2 tablespoons unsalted butter, melted, plus 1 teaspoon unsalted butter, softened, for pan
1/2 cup whole-wheat flour
3/4 cup all-purpose flour
1/4 cup ground golden flaxseed (from about 2 tablespoons whole)
3/4 teaspoon coarse salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 large egg, plus 1 large egg white
1/2 cup light-brown sugar
1 1/2 teaspoons pure vanilla extract
3/4 cup mashed very ripe bananas (about 2 medium bananas)
1/2 cup walnuts (about 1 3/4 ounces), toasted and coarsely chopped

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-5-by-3-inch loaf pan, and set aside. Whisk together the flours, flaxseed, salt, baking powder, and baking soda in a medium bowl, and set aside.
  • Put egg and egg white in the bowl of an electric mixer fitted with the paddle attachment, and mix on medium-low speed until well combined, about 2 minutes. Add melted butter, sugar, vanilla, and bananas, and mix until combined. Add the reserved flour mixture, and mix on low speed until well incorporated, about 10 seconds. Stir in walnuts.
  • Pour batter into buttered pan. Bake until golden brown and a cake tester inserted into the center comes out clean, about 35 minutes. Let cool slightly in pan on a wire rack. Invert bread to unmold; reinvert, and let cool completely on rack.

3 bananas, mashed
¼ cup vegetable oil
½ cup white sugar
2 eggs
1 ½ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¼ cup flax seed
½ cup chopped pitted dates

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan. Use an electric coffee grinder or food processor to grind 1/2 cup flax seed; set aside.
  • In a large mixing bowl, beat together banana, oil, sugar and eggs. In a separate bowl, mix together flour, baking powder, baking soda, salt, ground flax seed and 1/4 cup whole flax seed. Gradually stir flour mixture into banana mixture. Fold in dates. Spoon batter into prepared loaf pan.
  • Bake in preheated oven for 55 to 60 minutes, or until a toothpick inserted into the loaf comes out clean.

2 -3 medium very ripe bananas
1/2 cup chopped walnuts
1/4 cup light brown sugar (packed)

Steps:

  • Preheat oven at 350°F
  • Grease a 8-1/2 x 4-1/2-inch bread pan; set aside.
  • Mix together flour, flaxseed meal, sugar, baking powder, baking soda and salt in a bowl.
  • In a separate bowl, beat together eggs and oil.
  • Add dry ingredients and mashed bananas alternately to egg and oil mixture, stirring until dry ingredients are moistened. Pour into prepared pan.
  • Combine topping ingredients and sprinkle over batter in loaf pan. Pat down firmly into batter or swirl topping into batter with knife.
  • Bake 55-60 minutes.

1/2 teaspoon fine salt
2 large eggs, at room temperature
1/2 teaspoon vanilla extract
1/2 cup unsalted butter, at room temperature, plus more for preparing the pan
1 cup sugar
3 very ripe bananas, peeled, and mashed with a fork (about 1 cup)
1/2 cup toasted walnut pieces

Steps:

  • Sift the flour, baking soda, and salt into a medium bowl, set aside. Whisk the eggs and vanilla together in a liquid measuring cup with a spout, set aside. Lightly brush a 9 by 5 by 3-inch loaf pan with butter. Preheat the oven to 350 degrees F.
  • In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy.   • Add the coconut oil, honey, vanilla and bananas and process until as smooth as possible. (If there are a few lumps of banana, that’s fine.)
  • Pour the batter into the prepared tin (pan) and bake for 40 minutes. Reduce the oven temperature to 160°C/325°F/gas mark 3, rotate the tin (pan) and bake for a further 30-40 minutes, until a skewer inserted in the centre comes out just clean and the top of the loaf is dark golden brown and firm to the touch.
