3 ripe bananas, mashed
1 tablespoon milk

1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan, preferably glass.
  • Mix flour, baking powder, baking soda, and salt in a bowl. Stir bananas, milk, and cinnamon in another bowl. Beat butter and sugar in a third bowl until light and fluffy. Add eggs to butter mixture, one at a time, beating well after each addition. Stir banana mixture into butter mixture. Stir in dry mixture until blended. Fold in chocolate chips until just combined. Pour batter into prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 70 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack before slicing.

2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
3/4 cup sugar
1/2 cup butter, melted (1 stick)
1/2 cup buttermilk, yogurt, or milk
2 eggs
1 teaspoon vanilla
2 ripe bananas, mashed (about 1 cup)
1/4 cup all-purpose flour
1/4 cup dark brown sugar
1/4 cup butter (1/2 stick)

Steps:

  • Preheat oven to 300 degrees. In a large bowl, combine the flour, baking powder, baking soda, salt, and sugar. Blend in the melted butter, mixing together until moist. Add 1/4 cup of the buttermilk and combine.
  • In a separate bowl, combine the other 1/4 cup of buttermilk with the eggs and blend into the flour mixture. Add the vanilla and mashed bananas. Beat for 1 minute. Place the batter in a greased 9-by-13-by-2-inch pan.
  • To make the topping, squeeze the flour, brown sugar, and butter together with your hands. Crumble the topping evenly over the batter. Bake for 35 to 40 minutes. When the cake is done, an inserted toothpick or fork should come out clean from the center.

Steps:

  • Preheat oven and prepare cake pan: Preheat your oven to 350 F degrees. Spray a 10 inch angel food cake pan with cooking spray. Set aside.
  • Combine dry ingredients: In a large bowl combine the flour, baking soda, baking powder, salt, walnuts and chocolate chips.
  • Combine wet ingredients: In another medium bowl mash the bananas using a fork or a potato masher. Add the sour cream, eggs, applesauce, vanilla extract and granulated sugar and whisk everything together.
  • Combine wet and dry: Pour the wet ingredients into the bowl with the flour and using a spatula mix everything together.
  • Prepare filling: In another small bowl combine all the filling ingredients together.
  • Assemble cake: Spread 1/3 of the batter into the prepared cake pan. Sprinkle 1/3 of the filling over the batter and repeat 2 more times to finish the rest of the batter and filling.
  • Bake: Place the cake pan in the oven and bake for about 1 hour or until a toothpick inserted in the center comes out clean. Cool the cake in the pan for 10 minutes then remove and continue cooling on a wire rack.
  • Make glaze: Meanwhile, make the glaze by whisking all the ingredients together in a small bowl, adding more milk if needed. The glaze should be smooth and thin enough to drizzle.
  • Drizzle with glaze, cut and serve: Drizzle the glaze over the cake, cut into slices and serve.

4 ripe bananas, peeled
250g caster sugar
2 eggs
140g softened butter
250g plain flour
2 tsp baking powder
100g walnut piece
100g chocolate chip

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line a 900g/2lb loaf tin with baking parchment. In a large bowl, mash together the bananas and the sugar with the back of a fork. Add the eggs and mix well with an electric hand whisk until fully incorporated, then add the butter and mix for a couple mins more to blend everything together. Sieve in the flour and baking powder and fold together with a spatula, then add the walnuts and chocolate chips. Give everything one final mix before tipping into the lined loaf tin.
  • Bake for 1 hr 5 mins or until a skewer inserted into the middle comes out clean. Leave to cool slightly in the tin, then turn out and serve cut into thick slices, either warm or at room temperature. Any uneaten cake will keep in an airtight container for up to 3 days.

After first trying this years ago my 2nd son declared -who needs banana bread?! - and this became our favorite choice for doing away with overripe bananas. The recipe originally had an optional chocolate glaze, I've always skipped it and just added a light dusting of confectionary sugar. This is a pretty sturdy cake which makes it great for picnics, potlucks and lunch bags - the same son recently took 1/2 a cake with him for the drive back to S.CA! An extra note - seeing some of the comments - this is not a tall cake it only rises a littel more than half way up the pan. Ovens are different - go with a shorter cooking time and check to see if needs more.

