Time 1h25m

Yield 30

Number Of Ingredients 19

2 ¾ cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
½ teaspoon salt
1 cup butter, melted
2 cups white sugar
4 eggs
1 cup plain Greek yogurt
1 ½ teaspoons vanilla extract
3 large very ripe bananas, mashed
2 apples, cubed
¾ cup chopped walnuts
½ cup packed brown sugar
½ cup white sugar
1 tablespoon ground cinnamon
¼ cup all-purpose flour
3 tablespoons butter, softened
banana slices for garnish
apple slices for garnish

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease two 7x3-inch loaf pans.
  • In a bowl, whisk together 2 3/4 cups of flour, 2 teaspoons of cinnamon, the baking soda, and salt until thoroughly combined. In a separate mixing bowl, beat the melted butter with 2 cups of sugar until smooth, and mix in the eggs, one at a time, followed by the Greek yogurt and vanilla extract. Stir in the flour mixture just until incorporated.
  • Fold in the bananas, apples, and chopped walnuts until combined; do not overmix. There should be small chunks of banana visible in the batter. Pour half the batter into each prepared loaf pan.
  • Mix the brown sugar, 1/2 cup of white sugar, 1 tablespoon of cinnamon, 1/4 cup of flour, and 3 tablespoons of softened butter together in a bowl until the mixture resembles coarse crumbs. Sprinkle half the crumb topping over each loaf. Garnish each loaf with banana and apple slices.
  • Bake in the preheated oven for 30 minutes, then remove and cover each pan with aluminum foil. Return to oven, and bake an additional 15 or 20 minutes, or until a toothpick inserted into the center of the loaves comes out clean. Allow to cool before serving.

BANANA APPLE BREAD (FROM THE SWEET MELISSA BAKERY)

Banana Apple Bread (From the Sweet Melissa Bakery) image

This is an excellent, moist banana bread by itself but the addition of caramelized brown sugar apples make this truly outstanding. You can add nuts or currants. Be sure to use super-ripe bananas (the blacker the better). The banana bread keeps well wrapped in plastic wrap at room temperature for up to 3 days. For longer storage, freeze well wrapped in plastic wrap and then aluminum foil for up to 3 weeks. Defrost (still wrapped) at room temperature. The recipe was printed in "The Sweet Melissa Baking Book: Recipes from the Beloved Bakery for Everyone's Favorite Treats" by Melissa Murphy.

Time 1h25m

Yield 1 loaf, 16 serving(s)

Number Of Ingredients 17

2 tablespoons unsalted butter
3 tablespoons firmly packed dark brown sugar
2 granny smith apples, peeled, cored, and cut into 1/2-inch pieces
1/2 teaspoon ground cinnamon
1/2 teaspoon pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon freshly ground nutmeg
1/2 teaspoon kosher salt
8 tablespoons unsalted butter (1 stick)
1 cup granulated sugar
2 large eggs
1/4 cup fresh orange juice
1 teaspoon pure vanilla extract
1 1/4 cups very ripe mashed bananas (2 to 3)

Steps:

  • Before you start: Position a rack in the center of your oven and preheat the oven to 350°F Lightly butter and flour a 1 1/2-quart loaf pan.
  • To make the apples: Preheat a medium skillet over medium-high heat. Add the butter and brown sugar and heat until bubbling. Add the apples and cinnamon and sauté until golden and tender, about 5 minutes. Stir in the vanilla. Remove from the heat and set aside to cool.
  • To make the banana bread: In a medium bowl, whisk together the flour, baking soda, cinnamon, cloves, nutmeg, and salt.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar until light and fluffy, 1 to 2 minutes. Add the eggs, one at a time, mixing well after each addition. Scrape down the sides of the bowl.
  • In a small bowl, combine the orange juice and vanilla. Add the flour mixture to the butter mixture in three batches, alternating with the orange juice mixture, mixing well after each addition. Scrape down the sides of the bowl after each flour addition. Stir in the mashed bananas until combined. Then stir in the reserved apples.
  • Pour the batter into the prepared loaf pan. Bake for 55 to 60 minutes, or until a wooden skewer inserted into the center comes out clean. Remove to a wire rack to cool for 20 minutes before unmolding onto the rack to cool further. Serve slightly warm or at room temperature.

  • In a large skillet, melt 2 tablespoons of the butter with the brown sugar. Add the apples and cook over moderately high heat, stirring, until tender and golden, 4 to 5 minutes. Add 1/2 teaspoon of the cinnamon and 1/2 teaspoon of the vanilla and transfer the apples to a plate.
  • Preheat the oven to 350°. Grease and flour a 9-by-5-by-4 1/2 inch loaf pan. In a medium bowl, stir together the flour, baking soda, salt, cloves, nutmeg and the remaining 1/2 teaspoon cinnamon.
  • In a large bowl, using a handheld electric mixer, beat the remaining stick of butter with the granulated sugar on medium speed until light and fluffy. Add the eggs, 1 at a time, and mix until smooth. Add the mashed bananas, orange juice and the remaining 1 teaspoon of vanilla and beat until smooth. Add the dry ingredients and beat on low speed until smooth. Using a rubber spatula, fold in the apples.
  • Scrape the batter into the prepared pan and smooth the surface. Bake for 1 hour and 20 minutes, or until a toothpick inserted in the center comes out clean; cover loosely with foil if the loaf becomes too dark. Let the loaf cool in the pan for 10 minutes before turning it out onto a rack to cool completely.
