Banana bread waffles are fluffy and soft with big banana bread flavor. They have a hint of cinnamon and brown sugar, and taste delicious drenched in maple syrup.

1 1/2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
3/4 cup milk (, buttermilk, 1% or 2%)
2 tablespoons brown sugar
1 tsp vanilla extract
2 large eggs
3 tablespoons melted butter (, cooled)
3/4 cup mashed bananas (, about 2 medium bananas)

Steps:

  • Heat the waffle iron according to manufacturers instructions.
  • In a large bowl whisk together the flour, baking powder, baking soda, cinnamon and salt.
  • In a medium bowl whisk together the milk, brown sugar, vanilla extract, eggs and melted butter. Stir in the mashed bananas.
  • Gently fold the wet ingredients into the flour mixture, being careful not to over mix.
  • Lightly grease the waffle maker, and pour about 1/4 cup of batter into each waffle cavity. (Or follow waffle iron instructions)
  • Cook for 4-6 minutes or until the edges are golden.

3 bananas (ripe)
1 stick butter (melted)
1/2 cup brown sugar
1/2 cup white sugar
2 eggs
1 tsp. vanilla extract
1/4 cup sour cream
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. cinnamon
1/2 tsp. salt

Steps:

  • Peel 3 ripe bananas and place them in a bowl. Mash with a fork until they reach a smooth consistency.
  • Combine 1 stick melted butter with 1/2 cup white sugar in a bowl. Blend using a whisk or electric hand mixer until creamy and smooth.
  • Thoroughly beat 2 eggs in a small bowl, then add them to the bowl with the butter mixture.
  • Add 1 tsp. vanilla extract and mix well. Finally, stir in mashed bananas and 1/4 cup sour cream, then mix together thoroughly.
  • In a separate bowl, sift 2 cups flour.
  • Mix with 1 tsp. baking soda, 1 tsp. baking powder, 1/4 tsp. cinnamon, 1/2 tsp. salt, and 1/2 cup brown sugar.
  • Add your dry ingredients to your wet ingredients and mix together until a smooth batter.
  • Spray the inside of your waffle maker with cooking spray. Take 1 large spoonful of batter (or more if using a regular size waffle maker) and place in the center of the waffle maker.
  • Press down and hold the lid for 2-3 minutes or until golden brown. Serve with your favorite waffle toppings, and enjoy!

Forget the loaf pan; we used the waffle iron to make fresh, warm banana bread in a fraction of the usual baking time. If you like your bread a little chunkier, go easy on your bananas when you're mashing them.

1 1/4 cups all-purpose flour
3/4 cup sugar
1/2 cup chopped walnuts
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon fine salt
1 cup smashed banana (2 to 3 small bananas)
1/2 cup vegetable oil, plus more for brushing waffle iron
1/2 cup sour cream or Greek yogurt
1 teaspoon pure vanilla extract
2 large eggs
Soft unsalted butter and confectioners' sugar, for dusting, optional

Steps:

  • Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F (to keep cooked waffles warm). Whisk together the flour, sugar, walnuts, baking powder, baking soda, cinnamon, nutmeg and salt in a large bowl. Whisk together the banana, oil, sour cream, vanilla and eggs in another bowl. Fold the banana mixture into the flour mixture until just combined (it's ok if there are lumps).
  • Lightly brush the top and bottom of the waffle iron with oil. Fill each section about three-quarters of the way full (there should still be some waffle iron showing). Close and cook until the waffles are golden brown, 4 to 6 minutes. Keep the waffles warm in the oven or covered with foil on a plate while you cook the remaining batter.
  • Spread with butter and dust with confectioners' sugar if you'd like.

Nonstick cooking spray, for the pan and waffle iron
5 tablespoons unsalted butter
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon kosher salt
1/8 teaspoon ground cinnamon
3 overripe bananas
1/4 cup granulated sugar
1/4 cup light brown sugar
1 large egg, beaten
Bananas Foster Sauce:
1 stick (8 tablespoons) unsalted butter, cut into pieces
3/4 cup light brown muscovado sugar
1/4 cup dark rum
1/4 cup heavy cream
2 large ripe bananas, peeled and sliced into 1/2-inch pieces on the bias

Steps:

  • For the banana bread: Put a rack in the lower third of the oven and preheat to 350 degrees F. Spray a 9-inch loaf pan with nonstick cooking spray.
  • Put the butter in a small saucepan over medium heat and cook until the butter turns a deep golden brown. Remove and let cool slightly.
  • Sift the flour, baking soda, salt and cinnamon into a small bowl. Mash the bananas in a medium bowl, and then whisk in the granulated and brown sugars, egg and cooled brown butter. Add the flour mixture and whisk until just combined; don't over-mix.
  • Scrape the batter into the prepared pan and bake on the lower rack of the oven until a toothpick inserted into the center comes out clean, 45 to 55 minutes. Let cool on a baking rack in the pan for 15 minutes. Remove from the pan and let cool completely on the rack. Once completely cool, wrap and keep overnight.
  • For the bananas Foster sauce: Melt the butter in a skillet over high heat. Stir in the muscovado sugar and cook, stirring, until melted. Stir in the rum and cook, stirring, until the rum is almost completely evaporated. Whisk in the cream and cook until just heated through. Add the bananas and cook for 1 minute longer. Keep warm while you make the waffles.
  • For the waffles: Heat a waffle iron according to the manufacturer's instructions. Spray with nonstick spray. Slice the banana bread about 1 inch thick, lay the slices on the waffles grates (you may be able to fit just 3 in comfortably), close the cover and cook, pressing if necessary to squeeze the bread, until golden brown and slightly crisped, 40 seconds to 1 minute. Repeat with the remaining banana bread slices. Serve with some of the bananas Foster sauce spooned over the top.

Steps:

  • Preheat waffle iron. In a large mixing bowl, sift together flour, baking powder, salt and nutmeg. Stir in milk and eggs until mixture is smooth.
  • Spray preheated waffle iron with non-stick cooking spray. Pour two tablespoons of the waffle batter onto the hot waffle iron. Place two slices of banana on top of the batter and then spoon another two tablespoons of batter on top of the banana. Cook until golden brown. Serve hot.
