BANANA COCONUT LOAF

Steps:
- Mix together flour, coconut, baking powder, baking soda, salt, chopped walnuts, and cherries.
- Break eggs in a mixing bowl, and beat until light and frothy. Add sugar and melted butter or margarine. Beat well. Stir in mashed banana and flavoring. Add flour mixture, and stir just to combine. Spoon into greased 9x5x3 inch loaf pan.
- Bake at 350 degrees F (175 degrees C) for 1 hour, or until a toothpick inserted in center comes out clean. Let stand for 10 minutes, and remove from pan. Cool.

COCONUT BEEF STEW
This recipe for coconut beef stew takes an old favorite to the tropics! Full of spices and some coconut milk that makes a creamy, dreamy sauce.

- Heat oven to 350. Put oil in Dutch oven or other ovenproof pot over medium heat. Cook onions for 5 minutes or until soft. Add garlic and spices and stir for one minute. Stir in tomato paste and then coconut milk. Bring to a boil and add beef.
- Cover and transfer to oven, Cook for 1 hour, then remove from oven and add potatoes and carrots. Cover and cook for an additional hour and 15 minutes.
- Sprinkle each serving with flaked coconut and parsley and serve.

CURRIED BANANA BEEF STEW
This is a spicy dish, but yet sweet with the addition of the sweet potatoes and plantains. Serve as a stew with roti or nana bread, Or atop of rice to stretch for more servings.

Steps:
- in a dutch oven heat 1 tablespoon of oil over medium, high heat.
- brown beef, remove from pan and put aside.
- clean pan.
- add other tablespoon of oil, fry onions, garlic, red pepper flakes until onions are soft.
- add curry paste, stir.
- add tomatoes, bring to a boil, scraping up brown bits from bottom of pan.
- reduce heat to medium, add coconut milk.
- return beef to pan.
- add salt and pepper.
- cover and simmer until beef is tender.
- add sweet potatoes and plantains.
- cover and simmer for 20 minutes.
- uncover and simmer, and stir a few times until thicken and potatoes and plantains are cooked.
EASY AND ELEGANT BANANA COCONUT BARS
Steps:
- Preheat oven to 360 F.
- Grease the 9x13 baking dish. Set aside.
- In a medium bowl combine sugar and egg. Mix on low speed with a hand-held mixer for 1 minute. Add melted butter. Mix on low for another 1 minute. Add flour, baking powder, and salt. Knead the dough only until it comes together. Do not over knead it. It should be very soft, pliable and slightly sticky. You can either roll out the dough with the rolling pin and transfer it to a baking dish. Or spread it in the baking dish using your fingers. Bake in the middle of the oven for 12 minutes.
- In the same medium bowl combine coconut flakes, sugar, eggs, vanilla extract, and milk. Mix until everything comes together and hold the shape when you squeeze it.
- Peel all bananas, cut in half and split.
- Remove baking dish from oven and place it on a towel. While still warm arrange all banana slices starting from the shorter edge of the baking dish. Lightly press bananas into the dough. Spread the coconut filling evenly, gently pressing on top of the bananas. Sprinkle with the fancy large coconut flakes.
- Bake in the middle of the oven for 23 minutes.
- Remove from oven. Let it cool completely. Cut bars into desired shapes.

- Preheat oven to 350 degrees F (175 degrees C). Line 16 muffin cups with paper liners.
- Beat sugar, olive oil, egg, and vanilla extract together in a bowl until light in color and creamy. Add bananas and coconut; stir to combine. Mix flour, baking soda, cinnamon, nutmeg, and salt into banana mixture until smooth. Spoon batter into prepared muffin cups.

Steps:
- Peel the bananas and cut into 1 to 1 ½ inch pieces.
- Dice the beef into approximately ½ inch pieces.
- Place the meat in a saucepan, cover with water, add salt.
- Bring to boil and simmer until tender.
- Heat the oil in a saucepan and sauté the onions until translucent but not browned.
- Add the tomato and the meat mixture.
- Adjust the seasoning to taste.
- Continue cooking until the tomatoes soften.
- Add the coconut milk, stirring continuously and bring the mixture to a boil. Add the banana pieces and snow peas.
- Reduce the heat and simmer for approximately 10-15 minutes, or until the bananas are cooked, soft but not mushy.
- Serve hot, over rice.

GRANDMOTHER'S BANANA STEW WITH TAPIOCA PEARLS (CHUOI CHUNG)
Steps:
- Bring the water to a rolling boil in a medium saucepan over high heat. Add the tapioca pearls and stir to separate. Reduce the heat to low and simmer until the tapioca becomes translucent, about 20 minutes. Add the coconut milk, sugar and salt and stir well.
- Five minutes before the end of cooking time, peel the bananas and cut them in half lengthwise. Cut each piece again into 4 pieces. Add them to the pan and cook until just soft. At this point the tapioca pearls should be clear and cooked.
- Remove from the heat and transfer to individual dessert bowls. Garnish with the peanuts and serve hot or at room temperature. (The pudding will thicken as it cools.)
