1 pound (16 ounces) green beans or haricots verts
2 teaspoons extra-virgin olive oil
Scant 1/4 teaspoon fine sea salt

Steps:

  • Preheat the oven to 425 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy cleanup.
  • Wash and trim the rough ends off the green beans. Pat them very dry with clean tea towels (wet green beans turn soggy in the oven).
  • Place the prepared green beans on your baking sheet. Drizzle the olive oil over the beans and sprinkle the salt all over. Use your hands to toss until all of the beans are lightly coated in oil. Arrange the green beans across the pan in a single layer.
  • Roast for 14 to 16 minutes, undisturbed, until they are crisp-tender with some golden, caramelized spots. (If using slender haricots verts, they may be ready a couple of minutes earlier.)
  • Transfer to a serving dish and enjoy with any desired accompaniments (see recipe notes for seasoning suggestions). Roasted green beans are best enjoyed while warm, but will keep in the refrigerator, covered, for 4 to 5 days.

1 pound green beans, stem ends snapped off
1/2 medium yellow or red onion, cut into 1/2 inch thick wedges
1 tablespoon extra virgin olive oil
Kosher salt and freshly ground black pepper
1 tablespoon balsamic vinegar
1 teaspoon honey
1 teaspoon minced fresh thyme
2 medium thin-sliced garlic cloves
1/3 cup toasted chopped walnuts

Steps:

  • Preheat the oven and prepare the pan: Place rack in middle position and preheat oven to 450°F. Line a sheet pan with aluminum foil or Silpat .
  • Toss the beans and onions with olive oil and salt, roast: Spread the beans and onions on the baking sheet. Drizzle the beans with olive oil and use your hands to coat the beans evenly. Sprinkle the beans with 1/2 teaspoon of salt, toss to coat, and distribute in an even layer. Roast at 450°F for 10 minutes.
  • Make the balsamic honey garlic mixture: While roasting the beans, combine the balsamic vinegar, honey, thyme, and garlic slices in a small bowl.
  • Brush beans with the mixture: After the beans and onions have roasted for 10 minutes, remove from oven. Drizzle the balsamic honey mixture over the beans and onions; use tongs to coat evenly. Put back in the oven and continue to roast until onions and beans are dark golden brown in spots and beans have started to shrivel, about 12 to 15 minutes longer.
  • Season to taste with salt and pepper: Transfer to serving dish, sprinkle with toasted chopped walnuts, and serve.

1 lb green beans
1 medium red onion, cut in 1/2-inch thick wedges
2 tablespoons olive oil
salt and pepper
1 tablespoon balsamic vinegar
1 teaspoon honey
1 teaspoon fresh thyme leave, minced
2 medium garlic cloves, thinly sliced
1/3 cup walnuts, toasted and chopped

Steps:

  • If you would like softer roasted green beans, you may steam them about 5 minutes before roasting.
  • Combine balsamic vinegar, honey, thyme and garlic in a small bowl and set aside.
  • Adjust your oven rack to the middle postiion; heat oven to 450*F. Line a baking sheet with foil; spread beans on the baking sheet along with the onion wedges. Drizzle with oil. Using your hands, toss to coat evenly. Sprinkle with 1/2 teaspoons salt, toss to coat, and distribute in an even layer. Roast 10 minutes. Remove baking sheet from oven. Using tongs, coat beans and onion evenly with vinegar/honey mixture; redistribute in an even layer. Continue roasting until onions and beans are dark golden brown in spots and beans have started to shrivel, 10 to 12 minutes longer. Adjust seasoning with salt and pepper and toss well to combine. Transfer to a serving dish, sprinkle with 1/3 cup toasted and chopped walnuts. Serve and enjoy!
