Balsamic-Roasted Green Beans with Parmesan image

Sweet balsamic vinegar and nutty Parmesan cheese complement roasted green beans and shallots in this easy and healthy side dish. Roasting the green beans gives them a sweet, caramelized flavor while they still retain some bite. Serve with chicken, fish, pork--you name it. These green beans are also a wonderful addition to your Thanksgiving meal.

1 ¼ pounds trimmed fresh green beans (about 8 cups)
2 medium shallots, sliced
2 tablespoons olive oil
½ teaspoon salt
¼ teaspoon ground pepper
2 tablespoons balsamic vinegar
1 ounce Parmesan cheese, finely grated (about 1/4 cup)

Steps:

  • Preheat oven to 425 degrees F. Line a large rimmed baking sheet with parchment paper or foil.
  • Combine green beans, shallots, oil, salt and pepper on the prepared pan; toss to coat well. Roast until tender, 15 to 18 minutes. Drizzle evenly with vinegar; sprinkle with Parmesan.

This is a quick and easy way to spruce up green beans. And they disappear fast. My family devours these. I created this when I was looking for something different to do with green beans in a hurry. A nice side for company too!

1 lb green beans (I use frozen petite green beans)
1/4 cup balsamic vinegar (or to taste)
1/4 cup parmesan cheese, shredded
1 tablespoon butter

Steps:

  • Place green beans in microwave safe dish with the butter. Cover and cook on high for five minutes.
  • Add vinegar and parmesan cheese. Cook on high five more minutes (covered).
  • Stir to make sure the beans are well coated with the vinegar mixture.
  • Serve and enjoy!
  • These would work well with fresh green beans too. You would just need to adjust the cooking time.
  • Ingredient amounts can be adjusted to suit your taste. I will sometimes increase the parmesan cheese and use 2 tablespoons of butter.

1 1/2 cups fresh green beans, trimmed and snapped
1/4-1/2 teaspoon garlic salt
3 tablespoons balsamic vinegar
1 tablespoon chicken bouillon powder
1/4 cup water
freshly grated parmesan cheese

Steps:

  • Steam green beans until tender-crisp, about 8-10 minutes. Remove and drain. Meanwhile, mix bouillon and water; stir to blend. Heat small heavy-bottomed skillet (I use cast iron). Pour in bouillon mixture, Balsamic, and garlic salt. Blend. When bubbling, add green beans and cook until liquid is absorbed and beans have a nice nut brown glaze, about 10 minutes. Sprinkle with Parmesan and serve.

Bean salad is a common cold salad composed of various cooked beans - green beans, yellow wax beans, garbanzo beans, kidney beans - and typically fresh raw onions, peppers, and/or other vegetables, tossed in a vinaigrette or vinegar and characteristically sweetened with sugar. It can also be prepared as a pickled dish. Bean salad is a popular choice for home canning. Salads prepared with this method should be used within a year for best quality.

4 cups Green Beans
75 grams Parmesan Cheese
32 grams Basil
12 tablespoons Balsamic Vinegar
1 dash Pepper
1 dash Salt
2 cups Onion
1 cup Sliced Cucumber
4 tablespoons Crispy Fried Onion
Salted Peanuts

Steps:

  • Soak chopped onions in water: Place the chopped onions in a small bowl of water. This will help take the edge off the onions. Let sit while you prepare the rest of the salad.
  • Blanch the green beans: Bring a large pot of salted water to a boil (2 Tbsp salt for 2 quarts of water). Add the green beans to the water and blanch only for about 2 minutes or so, until the beans are just barely cooked through, but still crisp.
