BALSAMIC VINEGAR DRESSING
A classic dressing that everyone should know! The "formula" is 1 part vinegar to 3 parts oil. Some people who like sharper dressing will use less oil. The better the quality of the vinegar and oil, the better the dressing!

Steps:
- Place ingredients in a jar and shake very well. Adjust salt and pepper to taste.
- Keeps for 3 weeks on the counter (unless it is very hot where you are, store it in the fridge), assuming you use fresh olive oil. Do not keep for more than 4 weeks as high quality olive oil tends to lose flavour beyond 4 weeks after opening the bottle.
SHEILA'S BEST BALSAMIC DRESSING
This is the best dressing ever. My mom got the recipe somewhere, and then adjusted it a bit, so she gets credit for it. Quick and delicious. The better quality the vinegars the better the dressing. I like to use a latte frother to mix the dressing. If you use the garlic make sure it is very fresh or it gets a little bitter in the dressing, it is optional. Enjoy!!

VINAIGRETTE DRESSING FOR A CROWD
This makes a huge amount of salad dressing for a few hundred people. For a church crowd or PTA spaghetti supper fund raiser. The leftover dressing keeps well if you use the dried parsley. But more attractive salad with the fresh because it stays brighter green. THIS CAN ALSO BE GIVEN IN JARS AS GIFTS. I am also listing a spaghetti recipe for a huge crowd too.

SPINACH STRAWBERRY SALAD

Steps:
- Toast the pecans: Preheat the oven to 350 degrees F. Spread the pecans in a single layer on an ungreased baking sheet. Bake for 8 to 10 minutes, until the pecans smell fragrant and the center of a pecan is tan when the pecan is broken in half. (Do not walk away from the oven in the last few minutes of cooking. This is when nuts love to burn.) Transfer to a cutting board and roughly chop.
- Place the sliced onions in a bowl and cover with cold water. Let sit while you prepare the rest of the salad (this keeps their flavor but removes the harsh onion bite).
- Prepare the dressing: In small mixing bowl or large liquid measuring cup, whisk together all of the dressing ingredients-vinegar, oil, poppy seeds, honey, mustard, salt, and pepper-until well combined. (Alternatively, you can shake the ingredients together in a mason jar with a tight-fitting lid).
- Assemble the salad: Place the spinach in a great big serving bowl. Add the strawberries. Drain the red onion and add it as well. Drizzle about half of the dressing over the salad and toss to coat the leaves. Assess the amount of dressing. You want the spinach leaves to be nicely moistened but not swimming in dressing. Add a little more if needed to suit your preferences. Add the feta and pecans. Toss lightly to combine. Serve immediately, with extra dressing on the side as desired.

- Start whisking vigorously until combined and then, slowly drizzling in olive oil. (Drizzling in the oil slowly while whisking will help emulsify the oil and vinegar together.)
- Once it's all incorporated, transfer the dressing into a container with a lid. You can use it right away to store for later.
- I recommend giving the vinaigrette up to a day to sit before using it. This will help marinade all ingredients together for better flavor. (You can use the dressing right away if needed, of course.)

- Pull the kale off the stems and tear into smaller pieces. Place in a salad spinner, wash well and then dry well. I dab it with a paper towel after spinning to get all the water off. Place kale in a large salad bowl.
- Drizzle olive oil over the kale and massage it into the leaves with your hands until coated and the leaves start to shrink in size a bit. You want just a enough to coat the leaves but not a heavy dressing.
- Drizzle 1-2 tablespoons dressing over the top and toss to coat. Again, add just enough dressing to lightly coat everything but not too much that it becomes heavy. Start with a smaller amount to toss, add more as necessary and serve extra dressing on the side.
