- Preheat oven to 325 degrees F (165 degrees C). Line 12 muffin cups with papers liners.
- Beat sugar and butter with an electric mixer in a large bowl until smooth and creamy. Beat first egg into the butter until completely blended; beat in the vanilla extract with the remaining egg.
- Mix bananas, milk, and allspice together in a separate bowl; stir into the creamed butter mixture. Whisk flour, baking powder, and baking soda together in a separate bowl; slowly stir into banana-butter mixture until batter is just mixed. Fold oats and walnuts into batter. Scoop batter into the muffin cups using a large ice cream scoop.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 25 to 35 minutes.

- Combine flour, oats, sugar, baking powder, soda, and salt.
- In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.
- Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes.

WHOLE WHEAT BANANA BLUEBERRY MUFFINS

- Preheat oven to 350°F (180°C). Line a muffin tin with paper liners or grease. Set aside.

- In a separate bowl, stir together maple syrup, melted butter, mashed bananas, and vanilla extract.
- Add the wet ingredients to the dry ingredients; stir until just combined (be careful not to over-mix the batter). The batter will be slightly lumpy, which is fine!

BLUEBERRY BANANA NUT OATMEAL BREAD
I'm pretty sure I got this recipe from Southern Living, most likely back in the 1980s. There are similar ones already post but I love this one the very best. The flavors of the bananas and blueberries are balanced and the bread is not icky-sweet. I've made both a loaf as well as muffins from this recipe, which doubles easily. Also freezes well...

Steps:
- Cream shortening and sugar till fluffy.
- Add eggs one at a time, mixing well.
- Stir in banana.
- Combine remaining ingredients, stirring gently.
- Add dry ingredients to wet ingredients, mixing just until moistened.
- Turn into a greased and floured loaf pan.
- Bake at 350*F for 50-55 minutes until toothpick comes out clean.
- Cool in pan for 10 minutes; remove from pan and cool on wire rack.
BANANA, BLUEBERRY, OAT, AND WALNUT MUFFINS
Steps:
- 1) Preheat oven to 400°. Grease and flour muffin tins. 2) Mix egg and sugar until light and thick, about 5 minutes. 3) Add mashed banana, yogurt, oil, vanilla, and honey. Mix well. 4) In a separate bowl, combine the flour, oats, baking powder, baking soda, salt, cinnamon, and nutmeg. Mix thoroughly. 5) Fold in dry ingredients to the wet mixture. Continue to fold carefully until mixture is homogeneous. 6) Fold in dried blueberries and 3/4 of the chopped walnuts. 7) Distribute batter evenly, and top each muffin with remaining walnut crumbles. 8) Place in oven for about 20 minutes, until tester comes out clean. 9) Using knife, remove muffins from tin and let cool for 10 minutes. 10) Serve warm or at room temperature.