  • I always use a pan release spray and dust with the cocoa, and have almost never had a problem with the cake sticking. If greasing the pan - do it well and use a bit more cocoa as you would flour.

Steps:

  • Preheat oven to 375°F with rack in middle. Butter a 9-inch square cake pan.
  • Stir together flour, baking soda, and salt.
  • Beat together softened butter (1 stick) and 3/4 cup sugar in a medium bowl with an electric mixer at medium speed until pale and fluffy, then beat in eggs 1 at a time until blended. Beat in bananas, yogurt, and vanilla (mixture will look curdled).
  • With mixer at low speed, add flour mixture and mix until just incorporated.

2 eggs
3/4 cup sugar (try turbinado, which has molasses)
1/2 cup applesauce (flavored OK)
1 teaspoon vanilla

1 1/3 cups whole wheat pastry flour (all-purpose OK)
1 teaspoon baking soda
1/4 cup mini chocolate chip
2/3 cup walnuts, chopped

Steps:

  • Mash bananas; push to side, leaving a space along bowl's side.
  • Beat eggs along empty side of bowl, then combine with bananas.
  • Stir in sugar, applesauce, vanilla and salt.
  • Shake lightly and evenly across surface of batter, the flour and soda; mix just enough to incorporate.

  • In a medium bowl, whisk together the flours, salt and baking soda.
  • In a large bowl, use an electric mixer to beat the butter and sugars; mix on medium speed until pale and fluffy. Reduce the speed to low and add the egg and vanilla; mix until combined. Mix in the banana. Add the flour mixture; mix just until combined. Stir in the oats, chocolate chips and walnuts.

4 oz unsalted butter (brown)
1 cup brown sugar (lightly packed)
1 large egg (room temperature)
1 cup mashed bananas (about 2 medium bananas)
1 ½ teaspoon pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
1 ½ teaspoon ground cinnamon
½ teaspoon kosher salt
1 cup walnuts (toasted, roughly chopped)
1 cup semisweet chocolate chips
Extra chocolate chips and/or whole walnuts for garnish

Steps:

  • To make brown butter, heat unsalted butter in a light color saucepan over medium heat. Once the butter melts, it will start getting foamy. Once the foam subsides, you'll see clear bubbles. Continue cooking and stirring constantly to keep the butter from burning. Once the butter smells nutty and turns a caramel color, turn off the heat. This process will take about 7 - 9 minutes. Allow brown butter to cool to room temperature before using.
  • Preheat the oven to 350°F.
  • Add brown sugar, mashed bananas, egg, vanilla extract and brown butter to a large mixing bowl and beat with a whisk until thoroughly combined.
  • Sift the flour, baking soda, baking powder and cinnamon together in another bowl. Stir in the salt, mix with a whisk to evenly distribute. Add the dry ingredients mixture to the wet ingredients mixture, mix with a spatula until the cookie dough comes together. Stir in the chocolate chips and chopped walnuts.
  • Use a medium cookie scoop to portion the dough. For smaller cookies, use 1 scoop of dough, this will yield about 42 cookies. For larger cookies, add two scoops of dough on top of each other to form one large cookie, this will yield about 21 cookies. Garnish with extra chocolate chips and/or whole walnuts if desired.
  • Bake small cookies for 10 minutes and large cookies for 13 minutes.

1 tsp baking soda
¼ tsp salt
1 egg
125 gr granulated sugar
100 gr brown sugar
120 ml oil
2 tbsp milk (or water for dairy free cake)
0,5 tsp vanilla
3 ripe bananas
40 gr chocolate chips (omit or use dairy free chocolate chips)
30 gr walnuts

Steps:

  • Preheat oven to 180° Celsius.
  • Line a 25 cm square baking pan (see notes) with parchment paper.
  • Make sure that the parchment paper is hanging over the sides of the pan. This will help you easily remove the banana cake after baking.
  • Beat an egg in a large bowl.
  • Add white/brown sugar, oil, milk and vanilla to the egg and mix with a big spoon until combined.
  • Finely mash the bananas and add together with dry ingredients (flour, baking soda and salt) to the batter. Mix until combined. You will have a thick banana batter by now.
  • Fold in the chocolate chips and walnuts.
  • Pour the mixture into the baking pan.
  • Bake for around 40 minutes (see notes) in the middle of the oven until a knife inserted in the center of the banana cake comes out clean.

