CARROT BANANA BREAD
I received this from my mother-in-law and it's become my favorite banana carrot bread recipe. The carrots add a special touch. -Beulah Starkweather, Englewood, Florida

Steps:
- In a large bowl, combine the flour, sugar, baking soda, salt and cinnamon. In a small bowl, whisk the eggs, bananas and oil. Stir into dry ingredients just until moistened. Fold in carrots and pecans. Transfer to a greased 9x5-in. loaf pan. , Bake at 350° for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

Steps:
- Place carrot, apple, dried fruit, water, juice, sugar and cinnamon in pot.
- Bring to the boil, simmer 15 minutes.
- Set aside to cool.
- Fold in sifted flours and bananas.
- Spoon mixture into greased loaf tin 10 x 20 cms.
- Bake 180 C for 50 - 60 minutes or until cooked when tested.
- Turn onto wire rack to cool.
- Slice and serve with butter.

Steps:
- 1. Preheat oven to 350. Spray a 9 x 5 inch loaf pan with cooking spray.
- 2. Mix applesauce, sugar, the eggs or egg whites in a bowl. Mix well with mixer.
- 3. In another bowl, mix flour, salt, baking soda, baking powder and cinnamon. Mix into the above mixture.
- 4. Fold carrots and bananas into the batter. Pour batter into the prepared pan. Bake for 60 to 65 minutes or until a toothpick inserted in the center comes out clean. Makes 10 servings. Note: dust lightly with powdered sugar or spread with whipped low fat cream cheese and chopped nuts if desired. Cooking the Costco way
