STRAWBERRIES WITH BALSAMIC VINEGAR
I love this recipe! It is from the "Frugal Gourmet Whole Family Cookbook" by Jeff Smith. I've made this simple recipe for many years. People are always impressed but... I never tell them how easy it is to make. Some recipes are best kept secret. But I will share this one...

Steps:
- Hull the strawberries and cut them into quarters lengthwise.
- Place in a bowl and toss with the vinegar and sugar.
- Cover and allow to rest on the counter for about an hour so that the berries will "juice" then chill in the fridge for another hour.
- Toss again before serving.
- (I like a little more vinegar sprinkled on before serving but do this to your own taste.
- I should mention that these strawberries do not keep well so they should be prepared and eaten the same day. If made more than a few hours ahead of time they are mushy and texturally unappealing. Just thought I should mention that.

This is a unique, gourmet way to serve this fantastic summer fruit! The balsamic vinegar brings out the berries' beautiful color and truly enhances their flavor. Great served with a simple pound cake, over vanilla ice cream, or simply by themselves.

- Place strawberries in a bowl. Drizzle vinegar over strawberries, and sprinkle with sugar. Stir gently to combine. Cover, and let sit at room temperature for at least 1 hour but not more than 4 hours. Just before serving, grind pepper over berries.

Steps:
- Add vinegar and honey to a small to medium sized container.
- Whisk together until well combined.
- Add strawberries and toss until well coated.
- Cover and refrigerate for 30 minutes.
- Toss berries again and transfer to a pretty glass or serving bowl and garnish with basil or mint.

BALSAMIC STRAWBERRIES
Steps:
- Boil 1/3 cup balsamic vinegar with 2 tablespoons honey, 1 bay leaf and a pinch of salt until thick, 4 minutes. Discard the bay leaf; let the syrup cool. Beat 1 cup mascarpone, 1/2 cup heavy cream, 1 tablespoon sugar and 1/4 teaspoon vanilla with a mixer until soft peaks form. Toss 3 pints quartered strawberries with half of the balsamic syrup. Serve with the mascarpone mixture and the remaining syrup.
STRAWBERRIES WITH BALSAMIC VINEGAR
Steps:
- Thirty minutes to an hour before serving, combine the strawberries, balsamic vinegar, sugar, and pepper in a bowl. Set aside at room temperature.
- Place a serving of the strawberries in a bowl with a scoop of ice cream on top and dust lightly with lemon zest.
BALSAMIC BAKED STRAWBERRIES
Balsamic vinegar may seem a strange flavour for a dessert, but it really complements the sweetness of the strawberries.

- Preheat the oven to the lowest possible heat, or use the aga warming oven later. Prepare the strawberries, wash, cut off the tops and halve them lengthways. Place in an oven proof dish.
- Place the balsamic vinegar, sugar and green peppercorns in a small saucepan and heat over a low heat until the sugar is dissolved. Make sure you don't burn the sugar onto the bottom of the pan.
- Pour the balsamic vinegar mix over the strawberries and place in the preheated oven or aga warming oven.
- After about 50 minutes, put the heat of the oven up to 200C, or transfer the strawberries to the aga roasting oven (the hotter one).
- Remove from the oven and serve with ice cream or frozen yoghurt.
BALSAMIC STRAWBERRIES
When I tell my guests that this is dessert, I often have to convince them that it really is acceptable to put vinegar on fresh berries. More than acceptable, actually, it is exquisite. Sweet-tart balsamic vinegar flavored with fruit is a perfect counterpoint to luscious, sweet strawberries. This is especially beautiful with large strawberries or with a combination of strawberries, raspberries, and blackberries.

- In a medium mixing bowl, place the berries and pour the vinegar over them. Place in the refrigerator for 30 minutes.
- Use a slotted spoon to divide the berries among 4 champagne glasses-let as much or as little vinegar into the glass as desired. Top with a spoonful of whipped cream. Serve cold.
- Use fresh strawberries in season-remember they are only truly in season locally for about 3 weeks, depending on where you live. Underripe berries are not sweet enough to offset the tart vinegar.
