BALSAMIC STRAWBERRY AND BASIL SALAD



Balsamic Strawberry and Basil Salad image

My DH tried this at a fair. Thought I would post this for others to try. This recipe should be made started the night before.

Number Of Ingredients 13

1/2 cup sugar
4 ounces basil
2 lemons, juice of
3 1/2 cups water
strawberry juice
2 lemons, juice of
1 pint strawberry
2 tablespoons sugar
24 strawberries
3 tablespoons sugar
8 basil leaves
4 opal basil
4 tablespoons balsamic vinegar

Steps:

  • First Make Basil Granita, Make this at night.
  • Boil Water and Sugar.
  • Infuse basil for 15 Minutes and strain.
  • Add lemon Juice and place in freezer.
  • Next day Once frozen scrap with fork.
  • Made Strawberry Juice.
  • Place strawberries in a bowl over hot water for 15-20 minutes.
  • Strain the juice being careful not to make cloudy.
  • Last make Strawberry Salad.
  • Cut strawberries and basil.
  • Toss everyting together.
  • Pour strawberry juice over the mixture and top with basil granita.

Fresh Strawberries with Balsamic Vinegar and Basil image

Number Of Ingredients 6

1 1/4 cups sugar
1 1/4 cups balsamic vinegar
2 1/2 tablespoons honey
2 teaspoons freshly ground black pepper
1 cup fresh basil leaves, torn into small pieces and loosely packed
10 cups strawberries, trimmed and halved (4 pounds whole berries)

Steps:

  • In large mixing bowl, stir together sugar, vinegar, honey, and pepper. Add basil and strawberries; toss to coat. Cover and chill at least 10 minutes and up to 1 1/2 hours. Serve chilled.
