cooking spray. Set aside
  • In a large bowl combine the melted butter and brown sugar. Mix until combined. Add vanilla and egg, mix until fully incorporated. Add four and stir until combined. Next add the mashed banana and chocolate chips. Stir just until combined without over mixing. Pour into greased pan. Bake for 22-28 minutes.
  • Cool for at least 10 minutes before cutting. Cut into 9 large bars or 16 small squares. Store covered in fridge for up to 1 week.

2 large eggs plus 1 egg yolk
1 teaspoon vanilla
1/4 teaspoon fine salt
2 cups (254 grams) all-purpose flour
1 cup (80 grams) sweetened shredded coconut
8 ounces (227 grams) semisweet chocolate, chopped into chunks

Steps:

  • Preheat the oven to 350°F. Line an 8 by 8-inch metal baking pan with foil or parchment, leaving an overhang. Spray with nonstick cooking spray.
  • In a large bowl combine the butter and sugar with a rubber spatula. Add the eggs, egg yolk, and vanilla and stir until combined. Stir in the salt and flours. The mixture will be a thick dough-like batter. Stir in 3/4 of the coconut and chocolate chunks.
  • Spread the batter into the prepared pan. Sprinkle with the remaining coconut and chocolate chunks, pressing into the batter slightly. Bake for about 40 minutes, or until set but still gooey.
  • Allow to cool before cutting into bars using a big sharp knife or a big plastic knife. For cleaner cuts, wipe the blade under hot running water between cuts.
  • Cover and store blondies at room temperature for up to 3 days. If desired, nuke in the microwave before serving.

2 teaspoons baking powder
1 teaspoon salt
6 tablespoons butter or 6 tablespoons margarine
1 3/4 cups packed light brown sugar
2 teaspoons vanilla extract
2 large eggs
1 1/2 cups pecans, coarsely chopped
3/4 cup sweetened flaked coconut

Steps:

  • Preheat oven to 350°F.
  • Grease 13 x 9-inch baking pan.
  • In small bowl, combine flour, baking powder and salt.
  • In saucepan, melt butter over low heat.
  • Remove from heat.
  • Stir in brown sugar and vanilla; add eggs, stirring until well blended.
  • Stir in flour mixture into sugar mixture just until blended.
  • Stir in coconut and pecans.
  • Spread batter evenly in prepared pan.
  • Bake until toothpick inserted 2 inches from edge of pan comes out clean, about 30 minutes.
  • Do not overbake; blondies will firm as they cool.
  • Cool completely in pan on wire rack.
  • When cool, cut lengthwise into 4 strips and then cut each strip crosswise into 6 pieces.
  • Variations: Pecan Blondies--leave out coconut.
  • Chocolate Chip Blondies--leave out coconut and stir in 1 (6 oz) package semisweet chocolate chips.

1/4 cup maple syrup (, , agave syrup or golden syrup)
1/2 tsp baking soda
1/4 tsp salt
1 egg
1 tsp vanilla extract
1/2 cup mashed (, , ripe banana)
1 cup all purpose flour
1/3 cup shredded coconut
1/3 cup pecan halves (, , roughly chopped)
1/3 cup bittersweet chocolate chips

Steps:

  • Preheat your oven to 350 F (180 C). Place the butter into an 8-inch pie tin or brownie tin and put it into the oven for 5 minutes - just so the butter melts. Swirl the melted butter around in the tin to grease it and then pour the butter into a medium bowl.
  • To the bowl of melted butter, add the sugar, syrup, salt, egg, vanilla and banana. Beat the ingredients together and add the baking soda, flour, coconut and pecans. Fold in until evenly combined.
