Sheet-Pan Skirt Steak With Balsamic Vinaigrette, Broccolini, and White Beans image

4 garlic cloves, divided
1/2 cup balsamic vinegar
3 tablespoons Dijon mustard
1/2 cup plus 2 tablespoons extra-virgin olive oil, divided
2 tablespoons chopped fresh oregano leaves, divided
1 1/2 teaspoons kosher salt, divided
3/4 teaspoon freshly ground black pepper, divided
1 (1 1/2-pound) skirt steak, cut crosswise into 2 equal pieces
1 bunch broccolini (about 10 ounces), trimmed, halved lengthwise (quartered lengthwise if large)

Thinly slice steak against the grain and serve with broccolini mixture and remaining vinaigrette alongside.

1 tsp (5 mL) fresh rosemary, finely chopped
1 ⁄4 tsp (1 mL) freshly ground black pepper
1 tbsp (15 mL) lemon juice

Salt and pepper to taste
2 tsp (10 mL) olive oil
1 ⁄2 cup (125 mL) balsamic vinegar

1 ⁄2 cup (125 mL) white onion, coarsely chopped
1 tbsp (15 mL) garlic, finely chopped
1 ⁄4 tsp (1 mL) chili flakes
2 tsp (10 mL) fresh sage or oregano, coarsely chopped
2 cans (540 mL each) cannellini or white kidney beans, rinsed and drained
1 ⁄2 cup (125 mL) beef stock

With a paper towel wipe the pan clean of any burnt bits of garlic or rosemary. To the pan add balsamic vinegar and honey. Cook over medium heat until reduced to a sauce consistency. 9. Pour the juices from the rested steak into the balsamic sauce. Slice the steak into 1⁄2-inch (1- cm) slices across the grain of the meat. 10. Serve on top of White Bean Purée drizzled with sauce. Let cool slightly and purée with a hand blender or food processor. Season to taste. 8. Warm through before serving.

GRILLED BALSAMIC AND SOY MARINATED FLANK STEAK

Grilled Balsamic and Soy Marinated Flank Steak image

Flank steak is a perfect grilling meat. It's marbleized with fat that melts while grilling and fills the meat with the flavor of natural juices. If you have a lot of marinade leftover from this recipe, save it in your refrigerator and use it to marinate other grilled meats or chicken; it will last up to one week.
