BALSAMIC ROASTED CABBAGE
These roasted cabbage wedges with honey and balsamic vinegar make an attractive and healthy side dish that's also very easy to prepare. You can use red or green cabbage--or make a double batch with one of each for a pretty presentation.

- Preheat oven to 425 degrees F. Combine pepper, 3 tablespoons oil and 1/2 teaspoon salt in a small bowl. Brush evenly over all sides of cabbage wedges.
- Combine honey, 2 tablespoons vinegar and the remaining 2 tablespoons oil in a small bowl; set aside.
- Arrange the cabbage wedges, cut-side down, on a baking sheet. Roast until they start to brown, about 20 minutes. Brush with half the honey-balsamic mixture; turn over and brush with the remaining mixture. Continue roasting until browned and tender, but still holding their shape, about 15 minutes more. Drizzle with the remaining 2 tablespoons vinegar and sprinkle with thyme, if desired. Sprinkle with the remaining 1/4 teaspoon salt. Serve immediately.

This is a family favorite cabbage recipe. The cabbage is cooked down with tomatoes, seasonings and smoked sausage for a hearty and delicious meal-in-itself. Serve with cornbread.

Steps:
- Chop/slice the sausage, cabbage, and onion.
- In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
- In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
- Add remaining ingredients, and the sausage.
- Cover the skillet and cook for about 10 minutes.
- Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.
SAUSAGE SMOTHERED IN RED CABBAGE
My grandmother used to make this one. To pamper your budget, serve this with mashed potatoes, mustard pickle and pumpernickel bread.

- Place the cabbage in a large kettle, and add the diced apple, 2 teaspoons of the salt, lemon juice, and 1/2 cup water. Bring to a boil then simmer, covered, about 15 minutes stirring occasionally.

- Preheat oven to 350°F.
- Slice cabbage in half through the root. Cut each half into 4 wedges, keeping the root intact. Heat 1 tablespoon oil in a large cast-iron or other heavy ovenproof skillet over medium heat. Add 4 cabbage wedges and cook until browned in spots on both sides, 3 to 5 minutes per side. Transfer to a plate and sprinkle both sides with 1/4 teaspoon each salt and pepper. Repeat with 1 tablespoon oil, the remaining cabbage and 1/4 teaspoon each salt and pepper.

- Coat bottom of high sided frying pans of Dutch oven with oil and heat over medium high heat.
- Cut sausages in diagonal pieces and add to heated oil. Cook until heated through and then remove to a plate.
- Quarter cabbage and remove core. Add cabbage to frying pan and saute.

- If you’re using the sage, heat a few tablespoons oil in a large saucepan on a medium high heat. Add sage leaves and fry for 1-2 minutes or until the leaves are crispy. Drain them on paper towel.
- Cut sausage skins down one side. Remove and discard the skins. Pile the sausage meat into the pan and cook uncovered, stirring to break up the sausage into bite sized chunks.
- Slice cabbage into ribbons as finely as you can be bothered (the thicker the longer it will take to cook). When the sausages are well browned and cooked through, add the cabbage and 1/4 cup water. Reduce heat to medium and cook covered for about 10 minutes, stirring every few minutes until the cabbage is soft. If it starts to burn, add a splash more water, reduce the heat and stir vigorously.
- When the cabbage is soft remove from the heat. The water should have evaporated. If it hasn’t, cook for another minute or two with the lid off.
