1 1/3 cups all-purpose flour
1/2 cup Splenda granular, sugar substitute
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 tablespoon canola oil
1/3 cup low-fat buttermilk
2 teaspoons vanilla extract
1 1/4 cups mashed bananas
1/4 cup walnuts, chopped

Steps:

  • Preheat oven to 350 degrees and spray 9" x 5" loaf pan with cooking spray.
  • Combine dry ingredients and set aside.
  • In another bowl, combine the rest of the ingredients except the walnuts.
  • Pour the wet ingredients into the dry ingredients and mix well.
  • Fold in the walnuts and stir until just mixed.
  • Pour batter into pan and bake 45-55 minutes or until center is set.

I worked with a few recipes until I came up with this one... It is a recipe that evolved into this. Its usually gobbled up pretty quick and last xmas I gave out loaves that were all the rave. I hope you'll try it and enjoy it also. It's not "low sugar" but rather "reduced sugar".

7 bananas
1 cup butter or 1 cup margarine
2 cups sugar (use splenda in place of sugar. I had to write sugar because recipezaar doesn't recognize splenda. Th)
4 eggs
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon vanilla
2 teaspoons sugar
1 cup walnuts (optional)

Steps:

  • 1. Preheat to 350. Mash up all the bananas with a potato masher or fork.
  • 2. cream together butter and Splenda.
  • 3. add creamed butter/splenda mixture to the bananas and add eggs.
  • 4. Mix it all up well.
  • 5. Gradually add in flour, salt and soda, stirring until well combined.
  • 6. Mix in vanilla.
  • 7. Pour into 2 greased and floured bread loaf pans.
  • 8. Sprinkle the tops of each loaf with 1 tsp of sugar each.
  • 9. Bake at 350 degrees for one hour.
  • 10. Let cool. Remove. Serve!

½ cup chopped pecans (optional)

Steps:

  • Preheat oven to 325°F. Spray a 9" x 5" loaf pan with cooking spray.
  • In a large bowl, blend together eggs, buttermilk, applesauce, and bananas.
  • In a separate bowl, sift together flour, baking soda, and salt. Mix in Splenda Stevia Sweetener.
  • Stir dry ingredients into the banana mixture, then stir in pecans. Spread batter into prepared pan.
  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.

3 really ripe bananas, mashed (this is about 1 ¼ cup)
½ cup Splenda® Monk Fruit Granulated Sweetener
2 teaspoons pure vanilla extract
2 cups all-purpose flour
2 teaspoons cinnamon
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
½ cup chopped walnuts

Steps:

  • Preheat oven to 350ºF.
  • In a small bowl, whisk together dry ingredients: flour, cinnamon, salt, baking powder, baking so-da, and walnuts.
  • In a medium bowl, beat eggs, applesauce and mashed bananas with a whisk or a fork. Whisk in sweeter and vanilla. Gently add all of the dry ingredients, and using a spatula, stir just until com-bined, being careful not to over mix (batter will still be lumpy).
  • Pour batter into a bread pan sprayed generously with nonstick cooking spray. Bake for 1 hour, or until a toothpick comes out clean in the middle.
  • Remove from pan and let cool. Serve banana bread slices warm. Enjoy!
