This super simple banana bread is made with over-ripe bananas and orange juice - it's a bright, uniquely flavored quick bread that everyone loves!

1 1/2 cups granulated sugar
1/4 cup butter (melted)
2 eggs
3 bananas (very ripe - mashed (1 1/4 cups approximately))
3/4 cup orange juice
3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon orange zest
1/2 teaspoon salt
1 cup walnuts (chopped)
1 cup Confectioner's sugar (powdered sugar)
1/4 teaspoon orange zest
1 to 2 tablespoons orange juice

Steps:

  • Preheat oven to 325F
  • Melt butter and let it cool so that it's comfortably warm to the touch.
  • Combine the sugar, melted butter, and eggs and mix well.
  • Stir in bananas and orange juice.
  • Combine the dry ingredients and add to banana mixture - mix gently just until moistened.
  • Stir in walnuts.
  • Pour into two greased 8x4-in. loaf pans.
  • Bake at 325 for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
  • Cool for 10 minutes in pan then remove from pans to a wire rack to cool completely.
  • Mix glaze ingredients together until spreadable and then spread on warm bread.

Steps:

  • Preheat oven to 350 degrees F. Combine flour, sugar, baking powder and salt in a medium mixing bowl. Whisk together egg, bananas, oil and vanilla. Add to flour mixture and stir until flour is moistened. Fold in walnuts. Spray 8-1/2 x 4-1/2 loaf pan with cooking spray. Pour batter into prepared loaf pan.
  • Bake for 35 to 40 minutes or until puffed and golden brown. A wooden pick inserted in the center should come out clean. Transfer loaf pan to a rack to cool for 10 minutes before turning out of pan. Serve warm or store in an air-tight container.

3 medium ripe bananas, mashed (about 1-1/4 cups)

6 tablespoons unsalted butter, melted
1 1/2 cups all-purpose flour
2 large bananas, peeled
1/2 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 tablespoon orange zest
1/2 cup toasted and chopped walnuts
2 large eggs
3/4 cup firmly packed light brown sugar
1/2 cup whole milk

Steps:

  • Preheat oven to 350°F Butter and flour a 9X5 loaf pan.
  • In a small bowl using a fork, mash the bananas. You should have 11/3 cups. In a separate bowl, stir together the all purpose flour, whole-wheat flour, baking powder baking soda, salt, nutmeg, orange zest and nuts, set aside.
  • In a large bowl, whisk the eggs until blended. Stir the brown sugar, butter, and milk. Add the dry ingredients in 3 batches alternatively with the mashed bananas in 2 batches, beginning and ending with the dry ingredients, just until moistened. Be careful not to overmix!
  • Pour the batter into the prepared pan smoothing the top with a rubber spatula. Bake for 55-60 minutes or until toothpick inserted into center comes out clean. If the top begins to brown too much, cover with a sheet of aluminum foil the last 15 minutes of baking.
  • Transfer to a wire rack and let cool in the pan for 5 minutes. Turn out into wire rack and let cool completely, before slicing.

1 1/4 cups unbleached all-purpose flour
1 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs, at room temperature
1/2 teaspoon vanilla extract
1/2 cup unsalted butter, at room temperature, plus more for preparing the pan
1 cup sugar
3 very ripe bananas, peeled, and mashed with a fork (about 1 cup)
1/2 cup toasted walnut pieces

Steps:

  • Sift the flour, baking soda, and salt into a medium bowl, set aside. Whisk the eggs and vanilla together in a liquid measuring cup with a spout, set aside. Lightly brush a 9 by 5 by 3-inch loaf pan with butter. Preheat the oven to 350 degrees F.
  • In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy. Gradually pour the egg mixture into the butter while mixing until incorporated. Add the bananas (the mixture will appear to be curdled, so don't worry), and remove the bowl from the mixer.
  • With a rubber spatula, mix in the flour mixture until just incorporated. Fold in the nuts and transfer the batter to the prepared pan. Bake for 55 minutes or until a toothpick inserted into the center of the bread comes out clean. Cool the bread in the pan on a wire rack for 5 minutes. Turn the bread out of the pan and let cool completely on the rack. Wrap in plastic wrap. The banana bread is best if served the next day.

I developed this bread based on a basic banana bread recipe from King Arthur Flour, but made a few changes, such as the addition of orange juice and grated orange peel. I also adjusted the leavening to get a nice high rise. I love using the Tea Bread pan I got from King Arthur for this recipe. Chop the nuts very fine. I used pecans, but walnuts are also nice in this bread. Be sure to use the correct amount of bananas. It took 5 medium bananas this time for me to get 2 cups mashed.

  • In your mixing bowl, with paddle attachment, mash the bananas. Mix in the oil, sugar, eggs, orange juice, and 1 teaspoon grated orange zest.
  • Combine the flours, soda, baking powder, salt, and nuts in a medium bowl and stir well by hand. Add in two parts to the liquid ingredients, stirring after each addition on low speed.
  • Stir together TOPPING ingredients in a small bowl until well blended. Sprinkle half on the bottom of the prepared loaf pan. Scoop the batter into the prepared pan, and sprinkle the remaining topping mixture evenly over the top of the batter.
  • Bake the bread for 65-70 minutes, until a tester inserted in center comes out clean. Cool in pan 10 minutes, then turn out onto rack and finish cooling. Slice when completely cool.