4 ripe bananas
1 1/2 tablespoons baking soda
1/4 teaspoon vanilla
2 eggs
1 cup plus 1 tablespoon sweet butter, room temperature
1 cup white sugar
1/2 cup light brown sugar
2/3 cup half and half
2 1/2 cups flour
Pinch of sea salt
Pinch of cayenne
1/2 cup raw walnuts
1/2 cup semi-sweet chocolate chips

Steps:

  • Melt 1 tablespoon of butter and paint the inside of a 9 x 3 round cake pan, then put the pan in the freezer for 30 minutes. (The frozen butter prevents the batter from sticking to the pan.) On a cookie sheet bake the walnuts in a 350 degree oven for 20 minutes, turning every 5 minutes or so; let cool, roughly chop, and set aside.
  • In a bowl mash the bananas with a fork, add the baking soda and vanilla. Stir well and set aside. In a mixer use the whisk to cream together the softened butter and both sugars. Add the eggs, mashed bananas, half and half and whisk until blended. Mix in the flour half a cup at a time, being careful not to over-beat. Remove the bowl from the mixer. Use a rubber spatula to blend in the walnuts and chocolate chips. Pour the batter into the buttered cake pan; it will only fill the pan half-way.
  • Bake the cake in a 350 oven for 60-70 minutes, turning the pan every 20 minutes so the cake cooks evenly. Test to see if the cake is done by inserting a wooden skewer. If the top is browning too quickly, lightly lay a sheet of aluminum foil over the top. When the skewer comes out clean, take the cake out of the oven and place it on a wire rack for 30 minutes. Remove the cake from the pan, putting it back on the wire rack to finish cooling.
  • Just before serving dust the top with powdered sugar and shaved chocolate. Serve warm or at room temperature with vanilla ice cream or freshly whipped cream.

Steps:

  • Preheat oven to 350°F. Butter and flour 9x5x2 1/2-inch metal loaf pan. Whisk first 4 ingredients in medium bowl to blend. Combine chocolate chips and walnuts in small bowl; add 1 tablespoon flour mixture and toss to coat.
  • Beat butter in large bowl until fluffy. Gradually add sugar, beating until well blended. Beat in eggs 1 at a time. Beat in mashed bananas, lemon juice and vanilla extract. Beat in flour mixture. Spoon 1/3 of batter into prepared pan. Sprinkle with half of nut mixture. Spoon 1/3 of batter over. Sprinkle with remaining nut mixture. Cover with remaining batter. Run knife through batter in zigzag pattern.
  • Bake bread until tester inserted into center comes out clean, about 1 hour 5 minutes. Turn out onto rack and cool.

A dense, moist and flavourful banana bread bursting with chocolate chips and walnuts. Great as an on-the-go breakfast, snack or even dessert (topped with ice cream, of course).

1½ cups all-purpose flour
1½ tsp baking powder
½ tsp salt
1 tsp cinnamon
½ tsp nutmeg
⅔ cup sugar
¾ stick of butter, room temperature
2 large eggs
3 ripe bananas, mashed
1 tsp vanilla
1 cup chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat oven to 350°. Grease a loaf pan; set aside.
  • In a small bowl, whisk together flour, baking powder, salt, cinnamon and nutmeg; set aside.
  • In a large mixing bowl, beat together sugar and butter until fluffly. Add in eggs, bananas and vanilla, beating until smooth.
  • Add dry ingredients to wet ingredients in 3 parts, mixing until smooth after each addition. Fold in chocolate chips and walnuts.
  • Pour batter into prepared loaf pan and bake for about 1 hour until a toothpick inserted in the centre comes out clean. Let cool for 15 minutes in pan, then transfer to a wire rack to cool completely.
