1/2 cup butter (softened)
1 1/2 cups white sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup mashed ripe bananas (2-3 large bananas)
1 8 ounce package cream cheese
1 cup white sugar
1/8 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups heavy whipping cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10 x 15 inch jellyroll pan.
  • In a large bowl, cream together the butter and sugar until smooth.
  • Beat in the eggs, one at a time, then stir in the sour cream and vanilla.
  • Combine the flour, baking soda and salt; stir into the batter.
  • Mix in the mashed banana. Spread evenly into the prepared pan.
  • Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted into the center comes out clean.
  • Allow bars to cool completely before frosting with the cream cheese frosting
  • In a small bowl beat whipping cream until stiff peaks form; set aside.
  • In a large bowl combine cream cheese, sugar, salt and vanilla.
  • Beat until smooth, and then fold in whipped cream.
  • Frost the cooled bars and serve immediately or store them in an air tight container in refrigerator.

1 cup mashed ripe banana (about 3 medium bananas)
1/3 cup coconut sugar
3 tablespoons unsalted butter (melted and cooled to room temperature)
2 tablespoons unsweetened almond milk (or milk of choice)
1 large egg
1 teaspoon pure vanilla extract
3/4 cup white whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 teaspoon kosher salt
1/3 cup plus 2 tablespoons dark or semi-sweet chocolate chips (divided)

Steps:

  • Place a rack in the center of your oven and preheat the oven to 350 degrees F. Line an 8x8 inch baking pan with parchment paper so that the parchment overhangs two opposite sides like handles. Lightly coat with nonstick spray and set aside.
  • Mash the bananas in a mixing bowl. Double check the measurement to ensure you have 1 cup (less will make the bars dry; more and they may not bake all the way through). Stir in the coconut sugar, butter, milk, egg, and vanilla until well blended.
  • In a separate bowl, stir together the flour, baking soda, cinnamon, nutmeg, and salt. Add the dry ingredients to the bowl with the wet ingredients. With a wooden spoon or spatula, stir to combine, stopping as soon as the flour disappears. Fold in 1/3 cup chocolate chips.
  • Scrape the batter into the prepared baking pan and smooth the top. Sprinkle the remaining 2 tablespoons chocolate chips on top. Bake for 16 to 20 minutes, or until a toothpick inserted in the center comes out clean with just a few moist crumbs clinging to it. 1/2 cup granulated sugar
1 cup very ripe mashed banana
1 teaspoon pure vanilla extract
1/3 cup canola oil (or melted coconut oil)
2 large eggs, at room temperature
1 cup all-purpose flour
1 teaspoon baking powder
1 ⁄2 teaspoon baking soda
3/4 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1 ⁄4 teaspoon salt
8 ounces full-fat cream cheese, VERY soft
2 tablespoons unsalted butter, VERY soft
2 teaspoons pure vanilla extract
2 cups confectioners' sugar, sifted

Steps:

  • Preheat oven to 350 degrees (F). Line a 9x13 inch pan with parchment paper, allowing two of the sides to overlap; spray parchment paper lightly with non-stick spray and set aside.
  • In a large bowl add the light brown sugar, granulated sugar, ripe mashed bananas, vanilla, oil, and eggs; beat well with a whisk to combine. Reduce the speed to low and gradually add the sifted confectioners' sugar. Once all of the sugar has been added beat on high-speed for 1-2 minutes. Once the banana bars have completely cooled, gently spread the frosting over the bars, and decorate with banana slices, if desired. Then slice and serve! Store these bars in the fridge, covered, for up to 2 days. Not that I think they'll last that long ;)

Steps:

  • While the bars are baking, prepare the frosting. In a mixing bowl, combine the butter, powdered sugar, dark brown sugar, salt and vanilla. Mix well. Gradually pour in the maple syrup while mixing. Mix on medium speed until frosting is fluffy and smooth.
  • When bars are cooled, spread frosting evenly over the top. Refrigerate until ready to serve and cut into small squares. Store in a sealed container in the refrigerator.
