CARROT-BANANA MUFFINS (OR BUNDT CAKE)



Carrot-Banana Muffins (Or Bundt Cake) image

This recipe is a cross between banana cake and carrot cake! It is a healthier version of a cake recipe from an old Bon Appétit Magazine (Oct. 1993). I replaced the oil with applesauce and it is still exceptionally moist and delicious. You could substitute some oil for the applesauce if you prefer. If making the cake, use a greased and floured 12-cup Bundt pan and bake for about 1 hour. Recipes makes 20 cupcakes.

2 cups all-purpose flour
1 tablespoon ground cinnamon
2 teaspoons baking soda
1/4 teaspoon salt
1 cup applesauce
1/2 cup sugar
1/2 cup firmly packed golden brown sugar
4 large eggs
2 cups finely grated carrots (about 2-3 carrots)
1 cup mashed ripe banana (about 3 bananas)
3/4 cup chopped pecans (optional)

Steps:

  • Preheat oven to 350°F Line or grease muffin cups.
  • Sift first 4 ingredients into medium bowl. Whisk applesauce, sugar, brown sugar and eggs in large bowl until well blended. Mix in dry ingredients. Add carrots, banana and pecans and blend well.
  • Divide batter among muffin cups and bake in middle of oven until puffed and a tester comes out clean, about 16-18 minutes. Cool muffins on a rack. (Let pan cool completely before baking the second batch or use a different pan.).

The banana makes these muffins delicious and moist, the carrots are wholesome and the dates perfectly sweet. They freeze well and are best kept in the fridge.

Number Of Ingredients 13

2 cups flour
1 teaspoon baking powder
2 teaspoons baking soda
1 cup bran flakes
½ cup brown sugar
½ teaspoon salt
1 cup milk
1 egg
1 teaspoon vanilla essence
1 cup banana, mashed
1 cup carrot, grated
1 cup pitted dates, finely chopped or mashed
125 grams butter, melted

Steps:

  • In a large bowl, sift the flour, baking powder and baking soda. Stir through the brown sugar, salt and bran flakes then make a well in the centre.
  • Finely chop or mash the dates. To mash the dates, place in a small saucepan with 1/4 cup of water. Bring the water to the boil then cook for 3-4 minutes, until they are soft and can be mashed easily with a fork.
  • Mix together the milk, egg, vanilla essence and mashed banana. Add to dry ingredients, with the dates, grated carrot and melted butter then stir until just combined.
  • Line a muffin tray with muffin cases and divide mixture evenly. Makes 12-16 muffins.
  • Bake at 220ºc for 18-20 minutes until golden. Remove from oven and leave in the muffin tray for a further 5 mintues then cool on a wire rack.

2 cups shredded carrots, (4 medium carrots)
⅓ cup chopped walnuts

Steps:

  • Preheat oven to 400 degrees F. Coat 18 standard-size (2 1/2-inch) muffin cups with cooking spray.
  • Place raisins in a small bowl and cover with hot water; let soak for 5 minutes. Drain and set aside.
  • Whisk whole-wheat flour, all-purpose flour, oat bran, wheat germ, baking powder, baking soda, salt, cinnamon and allspice in a large mixing bowl.
  • Whisk egg whites in a medium bowl until frothy. Add brown sugar (or Splenda) and whisk until it has dissolved. Mix in bananas, milk, oil and vanilla.
  • Make a well in the center of the dry ingredients. Add the wet ingredients; stir with a rubber spatula until just combined. Gently stir in carrots and the drained raisins. Scoop the batter into the prepared pan and sprinkle with nuts.
  • Bake the muffins until the tops spring back when touched lightly, 15 to 20 minutes. Let cool in the pan for 5 minutes. Loosen the edges and turn the muffins out onto a wire rack to cool slightly before serving.

1 1/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/2 cup granulated sugar
1/4 cup brown sugar
1/2 cup unsalted butter (melted and slightly cooled)
2 eggs (room temperature)
1 teaspoon vanilla extract
1 cup carrots (finely shredded (~2 medium))
3/4 cup mashed bananas (~2 large)
1/2 cup pecan chips

Steps:

  • Pre-heat oven to 350°F. Line approximately 16 muffin tins.
  • In a large mixing bowl, stir together dry ingredients: flour, baking powder, baking soda, salt, cinnamon, granulated sugar, and brown sugar. Set aside.
  • In a separate medium bowl, whisk together the melted butter (slightly cooled), eggs, and vanilla. Stir the wet ingredients into dry ingredients until just incorporated. The batter will seem extra thick at this point but don't worry, that's normal! Gently stir in the shredded carrot and mashed banana until fully combined, but don't overmix.
  • Scoop batter into muffin tins, approximately 2/3rds full. Top each muffin with approximately 1 1/2 teaspoons pecan chips, or as desired. Bake the muffins for 15-20 minutes until muffins bounce back when lightly touched and/or a toothpick comes out clean.
  • Let the muffins cool in the pan for 2-3 minutes before transferring to a wire rack. Serve once the muffins are cool enough to handle, yet still warm. Let any leftovers cool completely and store in an airtight container at room temperature for 1-2 days, or in the fridge.
