3 pounds flat iron steak
3 tablespoons extra-virgin olive oil
2 tablespoons coarsely ground mixed peppercorns
1 ½ teaspoons salt
1 tablespoon butter
1 clove garlic, minced
1 cup balsamic vinegar
¼ cup chopped fresh parsley

Steps:

  • Brush steak with olive oil, then press into ground peppercorns and season with salt; set aside. Melt butter in a large skillet over medium high heat. Add flat iron, and cook to desired degree of doneness, about 4 minutes per side for medium-rare.
  • Once the steak has finished cooking, remove to a plate and keep warm. Stir the minced garlic into the skillet, and cook over medium heat until the garlic begins to brown around the edges, about 1 minute. Pour in the balsamic vinegar, increase heat to medium-high, and simmer until the vinegar has reduced by half.
  • Thinly slice the flat iron steak across the grain, and arrange on a serving platter. Pour the reduced balsamic overtop, and sprinkle with chopped parsley to serve.

3 tablespoons balsamic vinegar
6 tablespoons olive oil
1 teaspoon Dijon mustard
1 clove garlic, minced
1 teaspoon shallot, minced
1 teaspoon salt
¼ teaspoon ground black pepper
1 ½ pounds flank steak (about 1-inch thick)
3 teaspoons balsamic vinegar
½ pound quality white cheddar cheese (such as Beecher's Flagship)
1 pint cherry tomatoes
1 (5 ounce) package arugula
1 drizzle extra-virgin olive oil
Kosher salt and freshly cracked black pepper

Steps:

  • Whisk together the 3 tablespoons balsamic vinegar, 6 tablespoons olive oil, Dijon, garlic, shallot, salt, and pepper. Place steak in a zip-top bag, pour balsamic mixture over, seal tightly, and refrigerate, 8 hours or overnight.
  • Heat grill and add marinated steak. Grill each side of the steak for 5 minutes, turning 90 degrees after 2 1/2 minutes to create a diamond mark on the steak. Remove from grill once internal temperature reaches 140 degrees F (60 degrees C). Brush with 3 teaspoons balsamic vinegar, season with salt, then cover and let rest for 10 minutes.
  • While steak is resting, grate cheese and slice cherry tomatoes in half. Cut the steak into thin slices and serve over a bed of arugula. Garnish with cherry tomatoes, cheese, a drizzle of extra-virgin olive oil, and freshly cracked pepper.

Steps:

  • For dressing, whisk together first six ingredients. Place steak and 1/4 cup dressing in a resealable plastic bag; seal bag and turn to coat. Refrigerate 8 hours or overnight. Reserve remaining dressing; cover and refrigerate until serving., Drain beef, discarding marinade. Grill steak, covered, over medium heat or broil 4 in. from heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 160°), 6-8 minutes per side. 10 ounce grilling steak (boneless prime rib)
½ teaspoon EACH: salt and pepper
1 teaspoon avocado oil
4 ounces arugula
1 cup cherry tomatoes (cut in half)
½ English cucumber (diced)
½ avocado (sliced)
¼ cup thinly sliced red onions
½ tablespoon EACH: grainy mustard, dijon mustard, and balsamic vinegar
2 tablespoons olive oil
A pinch of salt and pepper

Steps:

  • Take the steak out of your fridge and evenly coat both sides with the salt and pepper. Add all the salad ingredients to a salad bowl.
  • Heat a cast iron or heavy-bottomed pan over high heat. Drizzle the avocado oil over both sides of the steak. When the pan starts to smoke, add the steak and let it cook undisturbed for 2 minutes. Flip the steak over and let it cook for 2-3 minutes more. Transfer the steak to a cutting board and let it rest.
  • While the steak is resting, whisk the salad dressing ingredients in a small bowl. Thin the dressing with up to a tablespoon of water, as needed. Pour the dressing over the salad and toss.
  • Thinly slice the steak across the grain and serve it over the salad.

Our Balsamic Steak Salad is the perfect summer salad - loaded with fresh cucumber, sliced avocado, cherry tomatoes, cubed mozzarella, then topped with grilled steak, there's just so much to love.

2 pounds sirloin steak
1 (16 ounce) bottle balsamic vinaigrette dressing (divided)
12 cups spring salad mix
1 (8 ounce) block Mozzarella cheese (cubed)
1 cup cherry tomatoes (halved)
1 cucumber (thinly sliced)
1 avocado (sliced)

Steps:

  • Place steak in a resealable plastic bag.
  • Add 1 cup balsamic vinaigrette, then seal and shake to coat. Marinate in the refrigerator for at least 2 hours (we like it best marinaded overnight).
  • Remove steak from marinade (then discard marinade).
  • Grill steak over medium heat (or broil) until meat reaches desired doneness, about 6-8 minutes per side.
  • While steak is cooking, divide salad greens, mozzarella cheese, cherry tomatoes, cucumber, and avocado over 6 plates. Top with steak once it's finished cooking and serve with remaining balsamic vinaigrette.
