EASY ONION JAM
This is an easy onion jam that is incredibly versatile. It enhances anything from rice or barley dishes to spreading on a piece of bread. Great accompaniment to chicken as well. You can substitute sherry vinegar for the balsamic vinegar.

- Heat olive oil in a saucepan over medium-high heat. Saute onion in hot oil until soft and caramelized, 10 to 12 minutes. Add water, balsamic vinegar, and brown sugar; stir until sugar is dissolved and mixture is simmering. Reduce heat to low and cook until mixture thickens and reaches desired consistency, about 30 minutes.

- Heat a large skillet over low heat. Add olive oil and onions, except for the 2 cups reserved sweet onions. Sprinkle with salt. Cook slowly over low heat so that onions caramelize. This will take a long time. If the onions start to burn, add a little water to the pan to slow the cooking.
- Deglaze pan with balsamic vinegar. Add reserved 2 cups of sweet onions, brown sugar, and thyme. Reduce over low heat until vinegar is absorbed/cooked off. Turn off heat and season to taste with salt and pepper. Pack in a jar with a tight-fitting lid, and store in fridge for up to two weeks.

- Add the diced onions and olive oil to a large pot with a lid (we used a Dutch Oven). Place over medium heat and cover with the lid. Cook undisturbed for about 15 minutes.
- Remove the lid and stir the onions gently. There will likely be a lot of liquid in the pot, which is normal! Next, add in the balsamic vinegar, sugar, and fruit pectin/lemon juice. Stir to combine and reduce the heat to low-medium.
- Allow to simmer without a lid for about 90 minutes, stirring once every 10-15 minutes to ensure the onions are not sticking.
- Add small amounts of water at a time to help prevent sticking. We used about ½ a cup of water total, adding 2-3 tablespoons at a time.
