2 teaspoons baking powder

1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas, mashed

Steps:

  • Combine flour, white sugar, baking powder and salt. In a separate bowl, mix together egg, milk, vegetable oil and bananas.
  • Stir flour mixture into banana mixture; batter will be slightly lumpy.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

Steps:

2 large, very ripe bananas
1/2 cup smooth almond butter
4 large eggs
1 teaspoon ground cinnamon
1 tablespoon coconut oil
Sliced banana and cocoa nibs, for serving

Steps:

  • In a large bowl, mash the bananas until smooth.
  • Whisk in the almond butter, then add eggs one at a time, making sure each is thoroughly incorporated into the mixture.
  • Stir in the cinnamon.
  • Heat a large cast-iron (or ceramic skillet) over medium-high heat. When the skillet is hot enough that a drop of water splashed on it sizzles and bounces, add the coconut oil.
  • Scoop 2 tablespoons of the batter per pancake onto the skillet, leaving room for them to spread.

Steps:

  • Put all the ingredients into the blender.
  • Blend for 15-20 seconds, until smooth (don't over blend or it will get warm).
  • Pour into a bowl.
  • Heat a griddle or heavy saute pan on medium-low heat. Lightly brush with butter or ghee.
  • Add batter in small circles - about 1 tablespoon per pancake.
  • When the edges start to look dry and the pancake is firm enough to flip (about 3 minutes), flip and cook another minute or two on the other side.
  • Place onto a plate and cover to keep warm. Repeat with the rest of the batter.
  • Serve alone or top with maple syrup, berries, fruit sauce or chocolate chips.
