These roasted cabbage wedges with honey and balsamic vinegar make an attractive and healthy side dish that's also very easy to prepare. You can use red or green cabbage--or make a double batch with one of each for a pretty presentation.

½ teaspoon ground pepper
5 tablespoons olive oil, divided
¾ teaspoon salt, divided
1 large head red or green cabbage, cut into 10 or 12 wedges
2 teaspoons honey
4 tablespoons balsamic vinegar, divided
1 teaspoon fresh thyme leaves

Steps:

  • Preheat oven to 425 degrees F. Combine pepper, 3 tablespoons oil and 1/2 teaspoon salt in a small bowl. Brush evenly over all sides of cabbage wedges.
  • Combine honey, 2 tablespoons vinegar and the remaining 2 tablespoons oil in a small bowl; set aside.
  • Arrange the cabbage wedges, cut-side down, on a baking sheet. Roast until they start to brown, about 20 minutes. Brush with half the honey-balsamic mixture; turn over and brush with the remaining mixture. Continue roasting until browned and tender, but still holding their shape, about 15 minutes more. Drizzle with the remaining 2 tablespoons vinegar and sprinkle with thyme, if desired. Sprinkle with the remaining 1/4 teaspoon salt. Serve immediately.

3 tablespoons butter or 3 tablespoons bacon fat
1 small green cabbage, chopped
1/2 cup onion, chopped
1/2-3/4 lb smoked sausage, sliced (I like Conecuh, Original)
1 (15 ounce) can diced tomatoes, undrained (I like Hunt's Petite Diced)
1/4 teaspoon garlic salt, to taste
1/4 teaspoon Tony Chachere's Seasoning, to taste (optional)
salt, to taste
black pepper, to taste

Steps:

  • Chop/slice the sausage, cabbage, and onion.
  • In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
  • In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
  • Add remaining ingredients, and the sausage.
  • Cover the skillet and cook for about 10 minutes.
  • Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.

1 small head red cabbage, shredded
1 apple, cored and diced
3 teaspoons salt, divided
1 tablespoon lemon juice
½ cup water
1 tablespoon butter
1 small onion, chopped
⅛ teaspoon ground black pepper
1 tablespoon wine vinegar
1 pound kielbasa sausage, cut into 1 inch pieces

Steps:

  • Place the cabbage in a large kettle, and add the diced apple, 2 teaspoons of the salt, lemon juice, and 1/2 cup water. Bring to a boil then simmer, covered, about 15 minutes stirring occasionally.
  • In hot butter, saute the onion until golden. Add the onion to the cabbage along with 1 teaspoon salt, pepper, vinegar and sausage. Cook, covered, 20 to 30 minutes until sausage is heated through. To serve, spoon the cabbage onto a heated platter, topping it with the sausage.

  • Preheat oven to 450 degrees. Cut cabbage into 12 wedges; remove thick core and discard. Pull wedges apart; toss on a large rimmed baking sheet with oil, 2 teaspoons salt, and 1/4 teaspoon pepper.
  • Cover sheet tightly with foil. Bake until cabbage is crisp-tender, about 20 minutes.
  • Remove foil; continue cooking, tossing occasionally, until tender and browned in spots, 20 to 25 minutes more. Toss with vinegar.

1 head green cabbage (about 2 pounds), outermost leaves removed
4 tablespoons extra-virgin olive oil, divided
¾ teaspoon salt, divided
¾ teaspoon ground pepper, divided
1 medium onion, halved and sliced
4 large cloves garlic, sliced
1 teaspoon caraway seeds
1 teaspoon cumin seeds
3 tablespoons tomato paste
2 cups low-sodium chicken or vegetable broth
1 teaspoon dry mustard
Chopped parsley for garnish
Whole-grain mustard for serving

Steps:

  • Preheat oven to 350°F.
  • Slice cabbage in half through the root. Cut each half into 4 wedges, keeping the root intact. Heat 1 tablespoon oil in a large cast-iron or other heavy ovenproof skillet over medium heat. Add 4 cabbage wedges and cook until browned in spots on both sides, 3 to 5 minutes per side. Transfer to a plate and sprinkle both sides with 1/4 teaspoon each salt and pepper. Repeat with 1 tablespoon oil, the remaining cabbage and 1/4 teaspoon each salt and pepper.
  • Add the remaining 2 tablespoons oil, onion, garlic, caraway seeds and cumin seeds to the pan; cook, stirring, until starting to soften and brown, 2 to 3 minutes. Add tomato paste and cook, stirring, until starting to darken, about 2 minutes. Add broth, dry mustard and the remaining 1/4 teaspoon each salt and pepper; increase heat to medium-high and bring to a boil. Return the cabbage to the pan, overlapping the wedges if necessary. Bake, turning once, until the cabbage is very soft and the sauce has reduced and thickened, 40 to 45 minutes. Sprinkle with parsley and serve with mustard, if desired.

olive oil
1 (12 ounce) package chicken sausage*
1 head cabbage
1 tablespoon chicken stock

2 tablespoons stone ground mustard

Steps:

  • Coat bottom of high sided frying pans of Dutch oven with oil and heat over medium high heat.
  • Cut sausages in diagonal pieces and add to heated oil. Cook until heated through and then remove to a plate.
  • Quarter cabbage and remove core. Add cabbage to frying pan and saute.
  • Once slightly wilted add chicken stock and cover with lid. Once cooked through splash with balsamic vinegar and add the cooked sausage. Season to taste with salt and pepper.
  • While all the flavors are mixing in the pan, prepare the Buttery Homestyle Mashed according to package directions.
  • Add stone ground mustard and stir thoroughly.
