1 cup balsamic vinegar
16 dried figs
1/2 cup crumbled Gorgonzola cheese
8 thin slices prosciutto, halved widthwise
2 teaspoons minced fresh rosemary
1/4 teaspoon pepper

Steps:

  • For glaze, in a small saucepan, bring vinegar to a boil over medium heat; cook until reduced to about 1/4 cup., Cut a lengthwise slit down the center of each fig; fill with 1-1/2 teaspoons cheese. Wrap each with a piece of prosciutto; place on a baking sheet. Sprinkle with rosemary and pepper. , Bake at 425° for 10-12 minutes or until prosciutto is crisp. Serve warm with glaze.

8 figs (cut into quarters)
8 ounces mozzarella (cut into thin round slices (or pre-grated))
⅓ cup walnuts (roughly chopped)
2 ounces prosciutto (torn into smaller pieces)
all-purpose flour (for dusting dough and pan)
cornmeal (for dusting pan)
kosher salt (for sprinkling on dough)
black pepper
½ cup balsamic vinegar
2 tablespoons honey

Steps:

  • Preheat oven to 500°F. Place a cold pizza stone or a sheet pan in the oven to preheat. Allow dough to come to room temperature while you prepare the balsamic glaze, about 30 minutes.

Steps:

  • Mix balsamic vinegar with brown sugar in a saucepan over medium heat, stirring constantly until sugar has dissolved. Bring to a boil, reduce heat to low, and simmer until glaze is reduced by half, about 20 minutes. Glaze should coat the back of a spoon. Let cool and pour into a jar with a lid; store in refrigerator.

2/3 cup prepared fig preserves

2 teaspoons minced fresh rosemary, divided

Steps:

  • Preheat oven to 400 degrees Fahrenheit. Roll out dough In a small bowl, stir together cheeses. Then, gently spread cheese mixture over dough. Arrange pear slices over cheese mixture. In a medium bowl, stir together fig preserves, vinegar, and 1 teaspoon rosemary. Spread over pears with the back of a spoon. Bake for 12 minutes or until crust is golden brown. Let stand 10 minutes before serving. Sprinkle with remaining teaspoon of rosemary.
