Authentic No Refrigeration Bakery Frosting/Icing image

A frosting just like the bakeries use on their cakes and there is no refrigeration required--it may be kept for 3 months covered in the refrigerator just bring to room temperature before using. Recipe yields 8 cups of frosting. You will love this!

2 cups shortening
1/2 cup non-dairy powdered coffee creamer (such as Coffee Mate)
1/2 teaspoon almond extract (can use more to taste)
1/4-1/2 teaspoon vanilla
1 (32 ounce) package confectioners' sugar, sifted
1/2-3/4 cup water
food coloring, use color of choice

Steps:

  • In a large mixing bowl beat the shortening creamer and extracts.
  • Gradually beat in the confectioners sugar.
  • Add in enough water (starting with almost 1/2 cup) until frosting reaches desired consistency.
  • Add in food coloring until the desired shade is achieved.

1 cup Vegetable shortening

2 tbsp Cornstarch

Steps:

  • In the bowl of a stand mixer with the paddle attachment, or hand mixer, cream butter and shortening for about a minute, on medium speed, until light and fluffy.Pro tip - The color of the butter will get lighter in color and will blend with the shortening completely.
  • Combine water with cornstarch and vanilla extract. Add it to the creaming mixture and whip until smooth. Pro tip - Water will create a glue effect with the cornstarch when combined with the fat. It will also take away that starchy taste from the cornstarch.
  • Next, start adding the powdered sugar one cup at a time. Once all the sugar is in - whip the buttercream for a good three minutes until light and fluffy.Pro tip - Whipping for no less than 3 minutes will give a light and airy whipped cream frosting consistency.
  • This buttercream is ready to use. You can use it to frost cakes ad as well as cupcakes. Pro tip - If you have air pockets while frosting the cake, use a paddle motion with a spatula when frosting. This usually will take care of the air pockets.

1½ cups (12oz/340g) butter ((softened))
6 cups (1lb 8oz/680g) icing sugar (powdered sugar)
2 teaspoon vanilla extract
Seeds scraped from one vanilla bean pod ((optional))
2-3 tablespoons milk or cream
Pinch of salt

Steps:

  • In a stand mixer fitted with the whisk attachment or using an electric hand mixer whip the butter until light and creamy for about 7-8 minutes on medium/high speed.
  • Once the butter is pale in color and light slowly add in the icing sugar one spoon at a time at medium speed. Let the sugar fully incorporate before adding in more sugar.
  • Add the vanilla extract, vanilla bean seeds, salt, and cream or milk.
  • Whip on high speed for another 3-4 minutes until very light, creamy, and fluffy.
  • Use the buttercream straight away or keep it refrigerated for up to 4 weeks. Before use, make sure it comes to room temperature.
  • * This recipe amount will generously cover at least 24 cupcakes and cover and fill an 8-inch sponge cake. It is easy to adjust this recipe as it is proportional, at a ratio of 2:1. That is two measures of sugar to one of butter. I.E. ** For about 3 mug cakes or 6 cupcakes it would be 3ozs/85g of butter, 170g sugar, 1/2 tsp vanilla extract, 1 1/2 tsp- 2 1/4 tsp of milk and cream . This will generously frost this batch.
