This Blueberry Balsamic Grilled Cheese takes your grilled cheese game to a new level, with fresh berries, goat cheese, prosciutto, and arugula!

2 slice Bread
1 teaspoon Olive Oil
1 tablespoon Goat Cheese
1/4 cup Arugula
1/4 cup Fresh Blueberry
2 slice Prosciutto
1 slice Mozzarella Cheese
1 tablespoon Light Mayonnaise
1 teaspoon Balsamic Vinegar
1 teaspoon Honey

Steps:

  • Mix together Light Mayonnaise (1 tablespoon), Balsamic Vinegar (1 teaspoon), and Honey (1 teaspoon).
  • Lightly spread Olive Oil (1 teaspoon) onto outward-facing side of each piece of Bread (2 slice).
  • Layer on the filling ingredients in this order to keep it all from falling out: 1/2 balsamic mayo mix, spread on Goat Cheese (1 tablespoon), Arugula (1/4 cup), Prosciutto (2 slice), Fresh Blueberry (1/4 cup), Mozzarella Cheese (1 slice), 1/2 balsamic mayo mix.
  • Grill on medium heat for about 5 minutes, flipping halfway through, or until everything is melted and hot.
  • Turn up the heat to medium-high and cook about 30 seconds on both sides, or until light brown and crisp.
  • Serve immediately after cooking to avoid the bread becoming soggy. Enjoy!

2 thick slices bread (sourdough is great here)
1 tsp olive oil (can sub butter or mayo)
2 Tbsp goat cheese
2 slices mellow white cheese (like havarti or mozzarella)
¼ cup chopped blueberries
¼ cup fresh arugula
A few fresh basil leaves
Pinch each salt and pepper
Optional: a drizzle of balsamic vinegar or balsamic reduction

Steps:

  • Outside: Spread olive oil onto the outward facing side of each piece of bread.
  • Cheeses: Onto the inside of each piece of bread, spread evenly with goat cheese and top with a slice of cheese.
  • Fillings: Onto one of the pieces of bread, pile on chopped blueberries, arugula, and basil. Sprinkle with salt and pepper, optionally adding a drizzle of balsamic. Set remaining piece of bread with cheese on top.
  • Cook: Cook in a pan or panini press on medium heat for about 5 minutes, flipping halfway through, or until everything is melted and hot.

Number Of Ingredients 6

2 slices of bread (I used sourdough)
Plenty of white cheese (I used Havarti, but lots of others kinds would be good! Mozzarella, Monterey, or even Swiss would be yummy)
Fresh spinach or arugala
1/2 cups fresh or frozen blueberries
1 tbs balsamic vinegar
1 1/2 tbs. brown sugar

Steps:

  • 1. In a small saucepan, combine blueberries, sugar and vinegar. Turn on medium heat and let come to a slow boil. Use a utensil to crush berries as you stir. After boiling for about 5 minutes, pour mixture into a mesh strainer and let the juice syrup separate from the solid berries. Save the syrup for cocktails, pancakes or both! 2. Spread blueberries onto a piece of bread, top with cheese, some spinach, then more cheese! Sprinkle with fresh ground pepper. Top with your other slice of bread and toast. Enjoy!
