HEALTHIER BAKED ZITI I
I love pasta but it is not always the healthiest thing to have for dinner. To make this one a little less guilty, I use turkey and add a carrot to the sauce. So tasty!

Steps:
- Preheat oven to 350 degrees (175 degrees C). Lightly butter a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil. Add ziti pasta and cook until al dente, about 8 minutes. Drain.
- Heat a large skillet over medium heat; cook and stir onion and ground turkey until onion is translucent and turkey is no longer pink, about 7 minutes. Add spaghetti sauce and carrot; simmer until heated through, about 15 minutes. Layer ingredients into prepared baking dish as follows: half the ziti, Provolone cheese, sour cream, half the sauce mixture, remaining ziti, mozzarella cheese, and remaining sauce mixture. Top with grated Parmesan cheese.
- Bake in preheated oven until cheeses are melted, about 30 minutes.

Steps:
- Boil pasta.
- Drain and set aside.
- Brown ground beef.
- Drain and remove from heat.
- Add ricotta, parmesan, parsley, egg, salt, pepper, and half of sauce to meat and mix well.
- Add ziti and toss gently to coat.
- Spoon mixture into a 13x9-inch baking pan.
- Pour remaining sauce over pasta mixture.
- Sprinkle with mozzarella cheese.
- Bake, uncovered, at 350 degrees for 20 minutes, or until hot and bubbly.
BAKED ZITI
Steps:
- Preheat oven to 350 degrees F.
- In a large skillet, melt half of the butter over medium heat. Add turkey and cook until browned. Add tomato sauce, oregano, parsley, salt, pepper, and onion and simmer until onion is tender.
- Cook pasta in a large pot of boiling, salted water until a little less than al dente. Drain and cool. Cut 1 of the blocks of cheese into cubes and slice the other into thin slices. Melt the remaining butter and pour into the bottom of a deep 9 by 13-inch baking dish. Pour 1 1/2 ladles full of the sauce into the dish, or enough to completely cover the bottom. Add a layer of pasta and then a layer of cubed cheese. Repeat layering until all ingredients are used.
- Fill 1 of the empty sauce jars 1/8 full with water and shake. Pour over pasta. Top with the thin slices of cheese, and sprinkle with additional oregano and parsley, if desired. Cover casserole with foil and place in oven. Check every 15 minutes until cheese is melted and bubbly. Remove foil for last 5 minutes of cooking to brown cheese.
BAKED ZITI WITH TURKEY MEATBALLS

- Make meatballs:
- In a bowl stir together well turkey, garlic, bread crumbs, onion, pine nuts, parsley, egg, salt, and pepper and form into meatballs about 1 inch in diameter. In a large heavy skillet heat 2 tablespoons oil over moderately high heat until hot but not smoking and cook half of meatballs, shaking skillet, until browned and cooked through, about 4 minutes. Transfer meatballs to paper towels to drain and brown remaining meatballs in remaining 2 tablespoons oil in same manner.
- Preheat oven to 375°F. and oil a 3- to 4-quart gratin dish or other shallow baking dish.
- In a kettle of salted boiling water cook pasta until just al dente, about 8 minutes, and drain well. In a small bowl toss together mozzarella and Romano.
- Spoon about 1 1/2 cups tomato sauce and half of meatballs into prepared dish and spoon half of pasta on top. Spread half remaining sauce and half cheese mixture over pasta. Top with remaining meatballs and drop dollops of ricotta over meatballs. Spread remaining pasta over ricotta and top with remaining sauce and remaining cheese mixture.
- Bake ziti in middle of oven 30 to 35 minutes, or until golden, and let stand 10 minutes before serving.

- Preheat oven to 375°F.
- In a large mixing bowl, blend the ricotta cheese and seasonings until thoroughly mixed.
- Stir in the diced tomatoes, meat, and half of your sauce. Add the ziti, and stir until all the pasta is coated.
- Spread half of remaining sauce on bottom of a 9x13 baking pan. Place your ziti mixture on top of it. Spread remaining sauce over the top. Sprinkle your mozzarella on top of the sauce.
- Cover with aluminum foil and bake for 45 minutes. For a crisper top remove the aluminum foil and place under your broiler for the last 10 minutes of baking time.

- Cook ziti pasta al dente.
- In large skillet, brown the chopped onion and ground turkey. Add the minced garlic as the turkey begins to brown. Add the spaghetti sauce and simmer for approximately 15 minute.
- Preheat oven to 350 degrees.
- Butter or grease in your preferred way a 9 x 13 " baking dish.
- Layer the ingredients as follows:.
- - spread some sauce as the bottom layer to help prevent sticking.
- -add 1/2 the ziti pasta.
- - layer the slices of provolone cheese to cover the ziti.
- -add sour cream.
- -add 1/2 the sauce mixture.
- -add remaining ziti.
- -add1/2 the mozzarella cheese to cover.
- -add remaining sauce on top.
- -add remaining mozzarella to cover.
- -add parmesean on top if desired (I found it not to be necessary).
- -bake in the covered dish for 30 minutes @ 350 degrees.
