BANANA AND WHITE CHOCOLATE MUFFINS



Banana and White Chocolate Muffins image

Deliciously golden, crispy banana muffins made with bananas, white chocolate chips and walnuts, then baked to perfection.

Number Of Ingredients 11

2 cups all-purpose flour
3/4 cup granulated sugar
2 tsp baking powder
1/2 tsp salt
2/3 cup butter, melted
2 eggs
2 tsp vanilla extract
1/8 cup milk
2 medium, very ripe bananas, mashed
1 cup white chocolate chips
1 cup walnuts, roughly chopped

Steps:

  • Preheat the oven to 400F. Grease a 12 muffin tin.
  • Mix the flour, granulated sugar, baking powder and salt together.
  • Melt the butter. Whisk the melted butter together with the eggs, vanilla extract and milk.
  • Mash the bananas and mix them into the wet ingredients.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Don't over mix.
  • Fold in the white chocolate chips and walnuts (optional).
  • Divide the batter evenly into the muffin tin. Place the tray in the oven and immediately decrease the oven temperature to 375F.
  • Bake for 25-30 minutes until a toothpick comes out clean.

2 cups all-purpose flour
2 1/4 teaspoons baking powder
1 teaspoon coarse salt
1/4 teaspoon ground cinnamon
3 extra-ripe bananas, mashed (1 cup)
3/4 cup light brown sugar
1 stick unsalted butter, melted
1 large egg
1/4 cup milk
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Line a standard 12-cup muffin tin with baking cups. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. In a separate bowl, whisk together banana, sugar, egg, butter, and milk. Stir wet ingredients into dry ingredients then stir in chocolate chips.
  • Divide batter evenly between prepared cups, adding a scant 1/4 cup to each. Bake until tops spring back when lightly touched, about 20 minutes. Cool in pans 5 minutes, then remove to wire rack to cool completely.

  • Make a well in center of the dry ingredients, and pour in the milk mixture.
  • Stir until moistened (do not overmix).
  • Fill 16 greased muffin cups 3/4 full.
  • Bake 15-20 minutes until tops are golden brown.
  • TIP: Put a few tablespoons of water in any unused muffin cups to protect the pan and keep the rest of the muffins moist.

There is absolutely no need for a lot of sugar to make these muffins delicious. Because they have bananas and chocolate chips, I just added 1/2 cup of sugar, which turned out perfect!

¼ cup unsweetened cocoa powder
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup white sugar
½ cup canola oil
1 egg
¼ cup milk
1 teaspoon vanilla extract
2 large very ripe bananas, mashed
¾ mini semisweet chocolate chips

Steps:
