BANANA BREAD MUFFINS LOW CARB LOW SUGAR
I just made these thought I would try something and it turned out good. Even my husband who doesn't have special dietary needs said they tasted good. Even if sugar isn't not a worry for you just swap out the Spenda for regular sugar. I was impressed with the almond flour, I added extra baking soda because all of the reading on almond flour said it does not raise well and my muffins did well.

Steps:
- Mash banana add egg, Splenda, unsweetened applesauce, vanilla, cinnamon, baking soda, baking powder, mix well.
- Add in almond flour 1/2 a cup at a time mix well then add the all purpose flour.
- Take muffin pan put in liners or spray with non stick spray spoon in 1/4 cup mixture into each muffin slot. Bake at 350°F for 25 to 30 minutes. Enjoy.
LOW SUGAR BANANA BREAD
Don't let the fact that there is only 1 tablespoon of sugar fool you! This banana bread is super moist and has just the right amount of sweetness. Use very very ripe bananas for best results.

Steps:
- Mix mashed bananas and sugar until the sugar has dissolved.
- Beat eggs and add to bananas, blending well.
- Sift dry ingredients and mix in with banana mixture.
- If desired fold in nuts or chocolate chips.
- Pour into greased 9x5 loaf pan and bake at 325 degrees for ~50 minute.
KETO BANANA BREAD
Steps:
- Preheat the oven to 350F. Line a 9-inch loaf pan with parchment paper and set aside.
- In a small mixing bowl, combine almond flour, coconut flour, baking powder, cinnamon, and salt; mix well.
- In a separate larger bowl, combine butter, cream cheese, erythritol, and stevia, mixing until smooth. Add in the eggs, one at a time, then milk and banana extract, mixing until well combined. The mixture will look curdled, but that's alright.
- Add dry mixture to wet and mix well, until combined. Fold in nuts (if using), then transfer to the lined pan. Cover the pan completely in aluminum foil.
- Bake the banana bread for 45-50 minutes, removing the tin foil around the 40 minute mark, to allow top to brown. Remove from the oven once the center is mostly set.
- Let the bread cool in the pan completely, before slicing.
