HOMEMADE BALLPARK MUSTARD RECIPE

Homemade Ballpark Mustard Recipe image

Skip the boring mass produced yellow mustard and make it just the way you like it. The possibilities are endless.

Provided by Kris Coppieters

Categories     Dinner     Lunch     Sauces and Condiments

Number Of Ingredients 7

1 cup water
3/4 cup Colman's mustard powder
1/2 teaspoon turmeric powder
1/2 teaspoon kosher salt
1/4 teaspoon American paprika
1/4 teaspoon garlic powder
1/2 cup distilled white vinegar

Steps:

  • Cook. Turn on you kitchen vent fan or better still, make this outdoors on your grill. Remember, mustard gas is right up there with pepper spray. Whisk everything except the vinegar together in a non-reactive pot and simmer over medium to low until it thickens, about 30 minutes. Stir often so it doesn't burn.
  • Stir in the vinegar and simmer some more until it is the thickness you like. Then pour it into a clean bottle and refrigerate. It will be pretty potent for a few days, and then it will mellow and keep for months.
  • Serve. Use as you would your usual store-bought mustard.

MILD YELLOW HOT DOG MUSTARD

Mild Yellow Hot Dog Mustard image

Try this simple recipe for classic ballpark-style mild yellow mustard (the stuff you love on hot dogs). You may never buy mustard again.

Provided by Leda Meredith

Categories     Sauces     Condiment     Ingredient

Time P1DT14m

Number Of Ingredients 8

1/2 cup yellow mustard seed powder (dry ground)
1/2 cup water
1/3 cup apple cider (or distilled white vinegar)
1 teaspoon all-purpose flour
3/4 teaspoon salt
1/4 teaspoon turmeric
1/8 teaspoon garlic powder
1/8 teaspoon ground sweet paprika

Steps:

  • Gather the ingredients.
  • Start by sterilizing your jars . Use 1 glass half-pint jar or 2 (4-ounce) jars. While the jar(s) are sterilizing, prepare the mustard.
  • Whisk together all of the ingredients in a small saucepan until smoothly combined. The mixture will be quite liquid at this stage. Bring it to a boil over medium-high heat. Boil for 7 to 8 minutes, stirring occasionally.
  • Remove the saucepan from the heat and let the mustard cool for 5 minutes. The mustard will thicken slightly during this time, but don't be concerned if it isn't as thick yet as you want the final product to be. Don't be tempted to add more mustard powder to thicken it up: The mustard will continue to thicken over the next 24 hours or even a couple of days.
  • Transfer the mustard to the sterilized glass jar(s). Securely fasten the lid(s). Let cool to room temperature before storing the mustard in the refrigerator.
  • Enjoy.

  • Place the water, dry mustard, salt, turmeric, garlic, and paprika in a small nonreactive saucepan and whisk until smooth. Cook the mixture over medium-low to low heat, stirring often, until it bubbles down to a thick paste, 30 to 45 minutes.☞TESTER TIP: You’re definitely going to want to do this in a well-ventilated kitchen. As in windows flung open and exhaust fan on high. Trust us. And that nonreactive saucepan is also essential or the mustard could take on an off color and hue.
  • Whisk the vinegar into the mustard mixture and continue to cook until it’s thickened to the desired consistency—you know, the usual prepared mustard consistency—which can take anywhere from 7 to 15 minutes.
  • Let the mustard cool to room temperature before spooning the mustard into an airtight container. Cover and refrigerate for up to 3 months. The mustard will be quite pungent the first few days or even weeks, but will mellow with time.

  • Rosemary thyme mustard. Flavor profile: Thick, creamy, and intensely herby. Good in: Vinaigrettes. Also good rubbed under chicken skin before roasting and stirred into beef, lamb, or pork stew before the end of cooking.
  • Cognac mustard. Flavor profile: Slightly sweet; mellow, but with heat beneath. Good in: Roasted meats, especially pork and chicken; grilled ham and brie sandwiches; a side dish of sautéed mushrooms (mix in a spoonful of cream too).
  • Ballpark beer mustard. Flavor profile: Hot, with a pleasantly beery afterglow and a lemony tang. Good in: Hot dogs and burgers. Not surprisingly, it’s a great bridge to a nice cold beer.
  • Hot and tangy mustard. Flavor profile: Feisty horseradish-like kick, tempered by acidity. Good in: Just about everything—use in place of your favorite spicy table mustard.
  • Seeded agave nectar mustard. Flavor profile: Similar to honey mustard, but with a softer sweetness. Toasted black mustard seeds give it crunch and intrigue.
  • Spicy chipotle mustard. Flavor profile: Smoky and fruity from the chipotle chile, and fiery hot. Good in: Grilled chicken breasts; pita sandwiches with grilled lamb and arugula; beef tacos.
  • Mustard 101. Mustard seeds. Use when you want a whole-grain, crunchy texture. The three types are yellow, aka white (Sinapis alba), the mildest and used mainly in American-style mustards and for pickling; brown (Brassica juncea), zestier and used in European-style mustards (like Dijon), for pickling, and in Indian cooking; and black (B.
