HOMEMADE CHOCOLATE TRUFFLES RECIPE
These homemade chocolate truffles are extra creamy with the addition of butter. After mixing the ingredients together, let the mixture set in the refrigerator, then roll into balls. You can coat in your favorite toppings and add lots of fun flavors, too! The mixture gets a little sticky, so refer back to my tips in the blog post above.

Steps:
- Place the chocolate in a heat-proof bowl. Set aside.
- Heat the heavy cream until it is simmering. You can heat it on the stove or in the microwave.
- Add the butter, if using, to the chocolate and pour the heavy cream evenly on top. Let the warm cream and chocolate sit for 5 minutes minutes. Add the vanilla extract then stir until the chocolate has completely melted. Place a piece of plastic wrap directly on the surface (to avoid condensation) and refrigerate for 1-2 hours. Tip: Pour into a flat shallow dish, such as a 8×8 inch baking pan, so the mixture evenly and quickly sets.
- Scoop the set truffle mixture into 2 teaspoon-sized mounds. This cookie scoop is the perfect size. For larger truffles, 1 Tablespoon size mounds. Roll each into balls. This gets a little sticky, so see my tips above.
- Roll each into toppings, if desired. Truffles taste best at room temperature!
- Cover tightly and store truffles at room temperature for 3-4 days or in the refrigerator for up to 2 weeks.

Steps:
- Great recipe for bacon candy! http://www.food.com/recipe/brown-sugar-bacon-candy-326739.
- Prepare a baking sheet by lining it with parchment or wax paper.
- Using a large standing mixer, cream the butter and the sugar together until light and fluffy.
- Add the condensed milk and maple syrup and beat until well-mixed, then add the flour and salt and beat on low until combined. Stir in bacon.
- Using a small scoop or a teaspoon, scoop up small round balls of the dough and place them on the prepared baking sheet. Refrigerate for one hour. Remove from fridge and roll into balls. Place back in fridge for another hour.
- Melt chocolate in double boiler, in the microwave or, as I prefer, in a Crock Pot on low. Dip balls one at a time and coat evenly. [I tried dumping a bunch in the Crock Pot at once but they get soft fast. Alternatively, you could put the balls in the freezer for a few minutes before dipping first so they get good and cold.] Remove them with a fork and tap against the side of the pot to remove any excess chocolate. Place back on baking sheet and top with a piece of candied bacon, if desired.
- Put truffles back in fridge until firm. Store in fridge. Enjoy!

SIMPLY SENSATIONAL TRUFFLES
I found this great little pamphlet at the grocery store with some delicious recipes. It is a JELL-O, Cool Whip, Nilla Wafers, Philadelphia Cream Cheese, and Bakers Chocolate Squares book of recipes. This is one of them that I plan on trying this week. Sounds delicious. I may try and roll the truffles in the chopped nuts that you buy in the ice cream topping section. This recipe is using Baker's Squares and Philadelphia Cream Cheese. 10 minutes preparation time does not include refrigeration time.

EASY BACON CHOCOLATE TRUFFLES : 7 STEPS - INSTRUCTABLES
From instructables.com
- Tools? Ingredients? Tools are mostly whatever you think is best. I'm a novice chef without proper tools, but I can at least get to the finished product.
- Bakin' Bacon. I like to cook bacon in the oven on a foiled baking sheet, using the broiler. Not much clean up and you never have to touch anything greasy if you use tongs.
- Truffle Dough. This is extremely fast with a large, powerful food processor. I used an blender, but it is designed so the dough is easy to pull out.
- Prepare the Bacon. Normally I use a knife, and make some misshapen, chunky bacon bits, but this time I wanted to experiment with the food processor.
- Combining and Finishing the Dough. Throw the bacon bits into the chocolate dough and mix it around until it seems somewhat even. I threw the whole thing back in the Ninja blender to mix it even more and ensure it was evenly done.
