1/2 cup cornstarch
Kosher salt
1 teaspoon freshly ground black pepper, plus more for seasoning
4 large eggs
One 8-ounce can coconut milk
1 cup unsweetened shredded coconut
1 pound large shrimp, shelled and deveined
1/2 cup coconut oil, melted
Sweet chili sauce or cocktail sauce, for serving

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • Set up a breading station by gathering three shallow bowls. Pour the cornstarch in a bowl and add a pinch of salt and pepper. Crack the eggs into a second bowl and add the coconut milk. Beat until incorporated, then add a pinch of salt and pepper. Put the shredded coconut in a third bowl and add a pinch of salt and pepper.
  • Sprinkle the shrimp with some salt and 1 teaspoon pepper. Working with 1 shrimp at a time, dredge the shrimp in the cornstarch and shake off excess, then dip in the egg mixture and let the excess drip off. Finally, toss in the shredded coconut mixture, gently pressing the coconut onto the shrimp. Spread the shrimp in one layer on the prepared baking sheet.
  • Lightly brush each shrimp with the coconut oil. Bake until the shrimp are golden brown and cooked through, about 10 minutes. Allow the shrimp to rest for 5 minutes. Serve with sweet chili sauce or cocktail sauce.

2 lbs medium shrimp, peeled and deveined
2 tablespoons lemon juice
1 teaspoon salt
4 tablespoons peanut oil or 4 tablespoons corn oil
1 medium onion, finely chopped (3/4 cup)
4 garlic cloves, finely chopped
1 inch fresh ginger, finely chopped
3/4 cup chopped fresh tomatoes or 3/4 cup chopped canned tomato
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon turmeric
1 tablespoon hot red chili pepper flakes (or less to taste)
4 cups fresh bamboo shoots, sliced into thin julienne strips (can substitute canned)
1 cup fresh coconut milk (or 1 cup canned coconut milk plus 1/2 cup plain water)
3 tablespoons chopped fresh coriander, for garnish

Steps:

  • Marinate the shrimp in the lemon juice and salt for 1 hour.
  • Heat the oil in a pan (a dekshi in Calcutta), add the onion, and stir fry it over moderate heat until it turns light brown. Add the garlic and ginger and stir fry another minute. Add the tomato and mix well.
  • Add the cumin, coriander, turmeric and chili flakes and stir for a minute or two to integrate all the seasonings. Add the shrimp and marinade, bamboo shoots, and the coconut milk and water. Simmer the mixture over low heat for 15-20 minutes. Adjust the salt if necessary.
  • Remove the pan from the heat, cover, and let stand for 10 minutes, which allows the coconut milk to be absorbed by the shrimp and bamboo shoots. Garnish with the fresh coriander.
  • Serve warm with white rice and a variety of table chutneys and pickles.

1 1/2 cups all-purpose flour
3/4 cup cornstarch
Pinch cayenne
Kosher salt and freshly ground black pepper
1 1/2 cups shredded sweetened coconut
1 1/2 pounds large shrimp (about 30), peeled and deveined, tails removed
Sweet chili or sweet and sour sauce, for dipping

Steps:

  • Heat about 2 inches of oil in a heavy-bottomed pot or large Dutch oven over medium heat until a deep-fry thermometer registers 350 degrees F.
  • Meanwhile, put the eggs in one shallow dish. Whisk together the flour, cornstarch, cayenne, 2 teaspoons salt and 1 teaspoon pepper in a medium bowl. Transfer half the flour mixture to a third bowl and stir in the coconut.
  • Working in batches, dredge the shrimp in the flour mixture, shake off any excess, dip in the eggs and then roll in the coconut mixture, pressing to coat thoroughly. Fry until golden, 2 to 3 minutes, adjusting the heat as needed to maintain the oil temperature. Transfer the shrimp to paper towels to drain. Serve with sweet chili or sweet and sour sauce on the side for dipping.

2 tablespoons neutral oil, such as sunflower or canola
1 tablespoon minced garlic
2 red chiles, preferably bird's-eye, chopped
2 tablespoons minced fresh ginger
2 tablespoons minced white onion (about 1/4 of a small onion)
2 cups full-fat coconut milk
1 pound peeled jumbo shrimp
1 teaspoon Asian fish sauce
1 cup canned bamboo shoots, drained and cut into strips (or substitute fresh, blanched bamboo shoots if possible)
Kosher salt, as needed
Black pepper, as needed
Cooked white rice, for serving

Steps:

  • Heat oil in a 12-inch skillet over medium heat. Stir in garlic and cook until just beginning to brown, about 3 minutes.
  • Stir in chiles, ginger and onion, and cook for 3 minutes, stirring occasionally. Stir in coconut milk, bring to a boil, then adjust heat to maintain a simmer.

1/2 cup lite soy sauce
1 tablespoon minced garlic
1 teaspoon sesame oil
1/4 teaspoon sugar

Steps:

  • Leaving the shell on the shrimp intact, cut the shell lengthwise down the back with scissors or a very sharp knife. Remove and discard the sand vein.
  • In a medium bowl, place 2 cups warm water and add 2 teaspoons salt; stir to dissolve. Place the shrimp in the salt water and swirl. Leave the shrimp in the salt water for 5 minutes, then rinse with cold water and drain. Pat dry on paper towels.
  • Mix sauce ingredients together in a small serving bowl. Serve with poached shrimp.
  • Place 2 quarts water in a 4-quart saucepan and cook on high heat until boiling. Add the shrimp and cook until water comes to a boil again. Turn off heat and remove shrimp with a slotted spoon to a platter. Serve with the sauce.

1/2 cup all-purpose flour

Steps:

  • Spray the basket of a 3.5-quart air fryer with cooking spray and set aside. Pat the shrimp dry between a couple of paper towels, then season with a pinch of salt and a few grinds of pepper.
  • Pulse the coconut and panko in a food processor until finely chopped and uniform in size. Transfer to a shallow bowl.
  • Whisk the flour with 3/4 teaspoon salt and few grinds pepper in another shallow bowl or a baking dish. Whisk the eggs with a pinch salt in a third shallow bowl. Dip a shrimp in the seasoned flour, shaking off any excess, then dip in the beaten egg. Dredge in the coconut-panko mixture, turning until evenly coated. Transfer to a large plate or a rimmed baking sheet and continue until all the shrimp are coated.
  • Preheat the air fryer to 385 degrees. Working in batches, place some of the shrimp in the fryer basket in a single layer, then spray lightly with more nonstick cooking spray. Cook until the shrimp are golden brown and cooked through, flipping halfway through, about 10 minutes.
  • Serve the coconut shrimp with some sweet chile sauce for dipping.
